ROAST PORK SHOULDER SANDWICHES WITH FENNEL SLAW

Roast Pork Shoulder Sandwiches with Fennel Slaw image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 2h50m

Yield 4 servings with plenty of leftovers

Number Of Ingredients 15

3 1/2 to 4-pound boneless pork shoulder
Coarse black pepper
Sea salt
1 bulb garlic, chopped
5 to 6 sprigs fresh rosemary, stripped and finely chopped
2 tablespoons fennel seeds
EVOO, for liberal drizzling, plus about 1/4 cup
4 medium onions, cut into thin wedges
1 cup dry white wine
1 round tablespoon superfine sugar
1/2 lemon, juiced
2 tablespoons white balsamic or white wine vinegar
8 ounces cabbage, very thinly sliced or sliced on a mandoline
1 bulb fennel, very thinly sliced or sliced on a mandolin, plus a handful of fronds
4 ciabatta or other crusty sandwich/sub rolls (wrap in plastic if you are not serving that day, then crisp in oven to use)

Steps:

  • Preheat the oven to 375 degrees F.
  • Have the butcher butterfly the meat for you or take a very sharp knife and split the shoulder open and across the meat, opening the shoulder like a book, 1 to 1 1/2 inches thick. Heavily sprinkle the meat with lots of pepper and sea salt, garlic, rosemary and fennel seeds. Roll the meat up and tie with twine. Slather with EVOO and sprinkle with salt and pepper. Dress the onions with EVOO, salt and pepper and scatter across a baking pan. Set the meat on top and roast 1 hour.
  • Douse the pan with the wine and return to the oven. Roast another 1 to 1 1/2 hours to 145 to 150 degrees F internal temperature. Let stand 15 minutes, and then slice and serve. Or, cool to room temp, cover and store. To serve after storing, slice 1-inch thick pieces and reheat in shallow pan of warm chicken stock to heat through.
  • While the meat cooks, combine the sugar, lemon juice, vinegar, salt and pepper and about 1/4 cup EVOO. Toss the cabbage and fennel and fronds in the dressing.
  • To serve, slice the meat, pile on rolls with warm onions and cold fennel slaw on top.

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 11

1 1/2 pounds pork tenderloin (1 large or 2 small), trimmed
1 1/2 teaspoons chopped fresh thyme
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 large fennel bulb, cut into wedges
4 cloves garlic, thinly sliced
1 pound small red-skinned potatoes, quartered
1/4 cup dry white wine
1/4 cup low-sodium chicken broth
1/2 cup heavy cream
2 tablespoons roughly chopped fresh parsley

Steps:

  • Preheat the oven to 425 degrees F. Halve the pork tenderloin crosswise; sprinkle with 1 teaspoon thyme and 1/2 teaspoon each salt and pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the pork and cook, turning, until browned, about 5 minutes. Transfer to a roasting pan; roast until a meat thermometer inserted into the thickest part of the pork registers 140 degrees F, 12 to 15 minutes.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a large saucepan over medium heat. Add the fennel, garlic, potatoes, wine and 1 cup water; season with salt and pepper. Stir, then cover and cook, stirring occasionally, until the potatoes are almost tender, 15 minutes.
  • Uncover and cook until the potatoes are tender, about 10 minutes. Add the broth and the remaining 1/2 teaspoon thyme. Simmer until slightly reduced, 1 minute. Add the cream; increase the heat and gently boil until slightly thickened, about 1 more minute. Season with salt and pepper. Slice the pork and serve with the vegetables and sauce. Top with parsley.

ROASTED PORK, FENNEL, AND ONIONS

Roasted Pork, Fennel, and Onions image

Great for big feasts! Olive oil can be substituted for butter, if you'd rather eat olive oil than butter.

Provided by Christine L.

Categories     Meat and Poultry Recipes     Pork

Time 1h50m

Yield 10

Number Of Ingredients 12

2 tablespoons butter
1 cup fresh sage
1 ½ tablespoons freshly ground black pepper
2 teaspoons freshly ground cumin seed
1 (3 pound) boneless pork loin roast - trimmed, rolled, and tied
2 tablespoons olive oil
3 bulbs fennel, trimmed, tops reserved
1 ½ cups orange juice
4 red onions with peel, halved
½ cup chicken stock
1 tablespoon balsamic vinegar
salt to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt butter in a skillet over medium-high heat. Add 1/2 cup sage. Cook and stir until leaves are slightly crisp, about 1 minute. Remove leaves with a slotted spoon, and drain on paper towels. Cool, wrap in paper towels, and seal in a plastic bag. Set aside. Reserve the butter.
  • Mix the pepper and cumin in a small bowl. Rinse roast and pat dry; rub evenly with the pepper and cumin. Tuck remaining 1/2 cup sage leaves under the strings on the smooth (fattiest) side of the roast. Set the pork, herb side up, on a rack in a roasting pan.
  • Spread olive oil in the bottom of a medium baking dish. Thickly slice fennel and place in the dish. Toss to coat with the olive oil, and drizzle with 3/4 cup orange juice. Place onions in the dish cut side down.
  • Place roast on the center rack in the preheated oven. Place fennel and onions on lower rack. Bake the pork and vegetables 1 hour, or until pork reaches a minimum internal temperature of 145 degrees F (63 degrees C) and vegetables are tender. Turn fennel once during bake time. Reserving drippings, transfer meat to a platter and keep warm; let stand at least 10 minutes. Keep the vegetables warm in the baking dish.
  • Place the roasting pan with reserved drippings over high heat on the stove top, and mix in the reserved butter from Step 1, the remaining 3/4 cup orange juice, stock, and vinegar. Bring to a boil, and stir to scrape up any browned bits in the pan. Cook, stirring often, 10 minutes, or until reduced by about 1/2.
  • Arrange onions and fennel around the pork. Garnish with fennel tops, sprinkle with the fried sage leaves, and season with salt to serve.

