This recipe features dried figs, which can be found year-round, poached in wine, for a delicious winter dessert.

1 package (10 ounces) dried Calimyrna figs, (1 1/2 cups, packed)
1 bottle (3 cups) red wine
1/3 cup sugar
Zest of 1 orange

Steps:

  • In a medium saucepan, combine all ingredients and bring to a boil, stirring occasionally. Reduce heat; simmer, covered, until figs are easily pierced with the tip of a sharp paring knife, 45 minutes to 1 hour.
  • With a slotted spoon, transfer figs to a bowl; simmer remaining liquid until reduced to about 1/3 cup, 3 to 5 minutes (liquid should look syrupy and coat the back of a spoon). Pour through a fine-mesh sieve over figs, and let cool slightly. (If refrigerating, bring to room temperature before serving.) Serve figs and syrup over ice cream or whipped ricotta cheese, if desired.

2 cups red wine
1 cup sugar
Tied in cheesecloth: 1 inch piece of cinnamon stick; 4 star anise, 4 cardamom pods and 2 whole cloves
6 large navel oranges, peeled, pith removed and cut in half lengthwise
12 dried figs, halved
1/3 cup walnuts or pistachios, chopped

Steps:

  • Combine the wine, sugar and bouquet garni in a saucepan large enough to contain the oranges and figs in a single layer. Bring to a simmer, covered, over moderate heat. Add the figs and simmer for 5 minutes. Add the oranges and turn them for 3 to 4 minutes, turning them so they cook evenly. Turn the heat off and let the oranges and figs cool in the syrup.
  • Remove them to a serving bowl. Reduce the syrup by half and let cool. Discard bouquet garni and spoon syrup over figs and oranges. Garnish with walnuts or pistachios if you wish.

1 (1 1/2-inch) cinnamon stick
6 black peppercorns
1 1/2 cups dry red wine
1/2 cup water
1/4 cup sugar
1 cup dried figs (1/2 lb; preferably Calimyrna), trimmed and each fig cut lengthwise into 3 slices
3 tablespoons fresh lemon juice
Special Equipment
kitchen string; a 4-inch square of cheesecloth

Steps:

  • Tie zest, cinnamon, and peppercorns together in a cheesecloth bag. Bring wine, water, sugar, and cheesecloth bag to a boil in a 1 1/2-quart heavy saucepan, stirring until sugar is dissolved. Boil syrup until reduced to about 1 1/2 cups, 8 to 10 minutes. Add figs and simmer, covered, until soft and plump, 25 to 30 minutes. Discard cheesecloth bag and stir lemon juice into fig mixture. Cool at least 1 hour, then serve warm or at room temperature.

1 cinnamon stick
8 fresh (about 1/2 pound) or 12 dried figs, halved lengthwise
1 cup walnuts, finely chopped
1 teaspoon chopped fresh thyme leaves
1 (3 1/2-ounce) log goat cheese
Fresh thyme sprigs, to garnish

Steps:

  • Figs: In a nonreactive medium pot combine the wine, honey, and cinnamon. Bring to a simmer, over low heat, and cook until slightly thickened, about 30 minutes. Add the figs and cook for 10 minutes. Set aside to cool slightly. Remove the cinnamon stick.
  • Goat cheese: In a shallow bowl, mix together the walnuts and thyme. With damp hands, roll the goat cheese into 1-inch balls. Roll the balls into the nut mixture until coated.
  • To serve: Spoon the figs into 2 glasses and drizzle with the wine syrup. Add the herbed goat cheese and serve.

1 1/2 pounds soft dried Mission figs, hard stem ends discarded
2 cups dry red wine
1/2 cup sugar
3 (3- by 1-inch) strips fresh orange zest, removed with a vegetable peeler
2 (3- by 1-inch) strips fresh lemon zest, removed with a vegetable peeler
Accompaniments:Mahón cheese ice cream Sherry vinegar syrup
Special Equipment

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Put figs in a 3-quart shallow glass or ceramic baking dish. Bring wine with sugar and zests to a boil in a 1-quart heavy saucepan, stirring until sugar is dissolved, then pour over figs (figs will not be covered by liquid). Bake figs, uncovered, stirring occasionally, until figs have absorbed about two thirds of liquid and are very tender but still hold their shape, 50 to 60 minutes.
  • Put a sheet of parchment directly on figs, pressing them into liquid, then let stand at room temperature 1 hour.
  • Serve figs with a bit of their juices and small scoops of ice cream, all drizzled with Sherry vinegar syrup.
  • Figs can be made 1 week ahead and chilled, covered. Bring to room temperature before serving.

18 moist dried figs (about 1 pound)

Steps:

  • 1 In a medium saucepan, combine the vin santo, honey, and lemon zest. Bring to a simmer over low heat and cook 1 minute. 2 Add the figs and cold water to cover. Bring the liquid to a simmer over low heat and cover the pot. Cook until the figs are tender, about 10 minutes. 3 With a slotted spoon, transfer the figs from the pot to a bowl. Cook the liquid, uncovered, until reduced and slightly thickened, about 5 minutes. Pour the syrup over the figs and let cool. Refrigerate at least 1 hour and up to 3 days. Serve slightly chilled. Adapted from a recipe on SippitySup.com. I have used both a late harvest zinfandel and a merlot for this. Inexpensive wines are fine, as they are reduced and sweetened. This will keep three days in the fridge. The figs can be frozen in the syrup, but will soften more because the ice crystals will break the cell walls. I suspect this recipe would be good for canning, although I have not tried it. Figs in regular sugar syrups need to be acidified and processed in a boiling water bath for 45 (pints) to 50 (quarts) minutes, which would poach the fruit. They are a gorgeous red color and are good with ice cream, cheeses (brie would be good), yogurt, or mascarpone.

1 cup granulated sugar
1/2 lemon, juice of
1 lemon, zest of
3 whole star anise
8 whole black peppercorns
5 whole juniper berries
12 ripe fresh figs, washed and stemmed

Steps:

  • Place the wine, sugar, lemon zest and juice, and spices in a medium saucepan over medium-high heat. Bring to a boil, then lower heat and simmer until reduced by half, about 1/2 hour. It should have a syrupy consistency.
  • Cut an X into the tops of the figs. If they vary in size, cut the larger ones into pieces about the size of the smaller ones.
  • Add the figs to the hot reduced wine syrup and let cool before serving. If refrigerated, bring them up to room temperature before serving.
