Steps:
- Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
- Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
- Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
- Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
- Fry the potatoes again for 1 to 2 minutes for added crispness.

EASY FISH AND CHIPS
Steps:
- Heat the vegetable oil in a heavy-bottomed pot until a deep-fry thermometer inserted in the oil registers 360 degrees F.
- In a large bowl, whisk together the flour, cornstarch, baking powder, a big pinch of salt and some pepper. Whisk in the beer, and then the eggs.
- In batches, dust the fish with flour, and then carefully dip into the batter. Shake off any excess, and then gently place into the oil. Fry until golden, 2 to 3 minutes per side. Drain on a paper towel-lined plate and season immediately with salt and pepper.
- Serve the fish and Homemade Chips together with lemon wedges, malt vinegar and Tangy Tarter Sauce.
- Heat 1 inch of peanut oil in a heavy-bottomed pot until a deep-fry thermometer inserted in the oil registers 360 degrees F. In batches, add the potato slices to the hot oil. Fry until brown and crispy, 4 to 5 minutes. Drain on a paper towel-lined plate and season immediately with salt.
- Stir together the creme fraiche, mayonnaise, horseradish, capers, chives and lemon juice in a medium bowl. Season with salt and pepper.

- In a blender, combine the salsa, cream cheese, 1 tablespoon lime juice, cilantro, honey and salt. Cover and process until smooth; set aside., Place fish sticks on a baking sheet. - Whisk self-rising flour, rice flour, and baking powder together in a bowl. Freeze until ready to use.
- Pat fish as dry as possible. Cut pieces lengthwise to get eight 1-inch thick strips. Place rice flour on a plate and season with salt. Dust fish lightly with the mixture and shake off excess. Cover a plate with crinkled foil to make a quick drying rack; place fish on top.
- Heat oil in a deep-fryer to 375 degrees F (190 degrees C).

" FISH & CHIPS" APPETIZER
This is a fun and easy take on "Fish & Chips" that is so yummy!! My husband and I went to an open house and they served something similar so I went home and whipped up my own creation which I actually think tasted better! I usually use full fat mayo and cream cheese, but you can certainly substitute low fat. I served it cold, but it could also be warmed and be equally as good...enjoy!

- Mix everything together in medium bowl except the salmon and fresh parsley. Stir to combine.
- Mix in salmon and about half the parsley.

FISH AND CHIPS
Steps:
- Fill a large bowl with water and add 1 tablespoon salt and 1 tablespoon vinegar per gallon. Cut the potatoes into fries, placing into the salted water immediately after cutting.
- Bring a large pot of water to a boil, then add 1 teaspoon salt per gallon and cook the fries until they are tender but not mushy, 12 to 13 minutes. Turn out onto a tray and chill, uncovered, for at least 1 hour or up to overnight.
- Add the peanut oil to a large heavy-bottomed pot or a deep fryer and preheat to 360 degrees F.
- Cut the fish into 8 finger-like pieces of equal size. Sprinkle each piece with salt. Set aside while you get the batter ready.
- Add 1 1/2 cups all-purpose and 1 1/2 cups instant flour to a bowl and mix well. Stir in the sugar, baking powder and vodka. Slowly add the beer, mixing until just combined, being careful not to overmix.
- Add the remaining cup all-purpose and cup instant flour to a shallow dish and mix to combine.
- Place the fish fillets in the flours and dredge until evenly coated. Add the floured fish to the batter and let the excess drain off. Fry until golden brown and delicious, 3 to 5 minutes. Remove from the oil, then drain on paper towels and season with salt.
- Fry the potatoes until golden brown and floating, 6 to 8 minutes. Remove from the oil and add to a heatproof bowl. Season with the salt and malt vinegar and gently toss to combine.
- Place the fries on a plate or basket, then top with the fish and serve with the malt vinegar and tartar sauce.
