I got this recipe out of cooking light magazine. This pasta is great tasting and simple to prepare. I loved it!! The only thing I did differently was to add about 1 cup mushrooms to the pan when I added the peas. Hope you enjoy!!

1 (9 ounce) package fettuccine
2 slices smoked bacon
1/2 cup onion, chopped
1 garlic clove, minced
1 tablespoon fresh thyme, chopped
1/2 cup frozen peas
1/2 cup green onion, chopped
1/3 cup half-and-half
2 teaspoons butter
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup parmesan cheese

Steps:

  • Cook pasta according to package directions, omitting salt and fat. Drain pasta, reserving 1/4 cup cooking liquid.
  • Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan, reserving drippings in the pan; crumble bacon.
  • Add onion, garlic, and thyme to drippings in pan; saute 2 minutes.
  • Stir in green peas; saute 1 minute.
  • Add green onions to pan; saute 1 1/2 minutes.
  • Add pasta, reserved cooking liquid, and half-and-half to pan; cook 1 minute or until thoroughly heated, tossing to combine.
  • Remove from heat. Add butter, salt, and pepper to pan; toss until butter melts.
  • Sprinkle with crumbled bacon and Parmesan cheese.

1 cup part-skim ricotta cheese
1/2 cup parmesan cheese, grated
2 tablespoons butter
1 dash salt, to taste
1 dash black pepper, to taste
4 slices bacon
1 medium onion, chopped fine
2 garlic cloves, minced
1 lb small shell pasta (or choice)
2 cups frozen peas
1 tablespoon lemon juice

Steps:

  • Place ricotta, parmesan, butter, salt and pepper in a large bowl. set aside. Fry bacon in skillet til crisp. Transfer bacon to paper plate to drain, crumbling once cooled. Reserve pan and bacon grease.
  • To the bacon pan, add onion and cook about 3 minutes. Add garlic and cook 1 more minute. Transfer onion mixture to cheese mixture.
  • Meanwhile, cook pasta in boiling water. When it is just 1 minute till done, add peas to water.
  • Reserving 1 cup of pasta/pea water, drain pasta and peas. Add half of the pasta water to the cheese mixture along with the lemon juice and mix till smooth.
  • Add pasta and peas to the cheese mixture and toss to coat, adding more reserved water as necessary to moisten pasta. Stir in bacon bits, adjust seasoning, and serve.

8 ounces bacon, chopped
1 cup shredded carrots
1 cup frozen peas, thawed
1 cup chopped fresh parsley
2 cups whipping cream
2 cups grated Parmesan
1 pound fettuccine, freshly cooked

Steps:

  • Cook bacon in heavy large skillet over medium-high heat until crisp. Using slotted spoon, transfer bacon to paper towel to drain. Pour off all but 1 tablespoon fat from skillet. Add carrots, peas and parsley and sauté 1 minute. Mix in cream and Parmesan and simmer sauce until it thickens slightly, about 3 minutes. Season to taste with salt and pepper. Place fettuccine in large bowl. Add cream mixture and toss well. Sprinkle with cooked bacon and serve.

½ large onion, chopped
