Easy Herb Drop Biscuits image

Provided by Alisa Fleming

Time 22m

Yield 12 drop biscuits

Number Of Ingredients 6

2 cups all-purpose or wheat flour (see post above)
1 tablespoon baking powder
¾ to 1 teaspoon salt (see below)
3 tablespoons chopped fresh herbs (thyme, rosemary, etc)
½ cup mayonnaise (natural, organic or vegan)
¾ to 1 cup unsweetened dairy-free milk beverage (I use So Delicious Coconut Milk Beverage)

Steps:

  • Preheat your oven to 400ºF and line a baking sheet with a silicone baking mat or parchment paper.
  • Add the flour, baking powder, and salt to a mixing bowl and whisk to combine. Whisk in the herbs.
  • Add the mayonnaise and whisk until the flour forms coarse crumbs.
  • Stir in ¾ cup of the milk beverage. Add more, as needed, to get a dough that is sticky, but not too wet.*
  • Scoop the dough into 12 mounds on your baking sheet (I use an old-school ice cream scoop). If needed, you can gently shape the dough with lightly damp hands.
  • Bake for 12 to 13 minutes or until lightly crusty on top and slightly golden overall. They don't tend to brown.

Tender, fluffy Herb Drop Biscuits speckled with fresh herbs and made in just one bowl for ease. A delicious combination of flavours to enjoy anytime of day.

Provided by Jess

Categories     Breakfast

Time 38m

Number Of Ingredients 10

2 cups all-purpose flour
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
1/4 tsp garlic powder
1 tsp fresh thyme leaves, roughly minced (substitute fresh for 1/4 tsp dried thyme)
1 tsp fresh rosemary, roughly minced (substitute fresh for 1/4 tsp dried rosemary)
1/2 cup cold unsalted butter, grated coarsely or cubed (leave in fridge until ready to use)
3/4-1 cup milk
extra milk for brushing

Steps:

  • Preheat the oven to 400F. Line a large baking sheet with parchment paper.
  • In a mixing bowl, use a fork to stir together flour, baking powder, baking soda, salt, garlic powder, minced thyme and minced rosemary.
  • Grate the cold butter on the coarse side of a cheese grater into the mixing bowl. Then using your hands, rub the flour and butter together until it resembles a coarse meal, about pea-sized pieces. (If you don't have a cheese grater, cut the butter into small cubes and then mix into the flour as described).
  • Pour in ¾ cup of milk and stir gently until the dough comes together into a sticky, shaggy dough. Add in the last ¼ cup of milk if the dough is still a bit dry and all of the flour isn't yet incorporated.
  • Use a 1/4 cup measuring cup to scoop out mounds of biscuit dough onto the baking sheet (it does not need to be measured perfectly, just use it as a scoop). You will get about 8-10 biscuits.
  • Brush the tops of each biscuit with a bit of milk and then bake for 16-18 minutes, until the tops of the biscuits just start to turn golden.
  • Remove from the oven and let sit on a baking sheet for 5 minutes. Then remove to cool on a baking rack. Enjoy warm or at room temperature.
  • Store in a container at room temperature for up to 2 days or in the fridge for up to 4 days. Or, freeze for up to 2 months.

Time 30m

Yield 6 biscuits

Number Of Ingredients 10

1 1/2 cups all-purpose flour
1 heaping tablespoon baking powder
1/4 teaspoon kosher salt
Pinch of garlic powder
1 stick (1/2 cup) salted butter, cold, cut into small pieces, plus 2 tablespoons, melted, for brushing
1/2 cup freshly grated Parmesan cheese
1 tablespoon fresh flat-leaf parsley, chopped
1 teaspoon fresh oregano, chopped
1 teaspoon fresh thyme, chopped
3/4 cup whole milk

Steps:

  • Preheat the oven to 400 degrees F and prepare a baking sheet with parchment paper.
  • Put the flour, baking powder, salt and garlic powder in a food processor and pulse a few times to combine. Add the cold butter and pulse until the dry ingredients and the butter are mostly combined. (If you do not have a food processor, this can be done with a pastry cutter.)
  • Add the Parmesan, parsley, oregano and thyme. Drizzle in the milk and pulse (or stir in with a wooden spoon) until the mixture has just turned into a dough. Be careful not to overmix, as the biscuits will become tough when baked if you do.
  • Using 2 large spoons, drop 1/2-cup sized balls of dough onto the prepared baking sheet. This will make 6 generously sized biscuits.
  • Bake until golden brown, about 20 minutes, depending on your oven. Brush the warm biscuits with the melted butter. Enjoy!
