Steps:
- Preheat oven to 400 degrees F.
- Scrub potatoes.
- rub with a little vegetable oil to make skins softer.
- Pierce skin with fork to allow steam to escape.
- Bake at 400 degrees until tender for about 50 to 60 minutes.
- Cool potatoes for 10 minutes.
- Cut potato in half and carefully scoop out pulp, leaving shells intact.
- In a large bowl, mash potatoes using a potato masher to remove lumps.
- Heat margarine and milk until margarine melts and beat into potatoes.
- Beat in sour cream, salt and pepper.
- Spoon into potato shells and brush with melted butter.
- Top each potato with cheddar cheese and chives.
- Place in oven until cheese melts on top.

BREAKFAST-FOR-DINNER EGG BOATS
Steps:
- Preheat the oven to 375 degrees F.
- Brown the breakfast sausage in a medium skillet over medium heat, breaking it up with a wooden spoon, about 6 minutes.
- Whisk together the eggs, milk, mustard and a pinch of salt in a large mixing bowl.
- Cut a long oval down the center of each bread, about 2 inches wide and 4 inches long. Hollow out most of the insides, like a canoe, leaving about 1/2-inch border all the way around. Place on a baking sheet, then gently pour half the egg mixture into each "boat." Sprinkle with the browned breakfast sausage and a few pinches of chopped kale, then top with remaining egg mixture.
- Top each boat with the shredded Cheddar, and bake until the cheese is browned and bubbly and eggs are just set, between 25 to 35 minutes. Let cool about 5 minutes, then garnish with parsley and serve!
BREAKFAST PIZZA BOATS RECIPE BY TASTY

Steps:
- Preheat oven to 425˚F (220˚C).
- In a small mixing bowl combine the mozzarella and feta and set aside.
- On a large floured surface, roll out the pizza dough to an oval roughly 10 inches (25 cm) in length.
- Transfer the dough to a parchment paper-lined baking sheet.
- Cover surface of dough with olive oil and spoon on cheese mixture leaving a 1 inch (2 cm) margin around the outside of the dough.
- Fold in the 1 inch (2 cm) margin creating a crust around the cheese.
- Brush the crust with egg wash.
- Bake for 10 minutes.
- Remove the baking sheet from oven and with a knife spread out some of the melted cheese in the center of the pizza boat and crack an egg into it.
- Turn down heat to 400˚F (200˚C).
- Bake for an additional 6-8 minutes.
- Enjoy!

- Use a fork to pierce holes all over the sweet potatoes.
- Preheat oven to 400°F (200°C).
- Microwave the potatoes for 7 minutes until they have softened significantly.
- Slice the potatoes in half and use a spoon to scrape out the inner flesh, making sure to leave at least a ¼-inch (6 mm) thick border on each side, saving the scooped out potato parts to use for side dishes.
- Transfer the potatoes to a parchment paper-lined baking sheet.
- Fill each of the potatoes with 1 egg and an assortment of fillings for whatever flavor combinations you'd like. Season each potatoes with salt and pepper.
- Bake for 8-12 minutes, until the egg has cooked to preferred doneness.
- Top the potatoes and side dishes with your choice of topping and garnishes and serve.

- Preheat oven to 375°. Scrub potatoes; pierce several times with a fork. Place on a microwave-safe plate. Microwave, uncovered, on high until tender, 10-12 minutes, turning once., When cool enough to handle, cut each potato lengthwise in half. Scoop out pulp, leaving 1/4-in.-thick shells. In a small bowl, mash pulp with butter, sour cream, chili sauce, salt and pepper., Place potato shells on a parchment-lined 15x10x1-in. baking pan. Spoon potato mixture into potato shells, creating a 3/4-in.-deep well, building up sides with potato mixture as needed. Break one egg into each well. Bake until egg whites are completely set and yolks begin to thicken but are not hard, 25-30 minutes. Top with bacon, pimientos and cheese; bake until cheese is melted, 2-4 minutes longer. Sprinkle with green onions.

Place directly on the middle rack of the oven, with a pan underneath to catch any drippings. Bake for 1 to 1-1/2 hours, until cooked through and soft. Let the potato cool slightly, then cut potato in half lengthwise. Use a spoon to scoop out the insides of each half, leaving about 1/4" layer of potato on the skin. Transfer the scooped out potato to a small bowl and mash with a fork. Scramble eggs in a non-stick skillet until almost done but still slightly wet.