PORK AND FENNEL SAUSAGE ROLLS

Pork and Fennel Sausage Rolls image

In this Australian lunchtime staple, fennel- and herb-spiked ground meat makes a heady filling for crisp and buttery puff pastry. The original recipe, created by Paul Allam from Bourke Street Bakery, calls for ground pork. But ground chicken, turkey or plant-based meat will also work. These are best served while still warm from the oven, but they're nearly as delicious at room temperature. Store any leftovers in the refrigerator and reheat before serving.

Provided by Melissa Clark

Categories     dinner, lunch, finger foods, meat, main course

Time 1h30m

Yield 4 sausage rolls

Number Of Ingredients 13

2 tablespoons extra-virgin olive oil
2 fat garlic cloves, finely grated or minced
1 tablespoon fennel seeds, plus more for finishing
3 thyme sprigs, leaves separated chopped
1 small red, yellow or white onion, diced
1/2 cup diced celery
1/2 cup diced carrots
1 1/4 teaspoons kosher salt, plus more as needed
1 pound lean ground pork (or chicken, turkey, or plant-based meat)
1/4 cup bread crumbs
1/2 teaspoon freshly ground black pepper
1 (14- to 16-ounce) package frozen puff pastry, thawed but still cold
1 egg, beaten, for egg wash

Steps:

  • Heat oven to 375 degrees and line rimmed baking sheet with parchment paper.
  • In a large skillet, heat olive oil over medium. Add garlic and cook for 30 seconds. Stir in 1 teaspoon fennel seeds and chopped thyme, and cook for another minute or until fragrant.
  • Add onion and celery and cook until onions soften, about 5 minutes. Add carrots and a large pinch of salt and cook until vegetables are tender, about 20 minutes. Transfer to a large mixing bowl and set aside to cool.
  • Once vegetables have cooled, add ground pork, bread crumbs, 1 1/4 teaspoons salt and 1/2 teaspoon pepper. Using your hands, mix thoroughly until well combined.
  • Roll the chilled puff pastry dough to about 1/8-inch thick. Cut pastry into four equal rectangles. In the center of each pastry, dollop a quarter of the pork mixture, then form it into a long sausage running lengthwise on the pastry strip. Lightly brush one long edge of the pastry with egg wash. Starting with the side without the egg wash, firmly fold the pastry over the meat filling to form long rolls, pinching to seal. Place on prepared baking sheet, seam-sides down.
  • Lightly brush the top of each roll with egg wash and sprinkle with fennel seeds. Bake until sausage rolls are golden brown, about 35 to 40 minutes. Serve warm or at room temperature.

CROWN ROAST OF PORK WITH FENNEL AND LEMON

Crown Roast of Pork with Fennel and Lemon image

Provided by Melissa Clark

Categories     dinner, main course

Time 20m

Yield 10 to 12 servings

Number Of Ingredients 10

1 1/2 teaspoons fennel seeds
Rosemary leaves from 2 bushy sprigs
5 garlic cloves, coarsely chopped
1/4 cup sage leaves and tender sprigs
Finely grated zest of 1 lemon
1 teaspoon fennel pollen (optional)
1 tablespoon plus 1 pinch coarse kosher salt
5 tablespoons extra-virgin olive oil
1 8- to 9-pound crown roast of pork (10 to 12 ribs)
1 teaspoon cracked black pepper

Steps:

  • In small skillet, toast fennel seeds until fragrant, 1 to 2 minutes.
  • Place toasted fennel seeds, rosemary, garlic, sage, lemon zest, fennel pollen (if using) and pinch of salt in blender. Run blender briefly to chop everything up, then add olive oil, and blend until mixture becomes a paste, scraping down sides occasionally with a rubber spatula.
  • Wipe pork with paper towels, then season evenly with remaining tablespoon salt and the pepper. Smear herb paste all over meat, making sure to coat the middle and the crevices on the sides of the chops. Let marinate at room temperature for at least 2 hours, or longer in refrigerator. (Overnight is ideal.) If you've chilled the meat, bring to room temperature for at least an hour before roasting.
  • Heat oven to 450 degrees. Place roast upside down (bones down) in large roasting pan. (You can use a rack to help steady it if you like.) Roast for 20 minutes, then turn heat down to 350 and continue roasting until meat registers 145 degrees on an instant-read thermometer, about 1 1/2 to 2 hours longer. Let rest 10 minutes before carving.
