1 pound fresh green beans washed and trimmed
3 Tablespoons unsalted butter (or olive oil)
1/2 cup sliced almonds (toasted option)
2 cloves garlic minced
2 teaspoons lemon juice
salt and fresh cracked pepper to taste
1/2 cup water

Steps:

  • Melt butter in 12 inch skillet over medium to medium high heat, add the garlic to skillet and cook until slightly softened. Add green beans, lemon and water. Cover and cook, tossing occasionally until green beans are crisp-tender (about 5-7 minutes). Season with salt and pepper and top with almonds.

1 pound fresh green beans or frozen French-cut green beans
Salt
1 to 2 tablespoons unsalted butter
1/4 cup slivered almonds (2-ounce package)
1/2 lemon, juiced
Ground black pepper
1 can fried onions

Steps:

  • Bring 1 inch of water to a boil in a high-sided saute pan. If using fresh beans, cut them lengthwise while you wait for the water to boil.
  • Add salt and green beans to boiling water and cook until just tender. Drain beans and rinse under cold water to stop the cooking. Return the skillet to medium heat and add the butter. When butter is melted, add the almonds and cook until golden brown.
  • Return the green beans to the pan, along with the juice of 1/2 a lemon, add salt and pepper, to taste. When warmed through, top with fried onions.

½ teaspoon sea salt

⅔ cup dried cranberries
1 (4-ounce) log goat cheese, crumbled
Optional: ¼ cup almonds and/or cooked bacon (crumbled)

Steps:

  • Bring a large pot of salted water to a boil.
  • Add green beans and cook until just tender, 3 to 4 minutes.
  • Drain well and transfer to a large bowl.
  • Toss with oil, vinegar, salt and pepper and transfer to a large platter.
  • Scatter cranberries, goat cheese and almonds over the top and serve warm.

French-style green beans (which is NOT the same as French green beans!) are great for salads: they are slightly sweeter than "normal" green beans, and because they are so flat they are easy to blanch quickly without losing any of the goodness. This recipe is great for picknicks -- bring the cheese separately and add to the salad just before serving. If you want to add some colour, add a finely cut tomato.

250 g French style green beans, uncut
100 g black olives
2 tablespoons olive oil
1/2 lemon
salt
fresh cracked black pepper
50 g fresh goat's cheese

Steps:

  • Juice the lemon. Cut the beans diagonally into broad diamond shapes (any shape will do, but this just looks pretty). Blanch them in boiling water in circa 2 mins and immediately rinse in cold water. Cut the olives into chunks. Mix beans, olives, oil, and lemon juice, and add salt and pepper to taste.
  • Crumble the cheese over the salad.

1 TBSP butter
1 TBSP Extra Virgin Olive Oil
16 oz Fresh French Green Beans, rinsed
1 shallot, sliced
1 TBSP balsamic vinegar
1 tsp garlic powder
1/4 tsp kosher salt (or to taste)
1/4 tsp ground pepper (or to taste)
1/4 cup low sodium vegetable broth, divided
1/4 cup toasted almonds (recipe below)

Steps:

  • In a large saute pan (I used an iron skillet) warm butter and olive oil over medium heat, just until butter is melted.
  • Add green beans and sliced shallots.
  • Next, add balsamic vinegar and seasonings.
  • Toss green beans with tongs until all seasonings are evenly distributed.
  • Adjust heat as needed from medium to medium low and saute for 5-7 minutes.
  • Add 2 TBSP of broth and toss green beans.
  • Cover and cook until desired tenderness is reached, tossing and adding broth as needed to ensure the green beans do not scorch.
  • Once done place green beans in a serving dish and garnish with toasted almonds.

Juice from 1 large POM Wonderful Pomegranate,* or 1/3 cup POM Wonderful 100% Pomegranate Juice
1/3 cup arils from 1 large POM Wonderful Pomegranate
1-2 tablespoons olive or vegetable oil
1 1/4 pounds fresh green beans, stems removed and cut on the bias into 1-inch pieces (6 cups)
1 teaspoon grated lemon or orange peel
1/2 cup sliced or slivered almonds
Salt and pepper to taste
4 ounces sliced goat cheese

Steps:

  • 1. Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate underwater to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/3 cup of arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) 2. Prepare fresh pomegranate juice.* 3. Place oil in a wok or large skillet and heat until hot. Stir-fry the beans with the lemon peel for 6 minutes. 4. Add the almonds and stir-fry for 1-2 minutes or until beans are crisp-tender. Remove from heat. 5. Season to taste with salt and pepper. 6. Toss beans with reserved pomegranate arils and pomegranate juice; turn onto a serving platter. 7. Arrange goat cheese slices over the top and serve. *For 1 cup of juice, cut 2-3 large POM Wonderful Pomegranates in half and juice them with a citrus reamer or juicer. Pour mixture through a cheesecloth-lined strainer or sieve. Set the juice aside.
