Coconut Ice Cream/Gelato image

I LOVE coconut ice cream and gelato and was so pleased to have had a friend give this recipe to me. Most of the time, I leave the sweetened flaked coconut out since I don't particularly care for the added texture, but that's just me. My friend who makes this all of the time uses a sweetened flaked coconut that is found in the freezer section of the supermarket and says that the taste is better. Experiment and enjoy! :)

Number Of Ingredients 4

1 cup milk
14 ounces cream of coconut (NOT coconut milk)
1 1/2 cups heavy cream
1 1/2 cups sweetened flaked coconut (optional)

Steps:

  • Combine everything except the flaked coconut.
  • Put in ice cream maker and prepare according to manufacturer's instructions.
  • Add flakes 5 minutes before ice cream is ready, if desired.
  • Note: This recipe could either be made up as ice cream or a gelato. If you use whole milk, you will get ice cream. If you exchange the heavy cream for whole milk (so the entire recipe uses 2 1/2 cups of milk), you have gelato. If you use a low-fat milk with the heavy cream, you get something in between.

2/3 cup granulated sugar
1/2 teaspoon sea salt
3 tablespoons cornstarch
2 cups whole milk
1 cup heavy cream
1/2 cup light corn syrup
1/4 cup pure maple syrup
1 strip lemon zest, plus the juice of 1 lemon
1 cup walnuts, toasted and roughly chopped
1/2 teaspoon sea salt
Sprinkles, mini chocolate chips, hot fudge, caramel sauce

Steps:

  • For the gelato: The night before, freeze the ice cream maker bowl, if needed.
  • Prepare a large bowl with ice and a little water.
  • Whisk together the sugar, salt and cornstarch in a medium saucepan. Put over medium heat and allow to toast until fragrant, 3 minutes, stirring constantly.
  • Slowly whisk in the milk and heavy cream. Whisking constantly, cook until the mixture begins to bubble and thicken, 5 to 6 minutes. Remove from the heat, pour into a medium heatproof bowl and place over the ice bath. Whisk constantly to help cool the mixture, 3 to 5 minutes.
  • Once cool, prepare an ice cream maker for freezing according to the manufacturer's instructions. Turn on the machine and slowly add the cooled gelato mixture. Allow to churn for 15 minutes until it thickens.
  • Meanwhile, make the wet walnut topping: Combine the corn syrup, maple syrup and lemon zest in a medium saucepan over medium heat. Bring to a boil and cook for 5 minutes. Remove from the heat and stir in the lemon juice, chopped walnuts and salt. Set aside.
  • When the gelato is thick and creamy, turn off the ice cream machine. Scoop the gelato into serving dishes, top with wet walnuts and any other toppings.

2 cups whole milk
3/4 cup sugar
1 pinch salt
3 tablespoons cornstarch (I believe rice starch could also be used)
1 cup heavy cream

Steps:

  • Warm milk, sugar and salt in a saucepan.
  • In a separate dish, whisk the cornstarch into the heavy cream. Once completely dissolved, add this mixture to the milk mixture.
  • Heat the mixture, stirring constantly until it begins to boil and bubble up. Reduce the heat and simmer for 2 minutes, stiring constantly.
  • Remove from heat and scrape into a bowl. Chill thorough in the refrigerator until chilled through, stirring occasionally as it cools.
  • Once chilled, whisk once more to remove any lumps then process in your ice cream machine per the manufacturer's instructions.
