A really cool recipe from Easy Entertaining with Michael Chiarello. If you like fennel, do try this recipe:)

Provided by Sharon123

Categories     Lunch/Snacks

Time 10m

Yield 1 1/4 cups

Number Of Ingredients 5

2 (6 ounce) bags plain potato chips
1 cup fennel seed
3 tablespoons coriander seeds
2 tablespoons white peppercorns
3 tablespoons kosher salt

Steps:

  • Preheat oven to 350*F. Place the chips on a cookie sheet and put them in oven for 4 to 6 minutes.
  • When oil is visible on the chips and they start to get shiny, take them out of the oven, and sprinkle with a generous amount of the spice rub. Let them cool and serve.
  • To Make Fennel Spice Rub:
  • Place the fennel seeds, coriander seeds, and peppercorns in a heavy skillet over medium heat. Watch carefully, tossing frequently so the seeds will toast evenly. When light brown and fragrant, pour the seeds onto a plate to cool. They must be cool before grinding, or they will gum up the blades.
  • Pour the seeds into a blender(I use a small coffee grinder) and add the salt. Blend to a fine powder, shaking the blender occasionally to redistribute the seeds. Store in a tightly sealed glass jar in a cool, dry place, or freeze.
  • Yield: 1 1/4 cups.

CHICKEN SALAD WITH FENNEL SPICE

Chicken Salad with Fennel Spice image

Provided by Michael Chiarello : Food Network

Categories     main-dish

Time 1h40m

Yield 4 servings

Number Of Ingredients 16

1 chicken, about 3 1/2 pounds
3 tablespoons Fennel Spice Rub, recipe follows, plus 1 1/2 teaspoons
6 tablespoons extra-virgin olive oil, plus 6 tablespoons
1 large celery rib, halved
1 large carrot, halved
1 large yellow onion, quartered
2 bay leaves
1/4 cup thinly sliced celery heart
1/4 red onion, thinly sliced
2 to 3 teaspoons fresh lemon juice
Sea salt, preferably gray, and freshly ground black pepper
1/4 cup thinly sliced fresh basil leaves
1 cup fennel seeds
3 tablespoons coriander seeds
2 tablespoons white peppercorns
3 tablespoons kosher salt

Steps:

  • Lay out the chicken, spreading out the parts as much as possible. Cover generously with 3 tablespoons of the fennel spice, rubbing it into the skin. Place a large pot over medium-high heat. When the pan is hot, add 6 tablespoons of the oil and heat to almost smoking. Add the chicken and brown on all sides, about 5 to 6 minutes per side. Add the celery, carrot, onion and bay leaves and sauté for a few minutes. Add 4 cups of water to the pot, or enough to cover the chicken. Bring to a gentle simmer and cook just until the chicken is almost fully cooked, about 40 minutes. Turn off the heat and cover and let cool. When pan has cooled, place in the fridge overnight.
  • Lift out the cooled chicken and strain the stock, discarding the solids. Refrigerate or freeze the chicken stock for another use.
  • Remove the skin and bones from the chicken. Shred the meat by hand into rough bite-size pieces.
  • In a large bowl, combine the shredded chicken, celery heart, red onion, 6 tablespoons olive oil, 2 tablespoons lemon juice, remaining 1 1/2 teaspoons Fennel Spice Rub, and salt and pepper, to taste. Add more oil, lemon juice, or Fennel Spice Rub, if desired. Add the basil and serve.
  • Put the fennel seeds, coriander seeds, and peppercorns in a heavy pan over medium heat. Watch carefully, tossing frequently so the seeds toast evenly. When light brown and fragrant, pour the seeds onto a plate to cool. They must be cool before grinding, or they will gum up the blades.
  • Pour the seeds into a blender and add the salt. Blend to a fine powder, shaking the blender occasionally to redistribute the seeds. Store in a tightly sealed glass jar in a cool, dry place, or freeze.

Yield Makes about 9 cups

Number Of Ingredients 16

For soup:
1 large fennel bulb (sometimes called anise; 1 pound), trimmed and bulb cut into 1/2-inch pieces
3-pound butternut squash, peeled, seeded, and cut into 1/2-inch pieces
1 medium onion, chopped
1/4 teaspoon anise seeds
2 tablespoons unsalted butter
5 cups water
For fennel chips:
1 cup water
1/2 cup sugar
2 tablespoons fresh lemon juice
1 small fennel bulb (1/2 pound), trimmed
Special equipment:
Special equipment: Silpat or Exopat nonstick reusable baking-sheet liner*
Garnish:
sour cream

Steps:

  • Make soup:
  • Cook fennel, squash, onion, and anise seeds in butter in a 6- to 8-quart pot over moderate heat, covered, stirring occasionally, 15 minutes. Add water and simmer, covered, until squash is very tender, 25 to 30 minutes.
  • Purée soup in batches in a blender (use caution when blending hot liquids) and season with salt and pepper.
  • Make fennel chips:
  • Preheat oven to 225°F.
  • Boil water and sugar in a small saucepan, stirring, until sugar is dissolved. Remove from heat and add lemon juice. Cut fennel bulb lengthwise into paper-thin slices using a mandoline or other manual slicer. Pour sugar mixture over fennel in a bowl and let stand 5 minutes.
  • Put Silpat or Exopat pad on a baking sheet. Shake off excess liquid from fennel slices and arrange on pad in 1 layer (don't let slices touch). Bake in middle of oven 1 hour, or until dry and crisp. Working quickly, carefully peel chips off liner and transfer to a rack to cool. Top soup with chips.

FENNEL SPICE RUB FOR TURKEY (MICHAEL CHIARELLO)

Fennel Spice Rub for Turkey (Michael Chiarello) image

I make this every year for our turkey! It is so potent when you've first ground it, but don't worry, since once it's cooked you're left with a wonderfully spiced turkey (but nothing unusually flavored). People will not be able to pick out the spices, but will comment how great the turkey tastes. It makes the best gravy. It is so dark and rich with a great savory taste. Second time I brined turkey and it was super moist, although the flavor was the same when it was not brined.

Time 15m

Yield 12 serving(s)

Number Of Ingredients 4

1 cup fennel seed
3 tablespoons coriander seeds
2 tablespoons white peppercorns (I used black peppercorns the second time)
3 tablespoons kosher salt

Steps:

  • Put the fennel seeds, coriander seeds, and peppercorns in a heavy pan over medium heat.
  • Watch carefully, tossing frequently so the seeds toast evenly.
  • When light brown and fragrant, pour the seeds onto a plate to cool.
  • They must be cool before grinding, or they will gum up the blades.
  • Pour the seeds into a blender and add the salt.
  • Blend to a fine powder, shaking the blender occasionally to redistribute the seeds.
  • Store in a tightly sealed glass jar in a cool, dry place, or freeze.
  • Note: There's a chicken salad recipe by Michael Chiarello that uses up some of the leftover spice mix:.
  • n a large bowl, combine shredded cooked chicken, celery, red onion, 6 tablespoons olive oil, 2 tablespoons lemon juice, 1 1/2 teaspoons Fennel Spice, and salt and pepper to taste. Taste and add more oil, lemon juice, or Fennel Spice, if desired. Add the basil and serve.

FENNEL SPICE RUB

Fennel Spice Rub image

This is my favorite spice mixture. There is almost nothing it doesn't taste good on or in. Use it to make spice-encrusted pork ribs, chops or tenderloin; veal chops; chicken breasts; duck; beef; liver; or eggplant; or add a teaspoon to lentil soup. If you don't have time to make it, we do it for you, with our Fennel Spice Rub.
