CRISPY BAKED EGGPLANT FRIES - GLUTEN-FREE
Crispy Baked Eggplant Fries that are gluten-free and so easy to make! Chickpea breadcrumbs stuck to soft and tasty eggplant all baked to oven-fried perfection and matched with a delicious marinara dipping sauce!

Steps:
- Preheat oven to 425 degrees F and spray a baking sheet with cooking spray.
- Place the whisked eggs into a shallow bowl and season them with a little salt and pepper. Place the breadcrumbs into another shallow bowl, add the parmesan cheese to the breadcrumbs and toss to combine.
- Dredge each eggplant fry in the egg then the breadcrumbs and place it in a single layer onto the baking sheet. Continue until you have dredged all of the eggplant. Make sure to lay the breaded eggplant in a single layer on the baking sheet.
- Spray the eggplant with olive oil cooking spray and bake in the oven for 20-25 minutes, turning the fries over halfway through to get both sides nice and crispy.
- Remove, sprinkle with salt and fresh chives or parsley. Plate and serve warm with your favorite marinara.

- Preheat oven to 425 degrees F (220 degrees C).
- Place French fries in a large casserole dish. Sprinkle lemon pepper, red pepper seasoning, garlic powder, and chili powder over the French fries, and stir to distribute seasonings evenly. Divide the butter into 4 pats, and place one pat in each corner.
- Bake French fries until crispy and lightly browned, about 15 minutes.

- Peel potatos.
- Cut potatos into strips ( I cut them thin like shoe string fries).
- Brush potatos with egg whites, be sure to all sides are coated.
- Sprinkle all sides with season salt (or whatever seasoning you like).
- Bake at 375 for about 30 minutes or until they reach desired crispiness.

- Never freeze potatoes. Grocery stores have developed the appalling (but cheap and convenient?) habit of freezing and/or refrigerating potatoes. That turns them sweet.

- Lard, not oil, actually produces the best-tasting fries. Yes, I said lard. Recent studies show that saturated fat isn’t bad for cholesterol or heart unless you eat way too much.
- Pour loads of oil or fat into your deep fryer or pot you’re using. Most of this oil will not end up in the fries, and can even be stored and re-used at a later date.
- Heat the oil to 350 degrees, or a little bit less. If your oil starts smoking, it’s turning into trans-fat. Just turn down the temperature a little.
- As I mentioned above, you can reuse the oil – a few times. Restaurants sometimes keep reusing it until it’s rancid, which is gross, unhealthy and nasty-tasting.
- Cook them in small batches. Dump in a small batch of uncooked fries. Pull them out when they’re as brown as you like. Put them on a paper towel to cool and lose some of their grease.
