1 clove garlic (minced)
5 Tablespoon olive oil
2 Tablespoon apple cider vinegar

Steps:

  • Peel and shred carrots using the large shredding holes on a grater. Add minced garlic to the carrots.
  • Mix all salad dressing ingredients in a small bowl and stir until well combined. Pour dressing over the salad and toss everything. Add more salt and pepper if necessary.
  • Top with chopped fresh parsley and serve cold. If you have time, you can let it sit in the fridge for 1 hour to let all the flavors meld.

2 tablespoons finely snipped chives or chopped green onion
2 tablespoons finely chopped fresh parsley
Optional: 1 can (15 ounces) chickpeas, rinsed and drained, or 1 1/2 cups cooked chickpeas
2 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
2 teaspoons honey
1 teaspoon Dijon mustard
1/2 teaspoon ground cumin
1/4 teaspoon fine sea salt

Steps:

  • To prepare the carrots: You can grate them on the large holes of a box grater, or use short strokes with a julienne peeler, or process them in a food processor fitted with a grating attachment. You'll end up with about 3 cups grated carrots.
  • Place the carrots in a medium serving bowl. Add the chives, parsley and optional chickpeas to the bowl.
  • To make the dressing, whisk all of the ingredients together in a small bowl until completely blended.
  • Pour the dressing over the carrot mixture and stir until the mixture is evenly coated in dressing. For best flavor, allow the salad to marinate for 20 minutes before serving. Toss again before serving. This salad keeps well in the refrigerator, covered, for about 4 days.

1 Tablespoon prepared Dijon mustard

Steps:

  • Prepare your carrots. If they are garden fresh organic, cut off greens and ends. Wash and scrub to get rid of mud. If you use store bought, peel if you don't know where they came from (because of pesticides).
  • Place carrots into food processor to shred or use a grater to do that manually.
  • Prepare the Dressing by combining vinegar, mustard, salt and black pepper in a small bottle or salad shaker. Then add oil at the end and shake again.

The key to its success is lying the carrots on their sides and using the thinnest shredding blade your food processor has. The carrots are then flavored with fresh parsley, and the simple dressing consists of lemon juice, Dijon mustard, olive oil, salt, and pepper. Pour the dressing over the shredded carrots, toss to combine, and let it hang out on the counter until it's ready to serve. The best part is the longer the salad sits, the more time the ingredients can meld together, though we suggest going for no longer than 3 hours.

1 tablespoon orange blossom water (available at most Asian stores)

When combined with beets and celery root, this is called the Parisian salad, and served at most bistrots. And so good for you. Russians do finely grated carrot salads too, and Moroccans.
