- Grease bottom and sides of 13x9-inch (3-quart) glass baking dish with butter. In large bowl, beat flour, milk, 1/4 cup sugar, the vanilla, salt and eggs with wire whisk until smooth. Stir in bread and 1 1/2 cups berries. Spoon into baking dish. Cover tightly and refrigerate at least 1 hour but no longer than 24 hours.
- Heat oven to 400°F. Uncover bread mixture. Bake 25 to 35 minutes or until golden brown and knife inserted in center comes out clean.
- Meanwhile, in 1 1/2-quart saucepan, stir together 1/2 cup sugar and the cornstarch. Stir in orange juice until smooth. Stir in 1 cup berries; heat to boiling over medium heat, stirring constantly. Cook about 4 minutes, stirring constantly, until slightly thickened; remove from heat. Just before serving, stir in strawberry halves. Serve warm over French toast bake.

- Butter the bottom and sides of a 9-by-13-inch baking dish. Slice the bread into 3/4- to 1-inch-thick slices. Tile the bread in the dish, overlapping the slices. Scatter the berries over the bread, letting some fall to the bottom of the dish.
- Whisk the milk, granulated sugar, cream, vanilla and almond extracts, eggs and 1/4 teaspoon salt in a medium bowl until the sugar is dissolved. Pour over the bread and berries and press gently on the bread to immerse in the egg mixture. Melt the butter and drizzle over the top of the casserole. - Whisk together first 6 ingredients. Place bread cubes in a 13x9-in. or 3-quart baking dish coated with cooking spray. Pour egg mixture over top. Refrigerate, covered, 8 hours or overnight., Preheat oven to 350°. Remove berries from freezer and French toast from refrigerator and let stand while oven heats. Bake, covered, 30 minutes., In a small bowl, cut butter into brown sugar until crumbly. Top French toast with berries; sprinkle with brown sugar mixture. Oven-baked French toast with mixed berry sauce is inexpensive to prepare and is impressive enough for company, yet simple enough to make for a Sunday brunch with family. The easy-to-make-sauce uses inexpensive frozen mixed berries, but the recipe is flexible. An equal amount of any frozen berries can be substituted. The sauce will keep, in an airtight container, for up to a week.

- Heat oven to 375F Lightly coat a 9x13 baking dish with cookng spray.
- Arrange enough whole bread slices in a single layer to cover bottom of dish. Cut remaining slices in half on diagonal and arrange in overlapping rows on top. You should have 3 rows of bread triangles. Set aside.
- In a medium bowl, whisk together sugar, cinnamon, baking powder and nutmeg. Whisk in eggs and vanilla until well-blended. Gradually whisk in milk.
- Slowly and evenly pour egg mixture over bread slices and let soak for 5 minutes. Use a fork or spatula to gently press down on bread to ensure it is evenly soaked.
- Baked for 30-40 minutes or until French toast is puffed. Sprinkle top of French toast with sugar, then set oven to broil. Broil French toast until sugar is melted and bread is lightly browned.
- BERRY SAUCE:.
- While French toast bakes, in a small bowl, combine lemon juice and cornstarch. Set aside.
- In a medium saucepan, combine berries, sugar, water and salt. Bring to a simmer and stir in lemon juice mixture. Simmer, stirring often, until sauce thickens slightly about 2 minutes longer. Let cool.
- When French toast is done baking, serve immediately topped with mixed berry sauce.

This is a warm French toast dish my step-mom made once years ago, and my kids have never stopped asking for it. Now they are making it for their kids! VERRY BERRY FRENCH TOAST
The main portion of this recipe was found in the June/July 1996 issue of Taste of Home. I had made it three different ways before everyone in the family was happy with it. I have posted the recipe the way we like it, except i always double the syrup recipe (which can be made ahead, refrigerated and reheated). The original recipe called only for blueberries and a choice of using either honey OR maple syrup in the french toast. The French toast recipe goes together in about 20 minutes and then refrigerates for 8 hours or overnight. It makes for an easy morning when put together the night before.

- Coat a 9x13-inch pan with cooking spray. Layer 1/2 of the bread in the pan.

- Make the filling: Add the raspberries, blackberries, black raspberry liqueur, and 1 tablespoon of maple syrup to a large bowl. Stir and let sit for 10 minutes for the berries to macerate.
- In a medium bowl, mix together the cream cheese and remaining tablespoon of maple syrup until smooth.
- Spread the filling evenly over the 4 slices of bread. Arrange some of the berries on 2 slices of the bread and top with the other slices of bread. Press to seal the pieces together.
- In a shallow dish, whisk together the milk, egg, black raspberry liqueur, and salt.

CHALLAH FRENCH TOAST WITH BERRY SAUCE
Steps:
- Prepare French toast:
- Preheat oven to 350°F.
- Whisk together eggs, milk, sugar, and salt until blended. Pour into a large baking pan and soak bread slices in 1 layer, turning once, 8 minutes.
- Prepare berry sauce while bread is soaking:
- Purée 1 1/2 cups berries with sugar and lemon juice in a blender. If you want to eliminate seeds, force purée through a very fine sieve into a bowl. Transfer to a serving bowl and fold in remaining berries.
- Cook French toast:
- Heat 1 1/2 tablespoons butter in a 12-inch heavy skillet or griddle over moderately high heat until foam subsides. Transfer 4 soaked bread slices to skillet with a slotted spatula and cook until golden brown, about 1 minute on each side. Cook remaining bread in 2 batches, adding more butter as needed. Transfer slices as cooked to a large shallow baking pan (using a clean spatula) and, when all are browned, bake in middle of oven until hot, about 5 minutes.
- Serve French toast with berry sauce.
TRIPLE BERRY FRENCH TOAST
This triple berry French toast is a Christmas brunch tradition at our house and perfect for a busy household on Christmas morning as it is prepared the night before. You can use blueberries, blackberries, raspberries, or a combination. Twist a lemon slice over the top for garnish.

- Spray the bottom of a 9x13-inch glass baking dish with vegetable spray and place 1/2 of the bread cubes into the dish. Put cream cheese cubes on top. Distribute blueberries, blackberries, and raspberries over the cream cheese. Place remaining bread over the berries.
- Beat eggs in a bowl and add milk and maple syrup. Pour mixture over bread. Place plastic wrap over the dish and refrigerate, 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Remove plastic wrap from the dish and cover the dish with aluminum foil.

- While toast is baking, combine 1/2 of the blueberries, 1/2 of the blackberries, 1/2 of the raspberries, water, sugar, and cornstarch in a saucepan over medium-low heat. Cook until syrup thickens, 5 to 7 minutes. Stir in remaining berries and butter.
- Let French toast sit for about 10 minutes before slicing. Pour berry syrup over individual pieces.
