I have a Norwegian born DBIL. He really enjoys food but especially those native to his family history. I am posting recipes which are very similar to those that my sister cooks for him. I am especially choosing to post those dishes which I have personally enjoyed eating in their home. I am also posting these recipes because of ZWT 2010. Preparation time does not include the overnight soak of the yellow peas.

1 lb yellow peas
1 ham bone, with some meat left on it
1 cup onion, chopped
3 carrots, chopped
2 medium potatoes, chopped
1 tablespoon green onion, chopped
1 tablespoon minced garlic
2 bay leaves
1 teaspoon black pepper
1 teaspoon salt

Steps:

  • First, soak 1-pound whole or split peas in cold water overnight.
  • The peas will swell so make sure to more than cover them with water.
  • Rinse, drain, and pick over the peas before adding to soup pot along with ham bone with enough water to more than cover them.
  • Add the remaining ingredients.
  • Simmer covered for about 45 minutes on low to medium heat.
  • Check soup about every 15 minutes to make certain that it has enough water and also to stir to prevent burning.
  • Remove ham bone from pot.
  • Cut off the bone whatever meat still clings to it and add those pieces to the soup.
  • Serve.

Number Of Ingredients 7

1 pound dried, whole or split yellow peas (see note)
1 large onion, chopped, 1 1/2 to 2 cups
1 pound fresh bacon, in one piece
1 bunch fresh marjoram or thyme
Hot and sweet or hot mustard, to taste
Fine sea salt to taste
Freshly ground black pepper to taste

Steps:

  • Rinse the peas in a colander under cool running water. Put them in a large, nonreactive bowl and cover with water by 2 inches. Let soak uncovered in a cool place overnight.
  • Put the peas and soaking water into a heavy 6-to-8-quart pot. Add water to cover again by 2 inches. Bring to a boil over medium heat, and let boil two minutes. Skim off and discard any foam and skins that rise to the top.
  • Stir in the chopped onion. Cut the piece of bacon crosswise into two pieces, and add to the pot with 3 tablespoons fresh marjoram or thyme leaves, stripped of stems and chopped.
  • Let the soup boil gently for 40 to 90 minutes until it becomes very thick and buttery yellow. Whole peas will take longer and will be soft but still whole when cooked. Split peas will take a shorter time to cook and will almost disintegrate. If the soup becomes too thick, add more water.
  • Remove the pot from the heat. Remove the two pieces of bacon, and cut off and discard the rind. Cut the bacon crosswise into 1/2-inch slices. Reserve.
  • Stir the soup well, and season with 2 to 4 tablespoons mustard. Add salt, if necessary, and black pepper. Add more fresh thyme or marjoram if desired.
  • Serve with soup in shallow bowls with slices of bacon on the side. Pass additional mustard to stir into the soup. In Sweden, this soup, called artsoppa, is served with crisp rye bread covered with grated vasterbottem, a sharp, hard cheese. Aged cheddar and Parmigiano Reggiano are good substitutes.

Creamy yellow pea soup studded with bits of ham, carrots, celery, and thyme. There is nothing like this one on a cold day! I am a Canadian now living in the US. and cannot get Habitant® soup anymore, so I came up with this version. I think it is as good as the real thing, if not better, because it is homemade.

2 ½ cups yellow split peas
1 ham bone with some meat
4 carrots, diced
½ large Spanish onion, diced
5 stalks celery, diced
2 teaspoons dried thyme
1 bay leaf
2 tablespoons kosher salt
1 pinch ground black pepper, or to taste
8 cups water, or as needed

Steps:

  • Place split peas, ham bone, carrots, onion, celery, thyme, bay leaf, salt, and pepper into a large pot; pour in water. Bring mixture to a boil and skim off any foam with a spoon. Reduce heat; place a lid on the pot slightly ajar to allow some evaporation. Simmer, stirring occasionally, until peas are tender and soup is thick, about 3 hours.
  • Remove ham bone from soup; strip meat from ham bone, chop meat, and return it to the pot.

