Yield 6 to 8 servings

Number Of Ingredients 7

2 1/2 cups oatmeal
2 cups buttermilk
2 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
Flour for dusting
1/2 teaspoon butter

Steps:

  • In a mini-food processor, fitted with a metal blade, pulse the oatmeal until the meal is very fine. Remove from the processor and turn into a mixing bowl. Stir the buttermilk into the oats and cover with plastic wrap. Let the oatmeal steep in the buttermilk for 12 hours.

FABULOUS HOMEMADE BREAD FOR THE FOOD PROCESSOR

Fabulous Homemade Bread For the Food Processor image

Best homemade bread -- 2 loaves in about 3 hours! This is a variation of Allrecipes' Fabulous Homemade Bread by J. Drury to allow mixing in a food processor for only 2 loaves.

Provided by George R. Kasica

Categories     Bread     Yeast Bread Recipes     Whole Grain Bread Recipes     Wheat Bread

Time 3h10m

Yield 12

Number Of Ingredients 10

1 ½ cups warm water (100 to 110 degrees F/40 to 45 degrees C)
4 teaspoons bread flour
1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
3 ⅓ cups bread flour
⅔ cup quick cooking oats
⅔ cup whole wheat flour
1 ½ teaspoons salt
3 ½ tablespoons brown sugar
3 ½ tablespoons vegetable oil

Steps:

  • Pour the warm water into a large bowl, and whisk in 4 teaspoons of bread flour, the yeast, and the white sugar until thoroughly combined and the sugar has dissolved. Allow to stand until the yeast starts to form creamy bubbles, about 5 minutes.
  • Fit a dough blade into a large food processor, and place 3 1/2 cups of bread flour, the oats, whole wheat flour, salt, brown sugar, and vegetable oil into the work bowl. Start the food processor running, and slowly add enough of the water-yeast mixture to allow the dough to form a firm ball and pull away from the sides of the processor, about 1 minute. Process for another 30 seconds to knead.
  • Place the dough into an oiled bowl, and turn to coat the dough with oil. Cover with a damp cloth, and allow the dough to rise until doubled, about 1 hour. Punch down the dough, and divide into 2 equal-sized pieces. Form each piece into a loaf; pinch the seams and ends closed.
  • Grease 2 4x8-inch loaf pans, and place the loaves into the pans with the seam sides down. Allow to rise until the dough is 1 inch above the rim of the pans, about 1 more hour.
  • While dough is rising, preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until the tops are browned, about 35 minutes. Allow bread to cool in pans for 10 minutes, then turn out onto cooling racks to finish cooling.

OUTSTANDING OATMEAL BREAD FOR BREAD MACHINE

Outstanding Oatmeal Bread for Bread Machine image

Really really good bread right out of you bread machine.Crunchy!!! I have been using the bread machine and baking it in the oven with great success. Try 1/2 white and 1/2 whole wheat flour for and even better flavour.

Provided by Sageca

Categories     Breads

Time 1h10m

Yield 8 serving(s)

Number Of Ingredients 8

1 1/4 cups water
3 cups white bread flour
1 1/2 tablespoons dry milk
1 1/2 teaspoons salt
2 tablespoons butter
2 tablespoons honey
1/2 cup rolled oats
3 teaspoons active dry yeast

Steps:

  • Add the water, butter, honey in the bread machine.
  • Add dry milk, salt and flour.
  • Add yeast in a groove on top of the flour.
  • You can make the bread on the White bread cycle or on the Dough cycle.
  • When the Beep comes on; add Oatmeal.
  • If you chose the dough cycle remove and shape into one loaf or 2 smaller ones.
  • Sprinkle a bit of oatmeal on top.
  • Preheat oven 375*.
  • Let rise app 40 minutes.
  • Lower heat to 350* and bake at app 30 minutes.
  • Optional; use 1/2 whole wheat flour.
  • SUCCESS HINTS: For added texture, add the oats after the first knead or at the beep on the fruit and nut cycle.
  • For additional crunch, sprinkle a few oats on top of the loaf after the final rise.
  • When you are baking it in the machine and you see it rising to the top while it is baking, use a needle to make a few tiny holes to punch it slowly down and it avoids having it ruin the top of the bread.
  • Instant oatmeal doesn't work, but quick-cooking oats do.

OATMEAL WHOLE WHEAT QUICK BREAD

Oatmeal Whole Wheat Quick Bread image

I found this on AllRecipes, posted by Zoe. She says "There's no yeast in this bread, so it's good for special diets. You may also use soy milk instead of regular milk if you wish. It's pretty dense, but great when fresh from the oven. Especially with butter and honey on cold mornings!" I have personally made this a number of times as a quick accompaniment to warm soup. The original recipe calls for an oven temp of 450, but I find this gets too brown if I go that high. Also, I have made this as both a rustic round loaf and in a loaf pan. When I want to make a round loaf I put it on a cookie sheet. It does flatten a bit while cooking, though, so if I want slices instead of wedges I will put it in a loaf pan and tent w/ foil to avoid burning the crust. Yes, the dough will be more like a batter than a traditional bread dough, but I promise it will come out as bread!
