SIMPLE BANANA BREAD
I developed this recipe because I wanted a bread recipe, not cake-like, while living in a 10-foot trailer. This recipe is very low in fat.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 8x4 inch loaf pan and set aside.
- In a large bowl, sift together the flour, baking powder, and salt. Set aside.
- In another bowl, mash the bananas and stir in the eggs and sugar. Stir in the flour mixture and mix until just combined, then fold in the chopped nuts (optional). Pour the batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 55 to 65 minutes or until bread tests done. Remove from oven and cool on a rack for 10 minute, then remove from pan and cool completely. Slice and serve.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
- Combine sugar, butter, bananas, eggs, flour, baking soda, milk, salt and vanilla extract in a large mixing bowl; beat well. Pour batter into prepared pan.
- Bake in a preheated oven for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

- Preheat oven to 350°. In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. , Pour into a greased or parchment-lined 9x5-in. loaf pan. If desired, sprinkle with additional walnuts. Bake until a toothpick comes out clean, 1-1/4 to 1-1/2 hours. Cool in pan for 15 minutes before removing to a wire rack.

From "The Green Thumb Harvest" Cookbook. This won first prize in 1889 at the Wabash, Indiana County Fair by her great-grandmother according to the woman who submitted it. This makes 2 loaves.

Steps:
- Preheat oven to 350 degrees. Butter 2 loaf pans.
- Pour the lemon juice into the milk and stir until the milk is curdled. Set aside.
- Beat together the butter, sugar and vanilla until creamy. Add the eggs, mixing thoroughly.
- Sift together the flour, baking soda and salt. Add this to the butter-sugar mixture alternately with the curdled milk. Stir in the bananas and nuts.
- Pour the batter into the prepared loaf pans and bake for 1 hour and 10 minutes, or until a knife inserted into the center comes out clean.

- Preheat oven to 350 degrees.
- Mash ripe bananas with a fork.
- Cream together shortening and sugar. Add eggs, mixing well.
- In another bowl, sift together flour, baking soda, baking powder, cream of tartar, and salt.
- Add flour mixture a little at a time.
- Alternating with banana mixture, mixing well after each addition.
- Turn into greased loaf pan.
- Bake for 45 minutes to 1 hour, or until the top is brown and a toothpick inserted comes out clean.
- Let cool in pan for 5 minutes then turn out onto cooling rack.
