SPINACH AND FETA PASTA
An all time favorite of mine, I got this recipe from Allrecipes posted by Suki. It's fast and easy to make and tastes fantastic. Crusty rolls for mopping up the juices is all that's needed to finish the meal. I use lots more of the red pepper flakes to add zing and probably more feta as well since it's my favorite cheese. It's a real filling dinner for those nights when we want to eat vegetarian and DH requests this one frequently.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente; drain.
- Meanwhile, heat olive oil in a large skillet over medium-high heat; add onion and garlic, and cook until golden brown. Mix in tomatoes, mushrooms, and spinach. Season with salt, pepper, and red pepper flakes. Cook 2 minutes more, until tomatoes are heated through and spinach is wilted.

BAKED FETA PASTA
My spin on TikTok's famous baked feta pasta recipe is super-easy to make in the oven and tossed with the most irresistible, cheesy, garlicky tomato basil sauce. Feel free to add any extra proteins or veggies that you'd like too!

- Heat oven to 400°F (205°C).
- Place the block of feta in the center of a 9 x 13-inch baking dish. Arrange the tomatoes around the feta, then drizzle everything evenly with the olive oil and white wine. (I recommend giving the ingredients a brief toss so that they are evenly coated in the oil.) Sprinkle the crushed red pepper flakes evenly over the feta, and season the tomatoes with a pinch of salt and black pepper.
- Transfer the baking dish to the oven and bake for 30 to 35 minutes, until the tomatoes have burst and are nice and juicy.
- While the tomatoes and feta are baking, heat a large stockpot of generously-salted water until boiling. About 10 minutes or so before the tomatoes and feta are set to finish, add the pasta to the boiling water and cook until it is just 1 minute or so shy of al dente. Reserve 1 cup of the starchy pasta water and set it aside for later, then drain the pasta.
- Remove the baking dish from the oven. Immediately add the garlic and basil and stir the mixture together until the feta has melted into a creamy sauce. Add in the cooked pasta and spinach and gently toss until the pasta is evenly coated and the spinach has begun to wilt. If the sauce seems too dry, add in some of the reserved starchy pasta water 1/4 cup at a time until it reaches your desired consistency.
- Taste and season with extra salt and pepper, if needed.
- Serve warm, garnished with lots of Parmesan cheese, and enjoy!

- Bring 2 quarts of water to boil in a large pot.

- Start by cutting the chicken into strips and setting aside.
- Cook pasta according to instructions.
- Put flour into a shallow bowl or plate.
- Put oil in a large frying pan.
- Piece by piece coat the chicken strips and put them into the pan and sprinkle with salt and pepper. Cook chicken on high heat, about 5 minutes each side, then flip until both sides are browned.
- Now empty cans of diced tomatoes into the pan with the chicken and about 1/2 of the feta crumbles. Stir and allow the tomatoes and feta to combine. - Bring water to boil for penne.
- Chop the whole onion, and reserve 2 tablespoons for the salad.
- Heat large nonstick pan until it is very hot. Reduce heat to medium high, and add oil. Saute onion in the oil until it softens.
- Meanwhile mince garlic, and add to onion. Add pine nuts.
- Wash, trim and coarsely chop tomatoes. When onion begins to brown, add tomatoes and tomato paste. Reduce heat to medium low, and cover.
- Cook the penne according to package directions.

- Wash, trim and slice the scallions, and add to the pot.

FETA TOMATO SPINACH PASTA

- Preheat oven to 400 degrees
- Cook pasta according to package instructions. After cooking, remove 1/4 cup of pasta water and set aside. Drain the pasta well and set aside
- Slice cherry tomatoes in half and set aside
- Grab an oven safe dish, I used an 8x8 glass casserole dish.
- Add the tomatoes and drizzle with the olive oil. Sprinkle with the Splenda, salt and pepper and toss into the oil.
- Add the minced garlic on top of the tomatoes. Move the tomatoes to the outside of the dish place the block of feta in the middle of the tomatoes.

- Chop up the baby spinach and add into the dish. Toss to coat until spinach is wilted.
- Add the pasta in and toss to coat
- Top with fresh basil. Sprinkle on some crushed red pepper for a spicy dish.
