1/2 cup slivered almonds
1/2 cup red onion (minced)
1/4 cup parsley (chopped)
1 teaspoon mint (chopped)
1 ea. Red Delicious apple (diced)
2 tablespoons raspberry vinegar
2 tablespoons walnut oil
1 (4 ounce) package alouette crumbled fat free feta cheese

Steps:

  • Cook pasta al dente rinse with cold water and set aside in the refrigerator.
  • Toast slivered almonds in a non stick pan over medium high heat until slightly brown. Set aside to cool.
  • When pasta and almonds are cooled toss with the remaining ingredients in a glass serving bowl.

Steps:

2 cups penne pasta
¼ cup red wine vinegar
1 tablespoon lemon juice
2 cloves garlic, crushed
2 teaspoons dried oregano
salt and pepper to taste
⅔ cup extra-virgin olive oil
10 cherry tomatoes, halved
1 small red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cucumber, sliced
½ cup sliced black olives
½ cup crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Rinse with cold water and drain well in a colander set in the sink.
  • Whisk together the vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside. Combine pasta, tomatoes, onion, green and red peppers, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over the pasta and mix together. Cover and chill for 3 hours before serving.

1 tablespoon sugar
1/8 teaspoon pepper
1 cup walnut halves
DRESSING:
1/3 cup olive oil
3 tablespoons white wine vinegar
1-1/2 teaspoons Dijon mustard
2 garlic cloves, minced
1/2 teaspoon sugar
1/4 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon dried parsley flakes
1/8 teaspoon pepper
2 tablespoons finely chopped onion
SALAD:
5 cups torn romaine
5 cups torn red leaf lettuce
1 medium green apple, chopped
1 medium red apple, chopped
1/2 to 1 cup crumbled feta cheese

Steps:

  • Preheat oven to 350°. In a small skillet, melt butter over medium heat; stir in sugar and pepper. Add walnuts; toss to coat. Spread evenly onto a baking sheet. Bake until lightly browned, about 15 minutes, stirring every 5 minutes. Cool on a wire rack., Place dressing ingredients in a blender; cover and process until blended. Place salad ingredients in a large bowl; toss with dressing. Top with walnuts. Serve immediately.

1 package (10 ounces) frozen sweetened raspberries, thawed
1 cup reduced-fat plain yogurt
2 tablespoons cider vinegar
1/2 teaspoon dried tarragon
SALAD:
9 cups torn mixed salad greens
1-1/2 cups shredded carrots
2 Red Delicious apples, chopped
1 Golden Delicious apple, chopped
3/4 cup crumbled feta cheese

Steps:

  • Strain raspberries, reserving juice; discard seeds and pulp. In a small bowl, whisk the yogurt, vinegar, tarragon and raspberry juice until smooth. In a large bowl, toss the salad greens, carrot and apples. Sprinkle with feta cheese. Serve with dressing.

1 cup walnut halves
1 tablespoon sugar
⅛ teaspoon pepper
5 cups torn romaine
5 cups torn red leaf lettuce
1 medium red apple, chopped
1 green apple, chopped
½ cup crumbled feta cheese
6 tablespoons white wine vinegar
2 tablespoons finely chopped onion
1 ½ teaspoons Dijon mustard
2 garlic clove (blank)s garlic cloves, minced
½ teaspoon sugar
¼ teaspoon dried oregano
⅛ teaspoon salt
⅛ teaspoon dried parsley flakes
⅛ teaspoon pepper

Steps:

  • In a small skillet, melt the butter over medium heat. Add the walnuts; sprinkle with sugar and pepper. Stir until well coated. Spread onto a baking sheet. Bake at 350 degrees F for 15 minutes or until lightly browned, stirring every 5 minutes. Cool on a wire rack.
  • In a large bowl, combine romaine, red lettuce, apples and feta cheese; set aside. In a blender, combine the dressing ingredients; cover and process until blended. Drizzle over salad; toss to coat. Sprinkle with sugared walnuts.

1/2 cup mixed fresh herbs, e.g. basil, parsley dill
4 tablespoons olive oil
1 tablespoon capers, drained and chopped
