2 cups artichoke hearts
1 cup frozen spinach (rinsed in warm water, then dried with a paper towel)
16 oz cream cheese
1 cup parmesan cheese (shaved )
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper

Steps:

  • Preheat oven to 300 degrees.
  • Drain the artichoke hearts and boil in a pan filled with water for 10 minutes to soften.
  • Drain the water from the artichokes and mix the artichokes in a bowl with all the remaining ingredients.
  • Pour the mixture into a 9x9 inch pan baking pan and warm in the oven until heated through.
  • Serve hot with crackers, chips, or bread.

3/4 cup grated Parmesan cheese

Steps:

  • In a large nonstick skillet coated with cooking spray, cook and stir onion until tender. Add spinach; cook and stir over medium heat until heated through. Reduce heat to low; stir in cream cheese and sour cream. Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. 6 ounces Neufchatel cream cheese

1 14-ounce can artichoke hearts, drained, squeezed dry and finely chopped
1/4 cup grated parmesan cheese
3/4 cup shredded low-fat mozzarella cheese
Pinch of cayenne pepper
2 or 3 dashes Worcestershire sauce

Steps:

  • Preheat the oven to 450. Bring a pot of salted water to a boil and prepare a bowl of ice water. Stir the spinach and basil into the boiling water and cook until bright green, about 30 seconds. Remove with a slotted spoon and immediately plunge in the ice water. Drain and squeeze dry, then roughly chop.
  • Puree the beans, cream cheese, garlic and chicken broth in a food processor until smooth, scraping the sides as needed.   • Melt 3 tablespoons butter in a skillet over medium heat.
  • Add the minced garlic and cook for a couple of minutes.
  • Crank up the heat a bit and throw in the spinach. Stir around and cook for a couple of minutes until the spinach wilts.
  • Remove the spinach from the skillet and put it in a small strainer. Squeeze the excess juice back into the skillet. Set the spinach aside.
  • Throw in the artichokes and cook over medium high heat for several minutes, until liquid is cooked off and artichokes start to get a little color. Remove the artichokes.
  • In the same skillet or a different pot, melt 3 additional tablespoons of butter and whisk in 3 tablespoons of flour until it makes a paste. Cook over medium-low for a minute or two, then pour in milk. Stir and cook until slightly thickened and splash in more milk if needed.
  • Add cream cheese, feta, Parmesan, pepper jack, and cayenne and stir until cheese is melted and sauce is smooth. Chop artichokes and spinach and add to the sauce. Stir to combine.
  • Pour into buttered baking dish. Top with extra grated pepper jack and bake at 375 for 15 minutes or until cheese is melted and bubbly.
  • Serve with pita wedges, chips, or crackers.
