APPLE CAKE RECIPE
"This thin, elegant dessert [adapted from four seasons of Italian Cooking by A.J. Battafarano] is between a cake and a tart. The apple slices are bound by a custard that gets wonderfully caramelized on top."

- Preheat oven to 400 degrees. Butter a 10-inch springform pan and wrap the bottom in foil so it doesn't leak.
- Measure milk into a microwavable measuring cup. Cut butter into pieces and add to milk. Microwave for a minute or two, until butter is just melted. Set aside to cool. [I used a pan on the stove top]
- Peel, core and quarter apples. Slice apple quarters into thin slices, 1/8 to 1/4 inch thick. This can be done by hand or with a food processor.
- Beat the eggs and sugar in a large bowl with a wire whisk until sugar is dissolved. Stir in flour, then add milk-butter mixture and vanilla. Blend thoroughly. Quickly stir in baking powder, then fold in the sliced apples.
- Pour mixture into pan and place pan directly on the gas oven floor for 10 minutes. Transfer pan to the center rack and bake until cake is well browned on top and a knife inserted into the center comes out clean, about an hour longer. (If you have an electric oven, place the pan on the lowest rack for the entire cooking time.) Place the cake on a cooling rack. When cool enough to handle, run a thin knife around the cake and remove springform ring. Serve warm. Makes 8 to 12 servings.

- Heat the oven to 180C/160C fan/gas 4. Butter and line a deep 20cm cake tin with baking parchment.
- Mix the flour and cinnamon together in a large bowl. Add the butter and rub into the flour using your fingers, until it resembles fine breadcrumbs. Stir in the light brown sugar. Beat in the egg followed by 6-8 tbsp of milk - add it gradually until you have a smooth, thick batter.
- Add the apples and sultanas and mix to combine. Scrape the batter into the prepared tin and gently level out. Sprinkle over the demerara sugar, if using, and bake for 30-40 mins or until golden and a skewer inserted into the middle comes out clean.
- Allow to cool in the tin for 15 mins and then carefully turn out onto a wire rack to cool further. Best served still warm with a little custard.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch cake pan.
- Beat vegetable oil and eggs until foamy. Add the sugar, flour, ground cinnamon, baking, soda, salt, and vanilla and mix well. Stir in the diced apples. Pour batter into prepared pan.
- Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Cool cake in pan for 10 minutes. Cake needs no frosting.

- For the apples:First, peel 5-6 apples and slice into chunks. Sprinkle cinnamon and sugar over top then mix well. Let this apple mixture sit while you create the batter. For the cake: Preheat the oven to 350 degrees F. In a mixing bowl, add sugar, flour, baking powder and salt. Whisk together until well incorporated. In the bowl of an electric mixer, combine all wet ingredients (oil, eggs, orange juice and vanilla). Slowly mix in the dry ingredients until a thick batter is formed. Grease and flour the pan. Pour a layer of batter into the pan, then add a thin layer of apples. Repeat until batter and apples are all in the pan. Bake for 40-90 minutes, depending on the pan type used. For the recipe pictured here, I used a round cake pan and baked for about 90 minutes. If the cake is still raw but getting golden brown, cover with foil and continue cooking until a cake tester comes out clean.
FARMHOUSE APPLE CAKE
Crumbly, buttery, nutty streusel tops this moist and tender apple cake. This rustic farm-style cake is made with no special equipment, just a couple of bowls and a whisk. The sour cream makes the crumb beautifully light and fluffy, while the apples make sure the cake is never dry.

- PREPARE: Heat the oven to 180°C / 350°F / Gas 4. Line the base of a 20cm round spring form cake tin with baking paper and grease the base and sides well with butter.
- MAKE THE CRUMBLE: Make the crumble by combining the flour and butter in a bowl. Use your fingers to rub the butter into the flour, pinching it and squeezing it until it has a rough, pebbly texture. It doesn't have to be fine, in fact, the rougher the better. Stir through the sugar and nuts, then put the bowl in the freezer while you prepare the cake.
- MIX THE BATTER: In a mixing bowl, whisk together the sour cream, eggs and oil until smooth. In a separate bowl whisk together the flour, sugar, baking powder and cinnamon until well combined. Stir the wet ingredients into the dry until just combined, then add the apple cubes to the mixture and fold through, gently but thoroughly. Scrape the mixture into the prepared tin, smooth the top, then scatter over all of the crumble.
- BAKE: Bake in the bottom third of the preheated oven for 1 hour. Check around 55 minutes to make sure it isn't getting too brown on the top, it shouldn't, but if it is, cover loosely with a square of tin foil. After an hour, check to make sure the cake is cooked by inserting a wooden skewer into the centre of the cake. It should come out with just a few moist crumbs clinging to the skewer. If it is at all liquid, return to the oven for a further 5 minutes.
- COOL AND SERVE: Allow the cake to cool in the tin before running a sharp knife around the side to loosen from the tin and transferring to a serving platter. Dust with icing sugar to serve, and if you fancy a big mound of whipped cinnamon cream, though it is so lovely and moist the cake doesn't need it.

- Preheat oven to 350°F.
- Make the custard sauce ahead of time. Bring the milk to a simmer over medium heat. Meanwhile whisk the yolks and sugar until pale. Drizzle a little of the hot milk into the egg mixture, whisking all the time. Drizzle a little more, then transfer that back into the pan of hot milk and continue cooking, stirring constantly, until the mixture coats the back of a spoon. Don't overcook or it can curdle. Stir in the vanilla. Refrigerate the custard sauce until needed.
- To make the streusel topping, blend the bits of butter into the flour, sugar, and oats until the butter is incorporated and the mixture has a coarse crumbly texture. Put in the refrigerator.
- To make the cake, grease a 9 inch round spring form pan.
- Cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time.
- Whisk together the flour, baking powder, cinnamon, and salt. Fold the dry ingredients into the butter/sugar mixture, along with the milk or cream.
- Spoon the batter in to the pan, and smooth out evenly. Top with the sliced apples, and then the streusel topping.
- Bake for about 50 minutes to an hour, until the top is lightly browned and a toothpick comes out without wet batter clinging to it.
- Let cool a bit in the pan before removing. Dust with confectioner's sugar before serving.
