A delightful and rich halibut recipe with a memorable herbed white wine cream sauce.

Provided by Charter Guy

Categories     Main Dish Recipes     Seafood Main Dish Recipes     Halibut

Time 25m

Yield 4

Number Of Ingredients 10

4 (8 ounce) halibut steaks
salt and pepper to taste
½ cup all-purpose flour for dusting
¼ cup melted butter
¼ cup dry white wine
1 lemon, juiced
½ cup heavy cream
2 tablespoons finely chopped fresh parsley
4 tablespoons finely chopped fresh basil
2 tablespoons drained capers

Steps:

  • Rinse the halibut steaks and pat dry. Season with salt and pepper, then dust with flour.
  • Melt the butter in a large skillet over medium-high heat. Fry the halibut steaks in the butter for 4 to 5 minutes, until nicely browned. Remove from the skillet and keep warm.
  • Reduce the heat to medium, and stir the wine into the pan, scraping up any browned bits stuck to the bottom. Mix in the lemon juice, then stir in the cream. Simmer for 2 to 3 minutes or until it starts to thicken. Season with parsley, basil and capers, and stir for another minute. Serve halibut with sauce spooned over it. Garnish with additional parsley if desired.

SEARED FISH WITH CRISPY POTATOES AND GREEN SAUCE

Seared Fish with Crispy Potatoes and Green Sauce image

You'll have more green sauce than you'll need for this recipe, but it will keep in the refrigerator at least a week. Spoon it on steak, chicken, pasta, or roasted vegetables.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Salmon Recipes

Time 20m

Number Of Ingredients 15

4 striped bass or salmon fillets, skin-on (6 ounces each)
Coarse salt and ground pepper
1 bunch fresh mint leaves, 1/4 cup reserved and refigerated
1 bunch fresh basil, 3/4 cup reserved and refigerated
1 bunch fresh parsley leaves
1 garlic clove, minced
1 tablespoon chopped capers
1 tablespoon fresh lemon juice
Extra-virgin olive oil
Coarse salt and ground pepper
16 potatoes
Coarse salt and ground pepper
3 tablespoons extra-virgin olive oil, plus more for baking sheet
12 roasted tomato halves, room temperature
1/2 teaspoon sugar

Steps:

  • In a large saucepan, cover 2 pounds small red new potatoes (about 21) with cold water; season with coarse salt. Bring to a boil, reduce to a simmer, and cook just until tender when pierced with a paring knife, about 15 minutes. If saving for another day, drain and let cool; then cover and refrigerate for later use.
  • Preheat oven to 475 degrees. Lightly oil a rimmed baking sheet. Smash each potato with the base of your palm and place on sheet. Drizzle with 2 tablespoons oil; season with salt and pepper. Roast until crisp, about 20 minutes.
  • Make green sauce. Chop remaining mint and basil and 1 bunch fresh parsley leaves. In a bowl, combine with 1 garlic clove, minced, and 1 tablespoon chopped capers. Stir in 1 tablespoon fresh lemon juice and enough extra-virgin olive oil to coat; season with coarse salt and ground pepper. If saving for another day, cover and refrigerate for later use.
  • Make roasted tomatoes. Reduce oven heat to 350 degrees. Halve 14 plum tomatoes. On 2 large rimmed baking sheets, arrange tomatoes, cut side up, and sprinkle with 1/2 teaspoon sugar. Bake until softened and edges are crinkled, about 1 hour. If saving for another day, let cool. Cover and refrigerate for later use.
  • Meanwhile, score fish skin in a few places with a paring knife and season fillets with salt and pepper. In a large nonstick skillet, heat 1 tablespoon oil over medium-high. Add fish, skin side down, and cook until browned and crisp, 6 to 8 minutes. Reduce heat to medium; flip fish and cook until opaque throughout, 2 to 4 minutes. Serve fish with green sauce, potatoes, and tomatoes.

PESCADO EN SALSA VERDE (FISH FILLETS IN GREEN SAUCE)

Pescado En Salsa Verde (fish Fillets in Green Sauce) image

From "A Taste of Old Cuba." this recipe originally came from a 1950's Cuban TV cooking show--Cocina al Minuto--and can be made in 30 minutes and it couldn't be easier. You can use any white fleshed fish (snapper, flounder, grouper, etc.) and it's a great meal with rice, salad, and good bread to sop up the sauce. I like to add one little hot red pepper, chopped, but that's up to you--as is the amount of garlic.

