FREEZER FRENCH TOAST
I don't care for prepackaged frozen French toast, but I rarely have time in the mornings to prepare it from scratch. Then my friend gave me this wonderful recipe. I keep a freezer full of these slices and simply pop them into the oven for a homemade breakfast in no time.

Steps:
- In a large bowl, beat eggs, milk, sugar, vanilla and nutmeg. Place bread in a well-greased 13-in. x 9-in. baking dish. Pour egg mixture over bread. Let soak for several minutes, turning once to coat. Freeze until firm. Package in airtight containers. , To bake, place bread on a well-greased baking sheet. Dot with butter. Bake at 450° for 7 minutes; turn and bake 10-12 minutes longer or until golden brown.

These muffins are delicious! The cinnamon sugar topping flavors them perfectly. This is my 10 year old brother's favorite recipe (he even makes them on his own from time to time).

- Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
- In a medium mixing bowl, stir together flour, 1/2 cup sugar, baking powder, nutmeg and salt. Make a well in the center of the mixture. Stir together egg, milk and 1/3 cup melted butter. Add egg mixture to flour mixture; stir until just moistened (batter may be lumpy). Spoon batter into prepared muffin cups.
- Bake in preheated oven for 20 to 25 minutes. Meanwhile, combine 1/4 cup sugar, cinnamon When muffins are finished baking, dip tops of muffins in the melted butter, and then in the cinnamon sugar mixture. Serve warm.

Steps:
- Heat oven to 350ºF.
- Combine flour, dry pudding mix, baking powder, salt and 1 tsp. cinnamon in large bowl.
- Beat 1 egg, 1/4 cup milk, 2 Tbsp. sugar and remaining cinnamon in medium bowl with whisk until blended. Add bread; stir until evenly moistened.
- Whisk remaining egg in separate medium bowl. Add butter, remaining milk and sugar; mix well. Add to dry ingredients; stir just until moistened. (Batter will be lumpy.)
- Spoon batter into 12 muffin pan cups sprayed with cooking spray. Top with bread mixture; press lightly into batter with back of spoon.
- Bake 28 min. or until toothpick inserted in centers comes out clean. Brush with syrup. Cool in pan 5 min. Remove to wire rack; cool slightly.

I never liked French toast, but these sticks are the best. No need to have syrup or anything, they are good as-is.

- Mix eggs, powdered sugar, milk, maple syrup, brown sugar, and cinnamon together in a bowl with a fork until well blended. Dip each bread stick into the egg mixture.
- Coat a skillet with nonstick spray and heat over medium heat. Place sticks in the hot skillet and cook until brown, 2 to 3 minutes; turn over and cook until browned on other side, 2 to 3 minutes more. Repeat with the second batch.

FREEZER-PREP FRENCH TOAST STICKS RECIPE BY TASTY

Steps:
- Preheat oven to 350°F (180˚C).
- Spray a large baking sheet with cooking spray.
- Stack and slice the Texas toast into thirds.
- In a large bowl, whisk together eggs, milk, butter, vanilla, cinnamon, salt, and sugar.
- Dunk each strip of bread into the mixture, allow the excess to drip off, then place on prepared baking sheet. Repeat with remaining strips.
- Bake for 15-20 minutes, flipping halfway.
- Remove from oven and serve.
- NOTE: To freeze, let the sticks cool slightly and transfer baking sheet to freezer. Once frozen, after 1-2 hours, transfer to a freezer bag for easy storage.
- To reheat, preheat oven to 350°F (180˚C) and bake for 10-15 minutes until heated through. OR transfer frozen sticks to a plate and microwave 45-60 seconds.

FREEZER FRENCH - TOASTED MUFFINS
I received this recipe from a cousin, and thought they were very good. Handy to have on hand when you have company. These muffins can be made ahead of time, and stored in freezer until ready to use.

Steps:
- In a small bowl, mix eggs, milk, sugar and vanilla until blended.
- Split muffins in half, and place on a 17x11x1 inch rimmed, greased baking sheet.
- Slowly pour egg mixture over muffins, turning to coat both sides. Let stand 5 minutes or until all liquid is absorbed.
- Place muffins in freezer (on baking sheet) uncovered until frozen. Place frozen muffins in zip lock bag, and return to freezer until ready to use.
- To serve muffins; preheat oven to 425 degrees.
- Grease rimmed baking sheet. Brush each side of muffin with melted butter or margarine.
- Place on baking sheet - cut - side down.
- Bake 10 minutes, turn slices over. Bake 5 minutes longer, or until golden brown and toasted.
- Serve with maple syrup, jam or honey if desired.
