Number Of Ingredients 10

3 quarts peanut or vegetable oil, for frying
2 large russet potatoes, peeled and cut lengthwise into 1/4-inch wide sticks
2 large russet potatoes, peeled and cut lengthwise into 1/4-inch wide sticks
1 cup all-purpose flour
1 teaspoon cayenne pepper
1 teaspoon seafood seasoning, such as Old Bay
1/2 teaspoon baking soda
Kosher salt
3/4 bottle cold light beer
1 pound white fish, such as cod, cut diagonally into 1 1/2-inch wide strips, 5- to 6-inches long

Steps:

  • Heat the oil in a large deep, pot over medium heat. Bring the oil to 325 degrees F. Regulate the temperature with a candy thermometer. Keep the potato sticks in a bowl of water to prevent browning before frying. Remove to paper towels and dry well before placing in the oil. Working in batches, fry the potatoes until they are cooked through and tender but have no color, 4 to 5 minutes. Be sure the fries have plenty of room and gently swish them around as they are cooking. Remove them from the oil and put them immediately on a paper towel-lined baking sheet.
  • Preheat the oven to 300 degrees F and raise the temperature of the cooking oil to 375 degrees F.
  • In a medium bowl, combine the flour, cayenne, seafood seasoning, baking soda and a pinch of salt. Make a well in the center of the flour mixture and gently stir in the cold beer. Mix until just combined. When the oil is preheated to the correct temperature, dip the fish in the batter mixture. Coat the fish generously. When adding the fish to the oil, dip about 1/3 to 1/2 of the fillet into the oil and allow the batter to start puffing and then gently slide it into the oil completely. Fry the fish until they are golden brown and crispy, about 5 minutes, turning the fish over during the cooking time. When the fish are done, remove from the oil and put immediately on paper towels to blot the excess oil. Arrange the fish on a baking sheet lined with a cooling rack. Hold the fish in the preheated oven until serving. Work in batches and be sure not to crowd the oil.
  • Again, working in batches, fry the fries a second time at 375 degrees F, until they are golden brown and crispy. Remove them from the oil, immediately put them on paper towels and toss with salt. Transfer the fish to a serving platter and serve with the fries.

4 medium unpeeled potatoes
4 teaspoons salt, divided
4 cups ice water
1 tablespoon chili powder
1 teaspoon garlic salt
1 teaspoon dried parsley flakes
1/4 to 1/2 teaspoon cayenne pepper
Oil for deep-fat frying

Steps:

  • Using a vegetable peeler or metal cheese slicer, cut potatoes into very thin lengthwise strips. Place in a large bowl; add 3 teaspoons salt and ice water. Soak for 30 minutes; drain. , Place potatoes on paper towels and pat dry. In a small bowl, combine the chili powder, garlic salt, parsley, cayenne and remaining salt; set aside. , In an electric skillet or deep-fat fryer, heat oil to 375°. Cook potatoes in oil in batches for 2-3 minutes or until deep golden brown, stirring frequently. , Remove with a slotted spoon; drain on paper towels. Immediately sprinkle with reserved seasoning mixture. Store in an airtight container.

4 cups vegetable oil, for frying

2 tablespoons cornstarch
1 tablespoon baking powder
Salt and freshly ground black pepper
2 bottles wheat beer
2 eggs, whisked
3 pounds cod fillets, cut in nice pieces
Homemade Chips, recipe follows
Lemon wedges, for serving
Malt vinegar, for serving
Tangy Tarter Sauce, recipe follows
Peanut oil, for frying
3 russet potatoes, very thinly and evenly sliced
Salt
1/2 cup creme fraiche
1/2 cup mayonnaise
3 tablespoons freshly grated horseradish
1 tablespoon capers, chopped
1 bunch chives, chopped
1 lemon, juiced
Salt and freshly ground black pepper

Steps:

  • Heat the vegetable oil in a heavy-bottomed pot until a deep-fry thermometer inserted in the oil registers 360 degrees F.
  • In a large bowl, whisk together the flour, cornstarch, baking powder, a big pinch of salt and some pepper. Whisk in the beer, and then the eggs.
  • In batches, dust the fish with flour, and then carefully dip into the batter. Shake off any excess, and then gently place into the oil. Fry until golden, 2 to 3 minutes per side. Drain on a paper towel-lined plate and season immediately with salt and pepper.
  • Serve the fish and Homemade Chips together with lemon wedges, malt vinegar and Tangy Tarter Sauce.
  • Heat 1 inch of peanut oil in a heavy-bottomed pot until a deep-fry thermometer inserted in the oil registers 360 degrees F. In batches, add the potato slices to the hot oil. Fry until brown and crispy, 4 to 5 minutes. Drain on a paper towel-lined plate and season immediately with salt.
  • Stir together the creme fraiche, mayonnaise, horseradish, capers, chives and lemon juice in a medium bowl. Season with salt and pepper.

