JAMAICAN SPINNERS (DUMPLINGS)



Jamaican Spinners (Dumplings) image

Spinners are a type of Jamaican dumpling used primarily in soups and stews. Make them with just three ingredients-flour, water, and salt.

1 cup all-purpose flour
1/2 teaspoon salt
Water (as needed)

Steps:

  • Gather the ingredients.
  • In a small bowl, combine the flour and salt. Add just enough water, one tablespoon at a time, to make a stiff dough. Let the dough rest for 10 minutes.
  • Pinch off about 1/2 ounce of dough and roll it between the palms of your hands to form a softly tapered cylindrical shape. Repeat until all of the dough has been transformed into spinners.
  • The spinners can be cooked in a pot of boiling salted water for about 5 to 7 minutes or added to a soup or stew 5 minutes before the dish is due to finish cooking. To test for doneness, cut one open to make sure the dough is fully cooked.
  • Serve and enjoy!

Flat fried buttery dough usually served with cod fish in Jamaica, as a big weekend breakfast, slightly different from the American dumplings.

4 cups all-purpose flour
2 teaspoons baking powder
1 ½ teaspoons salt
½ cup butter
½ cup cold water
1 cup vegetable oil for frying

Steps:

  • In a large bowl, stir together the flour, baking powder and salt. Rub in the butter until it is in pieces no larger than peas. Mix in water 1 tablespoon at a time just until the mixture is wet enough to form into a ball. The dough should be a firm consistency. Knead briefly.
  • Heat the oil in a large heavy skillet over medium heat until hot. Break off pieces of the dough and shape into a patty - kind of like a flat biscuit. Place just enough of the dumplings in the pan so they are not crowded. Fry on each side until golden brown, about 3 minutes per side. Remove from the pan and drain on paper towels before serving.

My mother was one of the best cooks I ever knew. When she made stews we mostly found dumplings in them. We never ate things from packages or microwaves and you sure could taste what food was. That's the only way I cook today - I don't use any electronic gadgets to cook with except an electric stove.

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon white sugar
½ teaspoon salt
1 tablespoon margarine
½ cup milk

Steps:

  • Stir together flour, baking powder, sugar, and salt in medium size bowl. Cut in butter until crumbly. Stir in milk to make a soft dough.
  • Drop by spoonfuls into boiling stew. Cover and simmer 15 minutes without lifting lid. Serve.
  • To make parsley dumplings, add 1 tablespoon parsley flakes to the dry ingredients.

This is the only way I knew to make dumplings before I came to the south. I still use this recipe and it goes great if your doing a big pot of soup or stew.

SIFT DRY INGREDIENTS(OPTIONAL)
1 c all purpose flour
2 tsp baking powder
1/2 tsp salt
COMBINE
1/2 c milk any kind
2 Tbsp salad oil or any kind

Steps:

  • 1. Mix all ingredients together so that it is sticky but able to drop from a tablespoon. Last 15 minutes before serving your stew or soup drop in broth with a tablespoon(you can make them smaller but they puff up as you can see in the photo)cover and cook for the remainder of time. Will make 6 very good sized dumplings, but could make as many as 10. Don't lift the lid while cooking.

  • Heat oil in pan.
  • Put each dumpling in pan and fry on each side.
  • Remove from pan when each side is golden brown.
