This was one of my Mom's creations, she made it for parties, reunions, and all of our church affairs.

Number Of Ingredients 7

4 - egg whites
1 teaspoon(s) vanilla extract
1 cup(s) sugar
1 cup(s) nuts (ground)
35 - RITZ crackers
1 package(s) whipped topping, frozen
1 package(s) coconut, flaked (8 oz)

Steps:

  • Beat eggs whites until stiff peeks form, add sugar and vanilla beat until glossy.
  • Fold in nuts and crumbs. Spread on 10 x 14 cookie sheet pan (greased) Bake at 350°F for 25 minutes.
  • Cool. Top with large container or Whipped topping such as Cool Whip and top with 8oz bag of sweetened shredded coconut.
  • Cut into squares and serve

This three-ingredient recipe is delicious and so very easy due to the use of a cake mix and canned pineapple, and whipped cream dessert topping.

1 (16 ounce) package angel food cake mix
1 (20 ounce) can crushed pineapple with juice
1 (12 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch pan with vegetable oil spray.
  • In a large bowl, combine cake mix and pineapple (with juice). Mix until well blended.
  • Pour batter into prepared 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 25 minutes or until golden brown. Let cool.
  • Serve with whipped topping
