My husband loves omelettes and nothing makes him happier. When cooking an omelette, it's important that you keep your temperature on the low side, as you don't want your omelette to get brown.

Steps:
- Beat eggs in a bowl with a whisk. Add milk and season with salt and white pepper. Whisk for a few minutes until egg mixture is foamy; beating in air makes the omelette fluffy.
- Melt butter in a small, nonstick skillet over medium-low heat. Pour in egg mixture and twirl skillet so bottom is evenly covered with egg. Cook for 1 minute until egg starts to set. Lift edges with a spatula and tilt the skillet so uncooked egg mixture can run towards the bottom of the skillet to set. Repeat until no visible liquid egg remains.
- Carefully flip omelette and cook for another 30 seconds to 1 minute. Sprinkle Emmentaler cheese in one line in the middle of the omelette and fold omelette in half. Cook for 20 seconds, then slide omelette onto plate.

After countless omelettes turning into scrambled eggs...I finally mastered this egg thing. This is simple, yet delicious!

Steps:
- Melt butter in 10" non-stick pan.
- Whip eggs and water well with fork or whip. Add salt and pepper.
- Stir.
- Once butter melted, add egg mixture.
- In first 30 seconds make a few slits with spatula to allow eggs to cook in center.
- Over MED-HI heat tilt pan back & forth so runny part of eggs cook.
- Pan should be nice & slippery for this!
- When almost done, tear cheese slices & place over eggs.
- Allow cheese to melt slightly.
- Fold half egg over the other.
- Give about 30 seconds to set.
- Slip egg onto plate.
- Enjoy!

THREE CHEESE OMELETTE

- Using an 8-inch, non-stick skillet, melt butter over medium heat. Add beaten eggs. Add the eggs begin to coagulate, add the 3 cheeses evenly over the eggs. As cheese begins to melt, and before the eggs get brown, flip or turn egg mixture over. Continue to cook until the cheese melts. Turn omelette 1 more time. The finished omelette will be a nice yellow color with the cheese melted. Serve immediately.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch pie plate.
- Combine 1/2 cup butter and 3 tablespoons sugar in a bowl; beat with an electric mixer until creamy. Beat in 1 egg until well blended. Beat in flour and baking powder. Chill crust mixture for 30 minutes.

- Preheat omelet pan on medium heat.
- Mix eggs, milk, salt, and pepper until frothy. (Don't over whisk).
- Cut piece of butter off the short side of stick and melt in pan so omelette does not stick.
- Pour mixture into pan and wait till it is cooked and thick. If it falls apart in pan, let it cook more.
- Next,when the omelette is thick and does not fall apart when lifted take ripped up American cheese slices and put on one side of omelette.
- Flip the uncheesed side of omelette to the side of the omelette with cheese. Wait until cheese melts and take off and into plate.

- Using a fork, beat eggs with 1 teaspoon water until yolks and whites are completely combined and no streaks remain. The water helps incorporate them and steams while the omelet cooks, which puffs it up. Season with 1/8 teaspoon kosher salt and a few cracks of pepper.
- Heat butter in an 8-inch nonstick skillet over medium-high until foaming;swirl to coat. When foam subsides, pour eggs into center of skillet. Let stand 10 seconds. - Whisk eggs in a medium bowl until well combined and smooth, taking care not to whip in too much air. The point is to combine the yolks and whites very well.
- In a small nonstick skillet over medium-low, heat 1 tablespoon butter until the butter has melted and just begins to foam.
- Pour in the eggs. Working quickly with one hand, gently move the pan in a circular motion over the heat (this will keep the eggs moving and evenly cooking). With your other hand, use a small rubber spatula (or chopsticks) to stir the eggs in a loose figure-eight pattern, creating small curds and scraping down the side of the skillet as you go. Continue until the eggs are mostly cooked through but just a little runny on top, 2 to 3 minutes.
- Remove the pan from the heat and sprinkle the omelet with a pinch of salt, then sprinkle the cheese down the center. Gently shake the pan so that the omelet shifts toward the side of the pan opposite the handle and up the side of the pan. The part of the omelet above the edge of the pan should fold back over on itself - use your rubber spatula to give it a hand, if it doesn't.
- Slide 1 tablespoon of butter underneath the omelet that's still in the pan. (This will help keep the omelet tender and soft - and it tastes really good.)
- Using the spatula, roll up the omelet, then flip it seam-side down onto a warm serving plate. Slide the remaining 1/2 tablespoon butter across the top, then sprinkle with a pinch each of salt and pepper and the chives. Serve hot.

PHILLY STEAK & CHEESE OMELETTE
DH was hungry for an omelette the other day and asked if I would make him one with Steak-Um, cream cheese and onions. I thought it was an odd combo but that was what he was craving. I have to say, it was to DIE for. He ate the first one and then asked for another. I told him I didn't think it was normal to eat 6 eggs in one day. DH likes thin omelettes so this recipe is made in our large skillet and will yield a thin omelette. If you like a thicker omelette, use a small skillet.

- In a large skillet, heat the butter on medium-high heat.
- Add onions and cook until tender/translucent. Transfer to small bowl.
- Add the cream cheese to the onions in the bowl.
- In the same large skillet, cook the Steak-ums (about 3-4 minutes or until cooked through.
- Strain the meat and add to the bowl with the onions and cream cheese. Mix well softening the cream cheese so it spreads easily.
- Whip the eggs.
- Wipe out the large skillet after cooking the steak and spray with Pam (you can use butter too) and heat on medium heat.
- Add your eggs and cook until the eggs on the top are almost cooked.
- Add the steak & cheese mixture to one side of the eggs. Fold over the side of the eggs on top of the mixture. Cook a minute or two and then flip.
- Season with salt and pepper to your desire.

KITTENCAL'S SALAMI CHEESE OMELETTE
This has been a tradition on weekend mornings at my house for years! This makes enough to feed two hungry men or even three people, the ingredients can be decreased and adjusted to suit taste, I really don't even measure when I make this omelette so the ingredients below are only estimated. I usually purchase the unsliced whole salami chubs for this it is easier to cut into pieces, and also try to purchase the all beef, the taste is much better. If you are planning to make this omelette on a regular basis as I do (and you will, it is so good!) a short cut, is to purchase a whole salami, cut into small pieces and then freeze, it will be handy in your freezer when you want it. If you have any leftovers (which you probably won't lol!) the cold omelette mixture makes a fabulous sandwich. Regular white onions just don't work for this omelette use only green!

- Whisk the eggs with baking powder, half and half together well with the salt and pepper; set aside.
- In a medium frypan melt about 2 tablespoons butter (can use more or less butter) and brown the salami pieces.
- Add in the green onions to the salami, and fry until soft (about 2 minutes).
- Pour in the egg/cream mixture.
- Then sprinkle with grated cheese.
- Adjust with more salt and pepper if desired.
