- Melt butter in 12 inch skillet over medium to medium high heat, add the garlic to skillet and cook until slightly softened. Add green beans, lemon and water. Cover and cook, tossing occasionally until green beans are crisp-tender (about 5-7 minutes). Season with salt and pepper and top with almonds.

- Bring 1 inch of water to a boil in a high-sided saute pan. If using fresh beans, cut them lengthwise while you wait for the water to boil.
- Add salt and green beans to boiling water and cook until just tender. Drain beans and rinse under cold water to stop the cooking. Return the skillet to medium heat and add the butter. When butter is melted, add the almonds and cook until golden brown.
- Return the green beans to the pan, along with the juice of 1/2 a lemon, add salt and pepper, to taste. When warmed through, top with fried onions.

- Juice the lemon. Cut the beans diagonally into broad diamond shapes (any shape will do, but this just looks pretty). Blanch them in boiling water in circa 2 mins and immediately rinse in cold water. Cut the olives into chunks. Mix beans, olives, oil, and lemon juice, and add salt and pepper to taste.
- Crumble the cheese over the salad.

- In a large saute pan (I used an iron skillet) warm butter and olive oil over medium heat, just until butter is melted.
- Add green beans and sliced shallots.
- Next, add balsamic vinegar and seasonings.
- Toss green beans with tongs until all seasonings are evenly distributed.
- Adjust heat as needed from medium to medium low and saute for 5-7 minutes.
- Add 2 TBSP of broth and toss green beans.
- Cover and cook until desired tenderness is reached, tossing and adding broth as needed to ensure the green beans do not scorch.
- Once done place green beans in a serving dish and garnish with toasted almonds.

- 1. Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate underwater to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/3 cup of arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) 2. Prepare fresh pomegranate juice.* 3. Place oil in a wok or large skillet and heat until hot. Stir-fry the beans with the lemon peel for 6 minutes. 4. Add the almonds and stir-fry for 1-2 minutes or until beans are crisp-tender. Remove from heat. 5. Season to taste with salt and pepper. 6.
