FERMENTED HORSERADISH ROOT WITH CREAMY HOMEMADE HORSERADISH RECIPE
An easy fermented horseradish root recipe consists of fresh horseradish root, salt, water, and a little patience. Lacto-fermented horseradish is the base ingredient for many amazing recipes. Including a creamy homemade horseradish recipe.

Steps:
- Wash fresh horseradish root very well
- Peel root using a vegetable peeler. Next, cut horseradish into 1-inch pieces and place into food processor
- Add sea salt, and pulse for 2 minutes. until the root is chopped small.
- Using the silicone spatula scrape the sides of the food processor. Add water and continue to pulse until the desired texture is achieved.
- Place chopped horseradish root into a clean mason. Fill jar with water leaving a 1/2-inch headspace.
- Cover with lid, and allow to ferment at least 3 days, or up to 1 week.
- Once done fermenting, store jars in the refrigerator until ready to use.
- In a bowl, mix sour cream, fermented horseradish root, lemon juice, chives
- Cover bowl, place into refrigerator and allow to rest for 2 hours prior to serving