Provided by Chef Kate

Categories     < 30 Mins

Time 30m

Yield 6 serving(s)

Number Of Ingredients 9

2 lbs red snapper fillets (about 6 - 8 fillets)
2/3 cup olive oil
3/4 cup white wine
2 tablespoons white wine vinegar
1 cup parsley, fresh, roughly chopped
1 small onion, finely chopped
4 garlic cloves, coarsely chopped
1 teaspoon salt (sea or kosher)
1/2 teaspoon pepper, freshly ground

Steps:

  • Blot the fillets dry--really dry--to avoid a watery sauce.
  • In a blender, combine olive oil, wine, vinegar, parsley, onion, garlic, salt and pepper and blend on high until smooth.
  • In a large skillet, arrange the fish snugly in a single layer and pour the sauce over the fish.
  • If the fish won't fit in one layer, arrange the fish in two layers, pouring half the sauce over the first layer and the rest over the top.
  • Bring the sauce to a boil over high heat.
  • Immediately reduce the heat to low, partially cover the pan and gently simmer the fish for 15 to 20 minutes or until the fish flakes when pierced with a fork.
  • Cooking time depends on the thickness of your fillets; if they are thin, they will be done in less time.

HAKE IN GREEN SAUCE

Hake in Green Sauce image

Categories     Fish     Dinner     Pea     Gourmet     Sugar Conscious     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Makes 6 main-course servings

Number Of Ingredients 11

3 (10- to 12-oz) hake steaks (1 inch thick) or 6 (5- to 6-oz) fillets with skin, plus about 5 oz bones or thin belly flap and tail
1 cup water
1 small onion, chopped
1/4 cup minced fresh flat-leaf parsley plus 2 sprigs
3 large garlic cloves, thinly sliced
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 cup extra-virgin olive oil
3/4 cup cooked fresh peas or frozen peas, thawed
Special Equipment
a 12-inch-wide earthenware cazuela* or heavy metal pot (about 3 inches deep) with 2 handles

Steps:

  • Make fish stock:
  • Put fish bones or flap and tail in a 2-quart saucepan (set aside steaks or fillets) and add water, onion, parsley sprigs, and one third of garlic, then gently simmer, covered, 20 minutes. Pour through a fine-mesh or cheesecloth-lined sieve into a small bowl, pressing hard on solids and then discarding them (you will have about 1 cup stock).
  • Cook fish:
  • Pat fish dry and sprinkle with salt and pepper. Heat oil and remaining garlic in cazuela over low heat until garlic begins to sizzle. Add half of minced parsley and all of fish, skin sides up if fillets, then start gently swirling pot, holding onto both handles (it helps to plant your feet apart from each other) so fish moves slowly around edge of bottom of pot and oil laps over it. Cook fish, swirling pot, until bottom 1/2 inch of fish turns white, about 5 minutes. Carefully turn fish over and continue cooking, swirling pot and adding 1 or 2 tablespoons of stock every minute or two, until sauce is emulsified and fish is almost cooked through, about 10 minutes. (You will use about 1/2 cup stock.) Add peas and remaining minced parsley and cook, swirling pot, until peas are warm and fish is just cooked through, 3 to 5 minutes.

FISH STEAKS IN GREEN SAUCE

Fish Steaks in Green Sauce image

Number Of Ingredients 8

1/2 cup all-purpose flour
salt and freshly ground black pepper
4 halibut steaks, tilefish or other white fish steaks, about 1 inch thick
4 tablespoons olive oil
4 green onions, finely chopped
3/4 cup dry white wine
1/4 cup chopped fresh flat-leaf parsley
1 cup fresh or frozen baby peas

Steps:

  • 1 On a piece of wax paper, combine the flour and salt and pepper to taste. Rinse the fish and pat dry, then dredge each steak in the flour mixture to lightly coat both sides. Shake off the excess. 2 In a large skillet, heat 2 tablespoons of the oil over medium heat. Add the fish and brown on one side, about 3 minutes. Turn the fish and brown the other side, about 2 minutes. With a slotted metal spatula, transfer the steaks to a plate. Wipe out the skillet. 3 Pour the remaining 2 tablespoons oil into the skillet. Add the onions. Cook over medium heat until golden, about 10 minutes. Add the wine and bring to a simmer. Cook until most of the liquid is evaporated, about 1 minute. Stir in the parsley. 4 Return the fish to the skillet and baste it with the sauce. Scatter the peas around the fish. Reduce the heat to low. Cover and cook 5 to 7 minutes or until the fish is just barely opaque when cut in the thickest part. Serve immediately. From "1,000 Italian Recipes." Copyright 2004 by Michele Scicolone.
