2 tablespoons coarsely chopped fresh tarragon leaves
2 tablespoons coarsely chopped chives
Ultimate Roast Chicken or Best Last-Minute Roast Chicken

Steps:

  • Combine herbs; set half aside. In step 2, distribute half the chopped herbs in chicken pockets. When chicken comes out of the oven, brush with a small amount of pan juices, then scatter remaining herbs over it.

Steps:

  • Combine the tarragon, chervil, chives, and parsley in a small bowl.
  • Add this fresh fines herbes mixture at the end of the cooking process to preserve the flavor of the herbs.
  • Combine the dried tarragon, chervil, chives, and parsley in a glass jar and seal tightly.
  • Store in a cool, dark place up to 4 months.
  • When using a dried fines herbes, add the mixture toward the beginning of cooking time to give the herbs a chance to mellow.

2 tablespoons minced fresh parsley
2 tablespoons minced fresh oregano
1-1/2 teaspoons minced fresh rosemary
1-1/2 teaspoon minced fresh thyme
2 garlic cloves, minced
1 teaspoon salt
1/4 to 1/2 teaspoon pepper
Cayenne pepper to taste, optional

Steps:

  • In a small bowl, combine all ingredients. Rub over chicken, salmon steaks (about 1 tablespoon for each serving) or sprinkle over lightly oiled vegetables (such as summer squash, onions and sweet red peppers). Cover and refrigerate for 30 minutes. Grill or broil as desired.
