Thick, and that sticky texture of figs, turn this smoothie into a yum-yum smoothie for those who like figs a lot or want to rid their fridge of this perishable fruit fast.

- Place the bananas, figs, milk, and orange juice into a blender. Cover, and puree until smooth. Pour into glasses to serve.

GRILLED GOAT CHEESE SANDWICHES WITH FIG AND HONEY
These are just as good for breakfast as they are for supper! Mixing honey with the goat cheese mades it easy to spread on the cinnamon raisin bread. Adapted from Cooking Light magazine(June 2004). An African/Middle Eastern influenced recipe.

Steps:
- Combine honey, lemon rind, and goat cheese, stirring till blended. Spread 1 tbls. goat cheese mixture on each of 4 bread slices; top each slice with 1 1/2 teaspoons preserves and 1/2 teaspoons basil. Top with remaining bread slices. Lightly coat oustide of each sandwich with margarine or cooking spray.
- Heat a large nonstick skillet over medium heat. Add 2 sandwiches to the pan. Place a weight(cast iron or heavy skillet) on top of sandwiches; press gently to flatten. Cookk 3 minutes on each side, or until bread is lightly toasted, leaving pan on top of sandwiches as they cook.
- Repeat with remaining sandwiches. Sprinkle with powdered sugar.
- Makes 4 sandwiches.

FIG AND CHIA BREAKFAST SHAKE
This fig shake is a great way to start your morning. I wanted something different in a smoothie and this is, to me, quite delicious. I have this for my breakfast and it keeps me full until lunch. It's a great on-the-go breakfast, but will keep in the fridge for a few hours so you can enjoy it as an afternoon snack.

- Combine 2 cups oat milk, bananas, figs, chia seeds, almond butter, and cinnamon in a blender; blend until smooth and creamy, 1 to 2 minutes.
- Taste and if not sweet enough, add honey. If too thick, add a bit more oat milk.

- Soak the figs in 1 cup of water for 4-5 hours.
- Grind in a mixer till smooth.
- Add the milk, sugar and honey.
- Beat till frothy.
- Add the cream and essence.
- Beat again.
- Serve ice cold!
- Yummy, enjoy!
