2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon garlic salt
1 pinch ground black pepper
2 pounds flank steak, cut into strips
½ cup Ranch dressing

Steps:

  • In a large resealable plastic bag, mix the paprika, coriander, cumin, garlic salt, and pepper. Place steak in the bag, and shake to coat. Allow to sit 20 minutes in the refrigerator.
  • Preheat the oven broiler. Lightly grease a baking sheet.
  • Arrange steak on the baking sheet, and broil 5 minutes on each side, or to desired doneness. Serve with Ranch dressing for dipping.

Basil Butter:
1 1/2 pounds flank steak
1/4 cup balsamic vinegar
2 Tablespoons cooking oil
2 teaspoons smoked paprika
1/2 teaspoon Kosher or sea salt
1 recipe Basil Butter
1/4 cup softened butter
2 tablespoons fresh snipped basil
1 clove garlic, minced
1/2 teaspoon dijon mustard
1/4 teaspoon smoked paprika
1/4 teaspoon feshly ground black pepper

Steps:

  • 1. Trim fat from steak. Score both sides of steak in a diamond pattern, making shallow diagonal cuts at 1 inch intervals. Place steak in a resealable bag set in a shallow dish. 2. For marinade, combine vinegar, oil, smoked paprika, and salt. Pour marinade over steak; seal bag. Marinate in the refrigerator for 4 to 24 hours, turning bag occasionally. Drain steak, reserving marinade. 3. For charcoal grill, grill steak in the rack of an uncovered grill directly over medium coals for 17 to 21 minutes for medium doneness(160), turning once and basting with reserved marinade halfway through grilling. (For gas grill, preheat grill. Reduce heat to mediu. Place grill on grill rack over heat. Cover and grill as above. 4. Thinly slice the steak diagonally across the grain. Immediately top steak slices with the basil butter. For Basil Butter: In a small bowl combine 1/4 cup butter, fresh basil, garlic, dijon mustard, 1/4 teaspoon smoked paprika, and pepper. Shape mixture into a 1 1/2 inch log and wrap in plastic wrap. Chill for up to 48 hours. Let sit at room temperature for 20 minutes before using.

One 2-pound flank steak, brought to room temperature
1 tablespoon olive oil, plus more for drizzling
2 teaspoons smoked sweet paprika
1 teaspoon granulated garlic
1 teaspoon granulated onion
Salt and coarse black pepper
Salt and coarse black pepper
1 bunch scallions, trimmed
2 bunches watercress, tops trimmed away from stems
1 lemon, juiced
12 ounces smoked blue or Danish blue cheese, crumbled

Steps:

  • Preheat the griddle pan to medium-high.
  • Coat the steak in oil and rub with the paprika, garlic, onion and some salt and pepper. Dress the scallions with a little oil as well, and season with salt and pepper.
  • Grill the steak about 12 minutes, turning once. While the meat rests, grill the scallions until marked.
  • Dress the cress with the lemon juice and 1 tablespoon of olive oil, and then season with salt and pepper.
  • Slice the steak against the grain, 1/4-inch thick. Fan the steak on a plate and top with the grilled scallions, cress and the crumbled blue cheese.

½ white onion, sliced
1 ½ lb flank steak
2 tablespoons olive oil
4 cups wild rice, cooked, to serve
1 ½ teaspoons salt
1 ½ teaspoons pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon onion powder

Steps:

  • Preheat oven to 400°F (200°C).
  • In a small bowl, add the salt, pepper, garlic powder, paprika, and onion powder. Stir until well combined.
  • Place broccoli, onions, and flank steak on a baking tray.
  • Coat broccoli and onions with olive oil.
  • Sprinkle seasoning mix on flank steak, broccoli, and onions until coated.
  • Bake for 15 minutes.
  • Broil for 2 minutes.
  • For medium, internal temperature of steak should reach 145°F (65°C). Let steak rest 10 minutes before cutting.
  • Serve now with wild rice or refrigerate in airtight containers up to 3-4 days.

1 tablespoon smoked paprika
1 tablespoon coarse salt (kosher or sea)
1 1/2 teaspoons ground black pepper
1 1/4 lbs flank steaks
8 tablespoons unsalted butter
2 teaspoons smoked paprika
1 garlic clove, minced
1 teaspoon sherry wine vinegar or 1 teaspoon lemon juice

Steps:

  • Prepare the dry rub in a small bowl.
  • Massage the rub over the steaks and let sit at room temperature for 30 minutes.
  • To prepare the paprika butter, melt the butter in a small saucepan over low heat, stir in the paprika and garlic and cook for 2 minutes.
  • Remove from heat and stir in the vinegar or lemon juice and keep warm.
  • Fire up the grill for a two-level fire, one on high heat and one on ,medium heat.
  • Grill the steak over high heat for 2 1/2 to 3 minutes per side.
  • Move the heat to medium heat and grill for 2 1/2 to 3 minutes per side for medium rare.
  • Let the steaks sit loosely covered with foil for 5 minutes.
  • Slice thinly across the grain and serve with butter dripped over the slices.
