1 box (15.3 oz) Betty Crocker™ Fiber One™ banana nut muffin mix
1/2 cup water
2 tablespoons vegetable oil
2 eggs
1 cup fresh blueberries
1 tablespoon decorator sugar crystals

Steps:

  • Heat oven to 350°F. Spray bottom only of 9x5-inch loaf pan with cooking spray.
  • In medium bowl, stir muffin mix, water, oil and eggs just until blended (batter may be lumpy). Gently stir in blueberries. Spread in pan. Sprinkle sugar crystals over batter.
  • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Remove from pan to cooling rack. Cool completely, about 1 hour. Wrap tightly and store in refrigerator.

1 egg
½ teaspoon vanilla extract
1 cup gluten-free all purpose baking flour (such as Bob's Red Mill®)
1 cup quick oats
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon ground cinnamon, or to taste
2 cups mashed ripe bananas
¼ cup unsweetened almond milk
½ cup blueberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Combine sugar and butter in a large bowl; beat with an electric mixer until smooth and creamy. Add egg and vanilla extract; beat until fluffy.
  • Sift flour, oats, baking soda, salt, and cinnamon into a medium bowl. Add to sugar mixture and mix until well combined. Mix in mashed bananas and almond milk. Fold in blueberries. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until top of loaf springs back when lightly pressed, 35 to 40 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack to cool completely before serving.

1/2 cup shortening
1 cup sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 medium ripe bananas, mashed
1 cup fresh blueberries

Steps:

  • Preheat oven to 350°. In a large bowl, cream the shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda and salt; gradually add creamed mixture, beating just until combined. Stir in bananas. Fold in blueberries., Pour into three greased 5-3/4x3x2-in. loaf pans. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes or. Cool for 10 minutes before removing from pans to wire racks.

  • Preheat oven to 350 degrees F (175 degrees C). Grease 3 small loaf pans.
  • Mix flour, baking soda, and salt together in a bowl.
  • Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add 1 egg and allow to blend into the butter mixture before adding the second egg along with vanilla extract. Beat mashed bananas thoroughly into the mixture. Add flour mixture in small increments while beating until just combined into a thick batter. Fold blueberries into the batter; pour into prepared loaf pans.

3/4 cup water
1 tablespoon grated orange peel
1/2 cup orange juice
2 cups Gold Medal™ all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons vegetable oil
1 egg
1 cup fresh or frozen (do not thaw) blueberries
1/2 cup powdered sugar
1/4 teaspoon vanilla
2 to 3 teaspoons milk

Steps:

  • Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan with shortening or baking spray with flour. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  • In large bowl, stir together cereal, water, orange peel and orange juice; let stand 10 minutes.
  • Stir in remaining ingredients except blueberries. Gently stir in blueberries. Spread batter in pan.
  • Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf; remove from pan to cooling rack. Cool completely, about 2 hours.
  • In small bowl, mix all vanilla glaze ingredients until smooth and thin enough to drizzle. Drizzle over top of bread.
