3/4 c. canned low-sodium chicken broth or homemade stock
1/2 c. dry white wine
1/2 lb. Gorgonzola or other blue cheese
2 c. heavy cream
3 tbsp. butter
1 tsp. salt
1/4 tsp. fresh-ground black pepper
1 lb. fettuccine
1 1/4 lb. broccoli (about 2 stalks)
c. grated Parmesan
3 tbsp. chopped fresh parsley

Steps:

  • In a medium stainless-steel pot, combine the broth and wine and bring to a boil over moderate heat. Cook until the mixture is reduced to about 2/3 cup, 5 to 10 minutes.
  • Reduce the heat to moderately low and add the Gorgonzola, cream and butter. Bring to a simmer; cook, stirring, until the cheese melts and the sauce thickens slightly, about 5 minutes. Add the salt and pepper. Remove from the heat.
  • In a large pot of boiling, salted water, cook the pasta until almost done, about 9 minutes. Add the broccoli florets and bring back to a boil. Cook until the broccoli and pasta are just done, about 3 minutes longer. Drain.
  • Toss the fettuccine and broccoli with the Gorgonzola sauce, Parmesan and parsley. Serve with extra Parmesan.
  • Variations: Try the sauce and pasta with asparagus, green beans or just fresh herbs instead of the broccoli.
  • Wine Recommendation: Strong-flavored broccoli and Gorgonzola are a challenge to match with wine. A Fiano di Avellino's intense taste can take them on, and its acidity will cut the unctuousness of the sauce.

Steps:

  • Cook fettucini according to package directions.

12 cloves garlic, peeled and coarsely minced
1 pound broccoli florets, washed and blanched
2 pounds fresh fettuccine, cooked al dente in boiling, salted water, rinsed and drained, recipe follows
12 ounces store-bought Mornay sauce
Salt and freshly ground black pepper
5 ounces freshly grated Romano
12 ounces semolina flour
12 ounces bread flour
1 tablespoons salt
8 ounces water, as needed
2 eggs

Steps:

  • In a saute pan, heat oil and saute garlic. Add broccoli and toss together.
  • Add pasta to garlic and broccoli. Add Mornay sauce, season, to taste, and heat throughout.
  • Serve immediately garnished with cheese.
  • Mix dry ingredients in a mixer. Slowly add water and eggs. Mix for 10 minutes; the dough should be crumbly. Extrude pasta as desired.
  • Yield: 2 pounds (approximately 10 servings)

2 cups chopped radicchio
1 ½ cups heavy whipping cream

  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain.

1 tablespoon cornstarch
1 cup low-fat buttermilk
2 tablespoons sweet Gorgonzola
Large dash ground nutmeg
8 ounces fresh angel-hair pasta
1/2 cup fresh or frozen peas
2 tablespoons toasted, chopped walnuts
2 tablespoons freshly grated parmigiano reggiano

Steps:

  • Bring 3 quarts of water to boil in covered pot for pasta.
  • Mix cornstarch with a tablespoon of buttermilk to make smooth paste. In heavy-bottomed saucepan, combine buttermilk-cornstarch mixture, remaining buttermilk, Gorgonzola and nutmeg.
  • Cook over medium heat, stirring almost constantly, to melt cheese and thicken mixture.
  • When water boils, stir in pasta and cook according to package directions, about 45 seconds; drain.
  • Just as buttermilk mixture begins to thicken, stir in peas and cook just long enough to heat through.
  • Stir in walnuts and serve over pasta with Parmesan cheese on the side.

  • Bring water for the Penne pasta to a boil. Meanwhile, dice the courgette, and cut the bacon into small pieces. Remove the crust of the Gorgonzola and crumble into pieces
  • Add the pasta into the boiling water and cook according to the instructions (Usually, takes about 12-15 minutes). Fry the bacon in a hot frying pan until the bacon pieces separate from each other. Don't fry them crispy. Add the courgette and fry for a few minutes over a medium heat.
  • Pour in the double cream and add the cheese. When all the cheese has dissolved in the cooking cream, let it all simmer on a low heat until the courgette is almost done. I like mycourgette al dente. Add freshly ground black pepper to taste.
  • If your pasta isn't done yet but your sauce is, just remove the sauce from your stove and reheat if needed before adding it to the pasta.
  • After draining your Penne stir in the sauce and you're ready to enjoy your meal

  • Put a large pot of water on the stove to boil. While the water heats up, crumble the cheese and butter into a large bowl along with the garlic, spinach and a very generous crack of pepper. When the water has boiled, add a large pinch of salt and cook the pasta until aldente.
  • When the pasta is cooked, add a ladle of the pasta water to the bowl with the ingredients for the sauce. Drain the pasta, add it to the bowl and toss vigorously until the cheese and butter has melted, generously coating the pasta.
  • To serve, pour the pasta into a large serving bowl and top with the ball of buratta and a drizzle of olive oil (or if you're fancy like me, make it truffle oil). The real masterpiece is breaking into the ball of buratta and mixing it through the pasta, it's a thing of beauty.

  • Cook fettuccine in large pot of boiling salted water until just tender but still firm to bite. Drain well; return pasta to pot.
  • Meanwhile, add 1 1/4 cups whipping cream and cheese to mushroom mixture. Simmer gently over medium heat until cheese melts, stirring occasionally, about 4 minutes. Stir in chives, parsley and basil. Add sauce to pasta; toss to coat. Season pasta to taste with salt and pepper. Transfer to bowl and serve.

The main characters here are Gorgonzola and arugula, the first of which appears in a number of different pasta sauces, all unsurpassed for their creaminess. But in many instances, to me at least, Gorgonzola-based sauces tend to be too slick and rich. This makes the addition of the fresh-tasting spicy arugula from the supermarket even more welcome. Not only does it provide a little bit of crunch, but its odd version of heat also gives a bit of an edge to what could otherwise be a soft, almost insipid sauce. Don't forget to finish up with a few hearty cranks of the pepper mill. A full teaspoon for the entire dish is not too much. (The original recipe called for 1/4 pound of Gorgonzola and 2 tablespoons of butter, but after many readers commented that the dish needed more sauce, we tested it and agreed. The figures you see below are for doubling the sauce, but if you prefer it the old way, just halve the Gorgonzola and butter.)

  • Toss the fettuccine and broccoli with the Gorgonzola sauce, Parmesan, and parsley. Serve with extra Parmesan.
