FETTUCCINE WITH GORGONZOLA AND BROCCOLI
Cruciferous broccoli stands up well to the intensely flavored cheese sauce in this pasta dish.

Steps:
- In a medium stainless-steel pot, combine the broth and wine and bring to a boil over moderate heat. Cook until the mixture is reduced to about 2/3 cup, 5 to 10 minutes.
- Reduce the heat to moderately low and add the Gorgonzola, cream and butter. Bring to a simmer; cook, stirring, until the cheese melts and the sauce thickens slightly, about 5 minutes. Add the salt and pepper. Remove from the heat.
- In a large pot of boiling, salted water, cook the pasta until almost done, about 9 minutes. Add the broccoli florets and bring back to a boil. Cook until the broccoli and pasta are just done, about 3 minutes longer. Drain.
- Toss the fettuccine and broccoli with the Gorgonzola sauce, Parmesan and parsley. Serve with extra Parmesan.
- Variations: Try the sauce and pasta with asparagus, green beans or just fresh herbs instead of the broccoli.
- Wine Recommendation: Strong-flavored broccoli and Gorgonzola are a challenge to match with wine. A Fiano di Avellino's intense taste can take them on, and its acidity will cut the unctuousness of the sauce.

PASTA WITH GORGONZOLA SAUCE AND RADICCHIO
This rich and flavorful sauce is the perfect match for bitter radicchio. It is incredibly easy to make and goes well with any type of (preferably fresh) pasta. My favorite pasta to have this with is gnocchi. The light and fluffy potato pasta goes well with the rich sauce. Garnish with Parmesan cheese and parsley.

FETTUCCINE WITH GORGONZOLA SAUCE AND BROCCOLI
This sets my mouth tingling and drooling for this dish. Can be made with asparagus, green beans or just herbs instead of broccoli. Update: 07/29/08, a viewer suggested that we use some mushrooms towards the end. Also, changed the serving size - it is more for 6-8 servings. (When we make it here at the home - the amounts have to be increased.)

PASTA WITH GORGONZOLA
Easy and fast recipe to make. We love it here at home. It's not the most healthy dish, but once in a while you should allow yourself to sin. We eat this easily with just the 2 of us. However, just add some more pasta and there should be enough for 2 adults and 2 kids. Especially if you serve it with some salad on the side.

Steps:
- Bring water for the Penne pasta to a boil. Meanwhile, dice the courgette, and cut the bacon into small pieces. Remove the crust of the Gorgonzola and crumble into pieces
- Add the pasta into the boiling water and cook according to the instructions (Usually, takes about 12-15 minutes). Fry the bacon in a hot frying pan until the bacon pieces separate from each other. Don't fry them crispy. Add the courgette and fry for a few minutes over a medium heat.
- Pour in the double cream and add the cheese. When all the cheese has dissolved in the cooking cream, let it all simmer on a low heat until the courgette is almost done. I like mycourgette al dente. Add freshly ground black pepper to taste.
- If your pasta isn't done yet but your sauce is, just remove the sauce from your stove and reheat if needed before adding it to the pasta.
- After draining your Penne stir in the sauce and you're ready to enjoy your meal
BROCCOLI FETTUCCINE ALFREDO
This versatile side dish is a variation of a recipe I've had for years. Instead of broccoli, you can use green beans, carrots or your family's favorite vegetable. You can even add cubed cooked chicken and turn it into a main dish.-Robin Stevens, Cadiz, Kentucky

Steps:
- Put a large pot of water on the stove to boil. While the water heats up, crumble the cheese and butter into a large bowl along with the garlic, spinach and a very generous crack of pepper. When the water has boiled, add a large pinch of salt and cook the pasta until aldente.
- When the pasta is cooked, add a ladle of the pasta water to the bowl with the ingredients for the sauce. Drain the pasta, add it to the bowl and toss vigorously until the cheese and butter has melted, generously coating the pasta.
- To serve, pour the pasta into a large serving bowl and top with the ball of buratta and a drizzle of olive oil (or if you're fancy like me, make it truffle oil). The real masterpiece is breaking into the ball of buratta and mixing it through the pasta, it's a thing of beauty.
FETTUCCINE WITH MUSHROOM-GORGONZOLA SAUCE
Steps:
- Heat oil in heavy large skillet over medium heat. Add onions and garlic. Sauté until onions are tender, about 8 minutes. Add mushrooms and bell peppers. Sauté until tender, about 20 minutes. (Can be prepared 8 hours ahead. Cover and refrigerate. Rewarm before continuing.)
- Cook fettuccine in large pot of boiling salted water until just tender but still firm to bite. Drain well; return pasta to pot.
- Meanwhile, add 1 1/4 cups whipping cream and cheese to mushroom mixture. Simmer gently over medium heat until cheese melts, stirring occasionally, about 4 minutes. Stir in chives, parsley and basil. Add sauce to pasta; toss to coat. Season pasta to taste with salt and pepper. Transfer to bowl and serve.
PASTA WITH GORGONZOLA AND ARUGULA
The main characters here are Gorgonzola and arugula, the first of which appears in a number of different pasta sauces, all unsurpassed for their creaminess. But in many instances, to me at least, Gorgonzola-based sauces tend to be too slick and rich. This makes the addition of the fresh-tasting spicy arugula from the supermarket even more welcome. Not only does it provide a little bit of crunch, but its odd version of heat also gives a bit of an edge to what could otherwise be a soft, almost insipid sauce. Don't forget to finish up with a few hearty cranks of the pepper mill. A full teaspoon for the entire dish is not too much. (The original recipe called for 1/4 pound of Gorgonzola and 2 tablespoons of butter, but after many readers commented that the dish needed more sauce, we tested it and agreed. The figures you see below are for doubling the sauce, but if you prefer it the old way, just halve the Gorgonzola and butter.)

Steps:
- Bring a large pot of water to boil for pasta. Meanwhile, melt butter over low heat in a small saucepan. Add Gorgonzola and cook, stirring frequently, until cheese melts. Keep warm while you cook the pasta.
- Tear arugula into bits, or use a scissors to cut it. Pieces should not be too small. Cook pasta until it is tender but not mushy. Remove and reserve a little cooking water, then drain pasta and toss it with arugula and cheese mixture, adding a bit of water if mixture seems dry.
- Taste and add seasoning. Dish should take plenty of black pepper. Serve.

QUICK FETTUCCINE AND BROCCOLI ALFREDO
This is a go-to dinner in my house. You can have the entire family eating within 30 minutes, and it's fun to get the kids involved in the cooking. You can switch out the pasta for another long cut like linguine, bucatini or angel hair. And you can sub cauliflower florets or baby carrots for broccoli; just be sure to adjust the steaming time.

Steps:
- Bring a large pot of salted water to a boil. Add fettuccine and cook according to package directions until al dente, 8 to 11 minutes. While the pasta cooks, place a steamer basket over the pot and place the broccoli in the basket. Cover and steam until tender, 3 to 4 minutes. Set aside.
- Meanwhile, in a large saucepan or skillet, melt the butter over medium heat. Grate the half clove of garlic with a rasp grater into the butter and cook, stirring, about 1 minute. Stir in the cream, milk, and salt and pepper to taste. Bring to a simmer. Stir in the Romano and Parmesan, stirring until melted; the sauce will thicken. Turn off the heat and set aside until the pasta is done.
- Drain the pasta, reserving about 1/2 cup of cooking liquid. Add the drained pasta to the cream sauce and stir until well coated. If the sauce seems too thick, stir in some of the reserved pasta cooking liquid to thin it until it coats the pasta well. Fold in the broccoli. Garnish with parsley and more Parmesan.
