Growing up in Texas, I got used to a certain type of BBQ. After I moved to Florida, I loved how lots of different citruses were being added to BBQ sauces. I played around for a long time before I hit on what I think is the most balanced yet citrus-dominant Florida BBQ sauce yet. -Christine Hair, Odessa, Florida

Number Of Ingredients 11

4 cups ketchup
1 cup orange juice
1/2 cup lemon juice
1/2 cup honey
1/3 cup lime juice
1 large onion, finely chopped
4 garlic cloves, minced
1 tablespoon grated orange zest
2 teaspoons grated lemon zest
2 teaspoons grated lime zest
1/2 to 2 teaspoons crushed red pepper flakes

Steps:

  • In a large saucepan, combine all ingredients; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 30-35 minutes. Refrigerate up to 1 week.

NONA'S JAPANESE UME DRESSING

This is one of my many Japanese-style salad dressings I created to satisfy my taste. Ume(boshi) is a favored taste addition in many Japanese cooking. It shows up in cakes, cookies, snacks, mochi, salads, beverages, soups, with pork, chicken and fish, and of course dressing. You can find umeboshi in Japanese markets in refrigerated section. Ume is often called plum or pickled plums, however it is much closer to apricots. You can find ume trees in US now. Ume is not tasty fresh and must be either pickled or preserved.

½ cup vegetable oil
¼ cup chopped onion
¼ cup rice vinegar
1 tablespoon toasted sesame seeds
1 tablespoon minced fresh ginger root
1 tablespoon umeboshi, minced
1 ½ teaspoons lemon juice
1 teaspoon white sugar, or more to taste
1 teaspoon salt
ground black pepper to taste

Steps:

  • Place the vegetable oil, onion, rice vinegar, sesame seeds, ginger, umeboshi, lemon juice, sugar, salt, and pepper into a blender. Cover, and puree until smooth, about 30 seconds.

1 tablespoon rice-wine vinegar
3 tablespoons sugar
1 teaspoon salt
1 1/2-inch square piece kombu
3 tablespoons freshly squeezed orange juice, preferably Minneola

Steps:

  • Place vinegar, sugar, salt, and kombu in a small saucepan over low heat and cook, stirring, until sugar and salt have dissolved. Remove from heat and let cool.
  • Remove kombu and discard. Add orange juice and stir to combine. Set aside until ready to use.

3 lightly beaten eggs
3/4 cup cornstarch
4 boneless skinless chicken breast halves (about 1lb.)
1/3 cup cooking oil
4 cups fresh bean sprouts
1 small cucumber
1/3 cup thinly sliced radish
3 tablespoons sliced green onions
1/4 cup soy sauce
1/4 cup sugar
1/4 cup rice vinegar
1 tablespoon toasted sesame oil
toasted sesame seeds, garnish
finely chopped sweet red pepper, garnish
angel hair pasta

Steps:

  • Make Amazu sauce: combine all ingredients in bowl and set aside.
  • Combine eggs and cornstarch. Dip the chicken into mixture, coating well.
  • In a large skillet, heat oil over medium-high heat.
  • Add chicken, half at a time, cook 5 minutes or until browned. Drain; keep warm (I put in a warm oven as they are done cooking).
  • While chicken is cooking boil bean sprouts in a large amount of boiling water for 3 minutes; drain.
  • Use a vegetable peeler to slice cucumber into long thin strips.
  • Toss together the bean sprouts, cucumber, radishes and green onions.
  • Arrange chicken on top.
  • Drizzle with Amazu sauce.
  • Garnish with sesame seeds and red pepper.
  • Serve over cooked pasta, if desired.