In Denmark it is usual to start with a plate of soup alone. Then, a second plateful of soup is eaten alternately with the meats ( you sip a little soup, eat a little meat and so on). Serve with a good sharp mustard, pickled beetroot, rye bread and sweet butter. So popular is this soup with all the Nordics that it is said that the King of Sweden eats it every Thursday. 1 lb dried split yellow peas
1 lb salt pork, in one large piece
1 large celery rib, cut in 1-inch pieces
3 leeks, white and green parts, washed thoroughly and cut in 1-inch pieces
3 medium carrots, peeled and cut in 1-inch pieces
3 medium potatoes, peeled and cut in 1-inch pieces
3 medium onions, thinly sliced
1/8 teaspoon thyme
1 lb Canadian bacon
1 1/2 lbs cocktail vienna sausages, drained

Steps:

  • Wash and drain peas.
  • Cover with cold water and soak overnight or according to package directions.
  • Drain and place in large kettle with 3 quarts water.
  • Slowly bring to a boil.
  • Cook, covered, over medium heat for 1 hour.
  • Skim off pea skins as they float to the top.
  • Add bacon or salt pork.
  • Cover soup and simmer over lowest possible heat for about 2 hours, stirring occasionally.
  • the peas should be of pureed consistency.
  • Add celeriac or celery, leeks, carrots, potatoes, onions, thyme and Canadian bacon to soup during last 45 minutes of cooking time.
  • Stir soup occasionally and check for desired consistency; if necessary, add a little hot water.
  • When ready to serve, remove bacon or salt pork and Canadian bacon to heated platter and slice.
  • Serve soup and sliced meats separately.
  • The meats may also be served cold, if desired.

1 pound bacon or salt pork, in one piece
1 celeriac, peeled, or 1 large stalk celery cut in 1" pieces
3 leeks, white and green parts, washed thoroughly and cut in 1" pieces
3 medium carrots, peeled and cut in 1" pieces
3 medium potatoes, peeled and cut in 1" pieces
3 medium onions, thinly sliced
1/8 teaspoon thyme
1 pound Danish Canadian-style bacon (pork loin) or Canadian bacon
1 1/2-pound can cocktail Vienna sausage, drained

Steps:

  • Wash and drain peas. Cover with cold water and soak overnight or according to package directions. Drain and place in large kettle with 3 quarts water. Slowly bring to a boil. Cooked covered over medium heat for 1 hour. Skim off pea skins as they float to the top. Add bacon or salt pork. ( If pork is very salty, soak in cold water for 30 minutes, drain and pat dry.) Cover soup and simmer over lowest possible heat for about 2 hours, stirring occasionally. the peas should be of puréed consistency. Add celeriac or celery, leeks, carrots, potatoes, onions, thyme and Canadian bacon to soup during last 45 minutes of cooking time. My Mother-inlaw who passed away in 2009 from cancer left me her family recipes, my husband said I out did her, that it is stupendous!

1 16oz package(s) yellow peas (soaked in water over night)
2 large turnips peeled and diced
2 large red onions peeled and diced
3 large carrots diced
6 medium russet potatoes peeled and diced
1 pound(s) diced ham (any kind will do)
- salt to taste

Steps:

  • Drain Peas from water. In a large stock pot add 8 cups water, the Peas, The Ham, all your chopped up veggies, and I used about 3Tbs of Sea Salt, but you use whatever is desired.
  • Bring to a boil, then reduce heat to simmer, let simmer 8 hours, stirring about every half hour.(I started ours at 8:00am so we could eat dinner about 4:00pm).
  • Serve with a light salad and some hot bread. Some people like to add some spicy mustard to the soup.

1 pound Newfoundland style salt beef
2 cups yellow split peas
10 cups water
3 carrots, chopped
½ turnip, peeled and cut into 1/2-inch pieces
½ teaspoon ground black pepper

Steps:

  • Place the beef into a container and cover with water. Soak overnight in the refrigerator to remove excess salt. Drain, rinse, and cut into small cubes before using.
  • Bring the cubed beef, peas, and water to a boil in a large pot over high heat. Reduce heat to medium-low, cover, and simmer until the peas have softened and mostly dissolved, about 30 minutes. Stir or whisk frequently to help the peas dissolve, and to keep the soup from burning on the bottom of the pot. Stir in the carrots, turnips, and black pepper, continue simmering until the vegetables have softened, about 15 minutes more.