1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt

1 cup milk
1 egg
1 quart vegetable oil for frying
1 ½ pounds cod fillets

Steps:

  • Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
  • Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
  • Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
  • Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
  • Fry the potatoes again for 1 to 2 minutes for added crispness.

2 lb chicken wings
1 ½ teaspoons kosher salt, plus more to taste
½ teaspoon freshly ground black pepper
canola oil, for frying
5 oz unsalted butter
½ cup fresh lime juice
4 cloves garlic, minced
2 tablespoons brown sugar
¼ cup honey
2 tablespoons McCormick® Fiery Spice Blend, plus more for garnish
1 ½ teaspoons corn starch
2 tablespoons water, cold filtered
fresh cilantro leaf, for garnish
lime, zested, for garnish

Steps:

  • Preheat the oven to 350ºF (180˚C). Line a baking sheet with parchment paper.
  • Season the wings all over with salt and pepper and set on the prepared baking sheet.
  • Bake the wings until the internal temperature reaches 165ºF (74˚C), about 20 minutes.
  • Heat 1 inch of canola oil in a large pot over medium heat until it reaches 350ºF (180˚C).
  • While the oil heats, make the wing sauce. In a medium skillet, gently melt the butter over medium heat. Once melted, add the lime juice, garlic, honey, and Fiery spice blend. Bring to a simmer, whisking to combine. Cook until the sauce comes together and thickens slightly, about 3 minutes.
  • Make cornstarch slurry: stir together cornstarch and cold water, breaking up any clumps, you should be left with a milk like consistency. Whisk cornstarch slurry into the sauce, bring up to a low boil, whisking continuously until thickened. Season with salt to taste. Remove the sauce from the heat and set aside.
  • Working in batches, carefully lower 4-6 wings at a time into the hot oil. Fry for 2-3 minutes, until the skin is golden brown and crispy. Repeat with the remaining wings.
  • In a large bowl, toss 4-6 wings at a time with ¼-⅓ cup of the sauce until well coated. Repeat with the remaining wings.
  • Garnish the wings with cilantro, lime zest, and a pinch of Fiery spice blend, if desired. Serve hot.

2 chicken breasts, sliced into strips
2 tablespoons Tasty™ Fiery seasoning mix
½ yellow bell pepper, seeded and sliced
½ orange bell pepper, seeded and sliced
½ medium red onion, sliced
1 ½ cups fresh spinach
3 cups whole milk
½ lb rotini pasta
½ cup mozzarella cheese, shredded
¼ cup parmesan cheese, shredded

Steps:

  • Heat the oil in a large pot over high heat. Add chicken and 2 tablespoons Tasty™ Fiery Seasoning Mix and stir to coat. Cook until the chicken is no longer pink, 5-6 minutes, then remove from the pot.
  • Add the yellow and orange bell peppers, and red onion to the pot and toss well to combine. Cook until the onion is translucent, 5-7 minutes.
  • Return the chicken to the pot with the milk and pasta. Be sure to stir occasionally to prevent the pasta from sticking together. Cook for about 20 minutes, until the pasta is al dente and the liquid has reduced to a thick sauce that coats the pasta.
  • Add the spinach, mozzarella, and parmesan cheeses and stir until melted.
  • Serve warm.

6 (6 -7 inch) flour tortillas
1 tablespoon margarine
1 1/2 teaspoons water
1/4 cup brown sugar, Splenda brown sugar blend works well also
1/16-1/4 teaspoon cayenne pepper, depending on taste

Steps:

  • Preheat oven to 375°F.
  • In small bowl microwave margarine and water at 100% power for 15 seconds or until margarine melts.
  • Stir in brown sugar until smooth.
  • Spread equal amounts of sugar mixture over top of each tortilla, leaving 1/2 inch border.
  • Lightly sprinkle chips with cayenne pepper.
  • Cut into 8 wedges.
  • Arrange in single layer on baking sheet.
  • Bake 7 to 9 minutes or until sugar melts and bubbles and chips feel firm.
