COUNTRY BISCUITS AND SAUSAGE GRAVY

Steps:
- Bake biscuits according to package directions.
- In a large skillet, break up the ground sausage.
- Sprinkle with a teaspoon of pepper and cook until brown.
- Reduce heat and sprinkle flour over sausage; stir to coat.
- Slowly pour in whole milk and stir until thick.
- Remove from heat; sprinkle red pepper flakes and chives over top. Spoon over fresh biscuits.
- Garnish with chives and red pepper flakes.

Steps:
- Heat sausage in a large skillet over medium-high heat. Cook, crumbling with a spoon and stirring often, until browned and cooked through, 5 to 7 minutes.
- Add butter to skillet and melt. Sprinkle flour evenly over skillet and stir for 1 minute. Whisk in 2 1/2 cups milk and scrape up any bits off the bottom of the skillet. Bring mixture to a simmer.
- Reduce heat to low and cook, stirring often, until thickened, about 10 minutes. If mixture becomes too thick, thin slightly by adding more milk or water. Season with hot sauce, pepper, and salt; cook for 1 more minute.
- Serve immediately over hot biscuits.

Posting here for "Annie". I don't use anything but Hot breakfast sausage, (Jimmy Dean's but I'm sure there are others out there), for the Sausage Gravy. Great flavor, just enough heat and the kids (even the big one) milled it. LOL. Note: Prep time does not include making the biscuits.

Steps:
- In a large skillet, over medium-high heat, cook sausage until browned and cooked through, crumbling and breaking it up as it cooks.
- Sprinkle flour over the sausage and drippings and stir until all flour is dissolved and incorporated. Cook for a minute or two longer.
- Slowly stir in milk, stirring constantly. Cook, stirring constantly, over medium-high heat until thick and bubbly. **Note** If the gravy is too thick for you at this point you can add more milk in 1/8 cup increments.
- Remove from heat. Taste gravy and season with salt and pepper as desired.
- Serve over hot biscuits that have been split open on the plate.

Steps:
- Add sausage to a large skillet or heavy-bottomed pot over medium-high heat. Cook and stir with a spatula, breaking apart the sausage until cooked and starting to crisp, 5 to 7 minutes.
- Add butter, onion powder, and garlic powder; stir until butter is melted.
- Sprinkle flour over sausage and butter and stir until combined. Reduce heat slightly and cook until thick, 1 to 2 minutes.
- Pour in chicken stock, scraping up any browned bits from the bottom of the pan. Simmer until stock is absorbed and mixture is thickened, 1 to 2 minutes. Stir in milk until gravy is hot and bubbly.
- Season to taste with salt and lots of freshly cracked pepper. If gravy becomes too thick, thin out with more milk.

MERM'S BISCUITS AND SAUSAGE GRAVY
This is a slightly modified version of my beloved Mom's (her grandkids called her Merm) recipe. My family loves this stuff and they insist I make it for breakfast every holiday and sometime for dinner. I serve it by putting the buttered biscuits on a big plate, smothering them with the gravy and then topping them with either scrambled or over-easy eggs, depending on the preference of the person eating them. This is pure comfort food for my family!

- Bake biscuits according to package directions.
- In a large frying pan, fry sausage. Break the sausage into small pieces using a potato masher as it is frying.
- Melt butter in frying pan and stir well.
- Sprinkle browned sausage with flour and stir until well mixed.
- Slowly add the milk, stirring constantly until thick and creamy.
- Add salt and pepper and stir until mixed.
- For each serving: Cut 2 biscuits in half and butter each half. Lay the halves on a dinner sized plate. Spoon sausage gravy over the biscuits. Serve.

- Crumble sausage into a large saucepan; cook over medium-low heat. Add onion; cook and stir until transparent. Drain, discarding all but 2 tablespoons of drippings. Stir in flour; cook over medium-low heat about 6 minutes or until mixture bubbles and turns golden. Stir in milk. Add seasonings; cook, stirring, until thickened.
