POLVORONES: GROUND WALNUT COOKIES
Polvo means powder in Spanish, which is exactly what these crumbly and buttery cookies turn into in your mouth. My mom made polvorones for us every Christmas. These melt-in-your-mouth Mexican wedding cookies are very easy to prepare and are the perfect accompaniment for a warm cup of after-dinner coffee, or for dipping in hot chocolate as I did when I was a child.

Steps:
- Using an electric mixer, beat the butter in a large bowl until light and fluffy. Add the sugar and beat until well blended. Beat in the flour, and then the ground and chopped walnuts. Divide the dough in half, forming each half into a ball. Wrap separately in plastic and chill until cold, about 30 minutes.
- Preheat the oven to 325 degrees F.
- Working with half of the chilled dough at a time while keeping the rest in the fridge, roll the dough by 2 teaspoonfuls between your palms into balls. Arrange the balls on a large baking sheet, spacing them 1/2-inch apart.
- Bake the cookies until golden brown on the bottom and just pale golden on top, about 18 minutes. Cool the cookies for 5 minutes on the baking sheet. Toss the warm cookies in the powdered sugar. Transfer the sugar-coated cookies to a rack to cool completely. (The cookies can be prepared 2 days ahead. Store in an airtight container at room temperature). Sift additional powdered sugar over the cookies, if desired, before serving.
PASTA WITH WALNUT SAUCE

- Put a large saucepan of water on to boil, and toast the walnuts in a dry frying pan until they begin to make a nutty aroma. Put the bread in a bowl and cover with the milk. Put most of the toasted walnuts (reserving about 1 ounce for garnish) into a blender along with the garlic, bread soaked in milk, and Parmesan. Blend until it turns smooth and creamy, then pour in the oil and season well with salt and pepper before blending again.
- Pour into a bowl, and set aside.
- Add pasta to boiling water with salt and cook for the required amount of time. When pasta is al dente, reserve a cup of the pasta cooking liquid and then drain the pasta, but put it in to a large bowl while it's still dripping slightly with water. Sprinkle a little olive oil over the pasta to prevent it sticking together, and then add the walnut sauce, mixing it into the pasta (splash in a little pasta cooking liquid to make the sauce less thick if needed).
- Roughly chop the remaining walnuts and toss them over the top along with some more Parmesan and the chopped parsley.

- Heat oven to 325 degrees.
- Put fish in single layer in oiled shallow baking dish.
- Sprinkle with cayenne, add broth and wine.
- Cover and bake 15 to 20 minutes, just until fish is opaque in thickest part.
- Remove from oven, pour liquid into small saucepan.
- Cover fish and keep warm while making sauce.
- Boil liquid over moderately high heat, until only about 1/3 remains.
- Stir in walnuts, parsley and butter/margarine.
- Pour over fish and serve.
BEEF, ALE & WALNUT CASSEROLE
Traditional beef and Ale Casserole with Opies Famous Pickled Walnuts

- Pre-heat oven to 160 C/325 F/ Gas Mark 3. Heat oil in large flameproof casserole, add beef, and cook over moderate to high heat for 2-3 minutes until browned all over.
- Using a slotted spoon remove beef from casserole to a plate. Fry onion in casserole, stirring occasionally, for a few minutes until soft, not coloured. Add flour and cook stirring continuously for 1 minute. Add beef stock, ale, tomato puree, thyme, bay, sugar slt and pepper and bring to boil, stirring until smooth and thickened.
- Return beef to the casserole, and bring back to boil. Cover casserole and cook in pre-heated oven, for approximately 2 hours or until tender.
- Add walnuts for the last 20-30 minutes of cooking.
HONEY WALNUTS
Steps:
- Bring four to five cups of water to a boil in a wok. Place walnuts in boiling water for five minutes to remove bitter taste. Remove from water and drain, then run cold water over the walnuts. Drain again, then place back in the wok with another four cups of water. Bring to a boil and cook for another five minutes. Repeat draining process. Set aside and let drain.
- Wash wok. Add 6 tablespoons of water and bring to a boil. Then add sugar, constantly stirring. Let boil for 1 minute and add walnuts. Stir until the nuts are coated with glaze and remaining liquid in wok has evaporated.
- Remove walnuts and set aside. Wash wok with extremely hot water to remove sugar and dry.
- Place peanut oil in wok. Bring to a boil (look for a wisp of white smoke), then add walnuts. Fry for 4 to 5 minutes, or until walnuts turn light golden brown.

CHINESE FRIED WALNUTS
I am always asked to bring these walnuts whenever we have a get together with family or friends. They are perfect on tables at a bridal or baby shower, and no one can ever figure out how they are made. Very addicting!

- Place walnuts in a medium stock pot. Cover with water and boil for 2 minutes. Strain, but do not rinse. Transfer to a bowl, and toss with sugar while still hot until well coated.
- Heat 3 inches of oil in a large saucepan over medium-high heat. When oil appears to shimmer, fry 1 nut to test for heat. Nut should begin to sizzle immediately. Fry 1/3 batch of nuts at a time for 4 to 5 minutes uncovered. Toss nuts before each batch, and repeat. Using a slotted spoon, transfer each batch to a cookie sheet to cool. Season to taste with salt, and break apart when cool.

I found this recipe in a mystery novel by Joanne Fluke, called Lemon Meringue Pie Murder. They require at least 4 hours refrigeration before baking. This recipe makes 8-10 dozen cookies according to the original recipe.

Steps:
- Melt chocolate chips with margarine in the microwave, stirring as needed.
- Mix in the brown sugar and let cool.
- Add the eggs one at a time, ensuring you mix well after each egg.
- Stir in the vanilla, baking powder and salt.
- Stir in the flour.
- Stir in the nuts.
- Place the dough in the fridge for at least 4 hours but overnight is best.
- Preheat oven to 350.
- Using about 1 tablespoon or a cookie scoop, roll walnut sized balls of dough. Coat with sugar.
- Place them on a lightly greased cookie sheet.
- Flatten slightly with the palm of your hand.
- The original directions call for the cookies to be baked for 12-14 minutes, however I found that 9 minutes worked best for me.
- Allow them to cool on the cookie sheet for about a minute and remove. They may stick if left longer on the cookie sheet.

- Bring a pot of water to a boil, and stir in half the walnuts; reduce heat to medium, and boil for 1 minute. Remove nuts with a slotted spoon, and let drain in a colander set in the sink. Repeat with remaining walnuts. Rinse the walnuts under hot water, and transfer to a mixing bowl. Toss the walnuts with the sugar.
- In an electric skillet with heat set to 350 degrees F (175 degrees C), heat the canola oil. With a metal slotted spoon, place enough nuts to cover the bottom of the skillet; the oil will sizzle and pop, so be careful to avoid spatters. Gently stir the nuts with the spoon. Fry the walnuts until golden brown, about 5 minutes per batch. Transfer the walnuts in clumps to a baking sheet.
- Sprinkle the nuts with salt, and let cool. Store in airtight container.
