SPAM® FRIED RICE



Spam® Fried Rice image

A simple recipe to use up all your pantry ingredients and the Spam® in the back of your cupboard.

1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cubed
1 tablespoon sesame oil
1 onion, diced
4 cups leftover cooked rice
1 cup frozen peas and carrots
4 large eggs, beaten
2 tablespoons soy sauce
½ tablespoon Sriracha
4 large eggs
salt and ground black pepper to taste
1 tablespoon shredded nori, or to taste
1 tablespoon sliced scallions, or to taste
1 teaspoon sesame seeds, or to taste
1 teaspoon black sesame seeds, or to taste

Steps:

  • Heat a large skillet over medium-high heat. Add Spam® and fry until lightly browned, 5 to 7 minutes. Transfer to a plate.
  • Heat sesame oil in the same pan until shimmering, about 1 minute. Add onion and saute until it softens slightly, about 5 minutes. Reduce heat and add rice and frozen vegetables; mix and fry until heated through, about 5 minutes. Push the rice mixture to the sides or edges of the pan, add beaten eggs to the center, and scramble until curds form, 3 to 4 minutes.
  • Stir half of the Spam® back into the pan and mix the eggs in with the rest of the rice mixture. Add soy sauce and Sriracha. Mix and remove from the heat.
  • Crack remaining eggs into a skillet over medium heat. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes. Season with salt and pepper.
  • Place fried eggs on top of the fried rice, add reserved Spam®, and garnish with nori, scallions, and sesame seeds.

Filipino Spam Fried Rice image

Filipino spam fried rice is one of my childhood favorites. Easily made with few ingredients, you can have this tasty dish ready in no time.

Number Of Ingredients 6

12 oz SPAM (cubed)
4-6 cups cooked rice (a day old)
2 eggs (scrambled)
½ cup carrots (cubed)
½ cup frozen peas
1-3 tbsp soy sauce

Steps:

  • Put about a tablespoon of oil in a skillet on medium heat. Scramble 2 eggs in skillet. Remove and set aside once done.
  • In same skillet with a bit more oil, fry the cubed SPAM with about a tablespoon or two of sugar. Fry until golden and the sugar has caramelized. Remove and set aside once done.
  • Next place the cubed carrots and frozen peas and cook until softened. Once the veggies are soft, add the cold rice along with 1-3 tablespoons of soy sauce. Stir and fry until well combined and starts to sizzle in the pan.
  • Finally, add the egg and spam. Give a final stir to combine, heat through, and remove from heat. Season to taste with either more soy sauce or salt and white pepper.

1/2 lb bacon (chopped)
1 green pepper (seeded, chopped)
1 onion (minced)
1 small cabbage (shredded)
3 carrots (peeled, julienned)
2 garlic cloves (minced)
1 lb leftover roast pork (chopped)
2 cups cold cooked rice
1 cup frozen peas (thawed)
1/2 cup soy sauce

Steps:

  • In a wok fry bacon until crisp. Drain well.
  • Re-heat wok.
  • Add the pepper, onion, cabbage, carrots and garlic. Stir-fry 3 minutes.
  • Add pork. Cook 1 minute.
  • Add rice. Cook 1 minute.
  • stir in peas and soy sauce. Cook 30 seconds.
