FOIL PACK STEAK FAJITAS



Foil Pack Steak Fajitas image

Flank steak, peppers and onions are grilled in foil, then rolled in flour tortillas with sour cream and guacamole in this yummy Tex-Mex meal.

1.5 pounds flank steak, thinly sliced
1 (1 oz.) package fajita seasoning mix, divided
3 tablespoons olive oil, divided
3-4 cloves garlic, minced
1 tablespoon lime juice
Salt and pepper
3-4 bell peppers (any color), sliced
1 medium onion, sliced
Flour tortillas
Optional toppings: sour cream, guacamole, salsa, lime wedges

Steps:

  • Place the sliced flank steak in a large, zip-top bag. Set aside 2 teaspoons of the fajita seasoning.
  • In a small bowl, whisk together the remaining fajita seasoning, 2 tablespoons of olive oil, garlic, lime juice, and salt and pepper, to taste. Add to sliced steak in bag and seal. Refrigerate for at least 2 hours, or up to 24 hours.
  • Meanwhile, place sliced peppers and onions in a medium bowl. Toss with remaining tablespoon of oil and remaining fajita seasoning. Season with salt and pepper, to taste.
  • Preheat grill to medium-high heat. Tear off 6-8 large sheets of aluminum foil. Spray each sheet with non-stick cooking spray. Dived flank steak, peppers and onions evenly between foil sheets. Seal foil tightly around fajita mixture.
  • Grill for 6-8 minutes per side, or until peppers are tender and steak is cooked to desired doneness.
  • Serve in flour tortillas with your choice of toppings.

Perfect for camping, these chicken fajitas are made easily in a foil pouch and grilled until smoky and charred!

1 lb chicken tenders (, sliced lengthwise into thin strips)
1 medium red or yellow onion (, peeled and sliced)
1 medium red bell pepper (, seeded and sliced)
1 poblano pepper (, seeded and sliced)
1/4 cup olive oil
lime slices (, optional)
1 Tbsp chili powder
1/2 Tbsp paprika
1 tsp sugar
1 tsp cornstarch
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp ground cumin
1/4 tsp black pepper
1/8 tsp cayenne pepper
1/2 tsp kosher salt
flour tortillas (soft taco sized)
sour cream or Mexican crema
guacamole
salsa
minced fresh cilantro or parsley

Steps:

  • Heat grill over MED HIGH heat. Lay out 4 large squares of aluminum foil. Heavy duty is best, or else use double layers of regular foil.
  • To a large mixing bowl, add chicken, onion, both peppers and olive oil. Toss together to coat. Add all seasoning ingredients and toss to coat well.
  • Add 1/4 of the chicken fajita mixture to half of the foil sheet and top with a slice of lime (if using). Fold the other half of the foil sheet over the top and carefully pinch the edges to seal it shut. Repeat with remaining fajitas mixture and foil sheets.
  • Place foil packets on prepared grill and cook over MED HIGH heat about 12-15 minutes, until chicken is cooked through.
  • Serve on tortillas and with desired toppings.

1 Tbsp. TACO BELL® Taco Seasoning Mix
4 small boneless skinless chicken breasts (1 lb.)
1 each green and red pepper, cut into strips
1/2 cup TACO BELL® Thick & Chunky Salsa
1/2 cup KRAFT Cheddar & Asadero Cheese Deliciously Paired for Tacos

Steps:

  • Heat oven to 400ºF.
  • Fold up all sides of each of 4 large sheets heavy-duty foil to form 1-inch rim; spray with cooking spray. Combine rice, hot water and taco seasoning mix; spoon evenly onto foil. Top with remaining ingredients.
  • Bring up foil sides; fold to make 4 packets. Place on rimmed baking sheet.
  • Bake 30 to 35 min. or until chicken is done (165ºF). Cool 5 min. Cut slits in foil to release steam before carefully opening packets.

1 1/2 cups hot water
1 tablespoon taco bell home originals taco seasoning mix
4 small boneless skinless chicken breast halves
1 green pepper, cut into strips
1 red pepper, cut into strips
1/2 cup Taco Bell Home Originals thick 'n chunky salsa
1 cup shredded mexican-style taco cheese

Steps:

  • Heat oven to 400. Fold up all sides of four 18 x 12" sheets of heavy duty foil to form 1" rim; spray foil with cooking spray. Combine rice, water and taco seasoning; spoon onto center of foil sheets. Top with remaining ingredients.
  • Bring foil sides up. Double fold top and ends to seal each package, leaving room for heat circulation inside. Place in 15 x 10 x 1" baking pan.
  • Bake 30-35 minutes or until chicken is cooked through (165 degrees). Let stand 5 minutes. Cut slits in foil to release steam before opening packages.

4 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
4 garlic cloves, chopped
4 tablespoons lime juice
1 1/2 lbs chicken, cubed
2 bell peppers, chopped (red, yellow or green)
2 onions, chopped
tortilla

Steps:

  • Mix chili powder, cumin, salt, garlic and lime juice.
  • Add chicken, bell pepper and onion.
  • Marinade 2 hours.
  • Place mixture in foil and seal (leaving some expansion and steam space).
  • Grill 10 - 15 minutes.
  • Serve with tortillas toppings.

1 lb boneless beef sirloin steak, cut into thin strips
1 medium green bell pepper, cut into 1/2-inch strips
1 medium red bell pepper, cut into 1/2-inch strips
1 medium yellow bell pepper, cut into 1/2-inch strips
1 medium onion, thinly sliced
1 package (1.25 oz) fajita seasoning mix
1/3 cup water
8 Old El Paso™ flour tortillas for soft tacos & fajitas (from 10.5-oz package)
3/4 cup Old El Paso™ Thick 'n Chunky salsa, if desired
3/4 cup sour cream, if desired

Steps:

  • Heat gas or charcoal grill. Cut 4 (20x18-inch) sheets of heavy-duty foil. In large bowl, mix beef, bell peppers, onion, seasoning mix and water.
  • Place 1/4 of beef mixture on center of each foil sheet. Bring up 2 sides of foil over beef mixture so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill over low heat. Cover grill; cook 13 to 18 minutes, rotating packets 1/2 turn after about 6 minutes, until beef is cooked to desired doneness and peppers are tender.
  • To serve, cut large X across top of each packet; carefully fold back foil to allow steam to escape. Serve beef mixture with tortillas, salsa and sour cream.
