CORN-KERNEL CORNBREAD

4 tablespoons unsalted butter
1 cup all-purpose flour
1 cup cornmeal
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 egg
3/4 cup milk
1 cup frozen corn

Steps:

  • Preheat oven to 350 degrees. Put butter in 8-inch square baking pan or 9-inch ovenproof skillet; place in oven just long enough to melt butter. In a bowl, stir together flour, cornmeal, sugar, baking powder, and salt. Stir in egg and milk until just combined. Stir in frozen corn.
  • Spoon batter into prepared pan, and spread evenly. Bake until golden, 30 minutes in pan or 20 minutes in skillet.

FRESH CORN CORNBREAD



Fresh Corn Cornbread image

4 tablespoons canola oil, divided
1½ cups fresh corn kernels, divided
1½ cups stone-ground cornmeal
½ cup all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 teaspoon sugar
1 cup whole buttermilk
2 large eggs, lightly beaten
Butter, to serve

Steps:

  • Preheat oven to 450°. In a 10-inch cast-iron skillet, place 2 tablespoons oil. Place skillet in oven until very hot, about 8 minutes.
  • In the container of a blender, place ½ cup corn kernels; process until smooth. Set aside.
  • In a medium bowl, whisk together cornmeal, flour, baking powder, salt, and sugar. Stir in ½ cup corn kernels. Make a well in center of cornmeal mixture; add buttermilk, eggs, blended corn, and remaining 2 tablespoons oil, stirring just until moistened. Carefully spoon batter into hot oil. Sprinkle with remaining ½ cup corn kernels.
  • Bake until golden brown and a wooden pick inserted in center comes out clean, 15 to 17 minutes. Let cool in pan for 5 minutes. Remove from pan, and let cool on a wire rack for 10 minutes. Serve warm with butter.

Steps:

  • Preheat the oven to 350 degrees, mist a 9x13-inch pan with nonstick spray, and line with parchment. (If making skillet cornbread, place about 1 1/2 tablespoons of butter in the pan and allow it to preheat in the oven.)
  • In a large bowl, whisk the flour, cornmeal, sugar, baking powder, and salt together.
  • Whisk the melted butter, milk, oil, and eggs together in a large liquid measuring cup.
  • Pour the liquid ingredients into the dry and stir together until combined.
  • Transfer the batter to the prepared pan, and bake for 35 to 45 minutes, or until fluffy and slightly golden around the edges (a toothpick inserted into the thickest part of the cornbread should come out clean or with a few moist crumbs).
  • Cool for about 20 minutes, then cut into slices and serve.

2 cans (11 ounces each) Mexicorn, drained, divided
3 medium tomatoes, diced
3/4 cup chopped green pepper
1 medium onion, chopped
1 cup mayonnaise
4 bacon strips, cooked and crumbled

Steps:

  • Prepare cornbread batter according to package directions; stir in one can of Mexicorn. Bake according to package directions. Cool and crumble., In a large bowl, combine the crumbled cornbread, tomatoes, green pepper, onion and remaining corn. Add mayonnaise; toss to coat. Sprinkle with bacon. Serve or refrigerate.

1 cup yellow cornmeal
1 cup flour
1/2 cup sugar

1 fresh corn cob, kernels removed and remainder discarded

Steps:

  • Preheat oven to 375F.
  • In a medium-sized mixing bowl, whisk together melted butter and eggs. Add remaining ingredients except fresh corn, whisk together just until combined and few lumps remain (do not over-mix). Stir in fresh corn kernels.
  • Pour into a greased 8-inch baking dish. Bake for about 30 minutes, until lightly browned on top and a toothpick inserted into the center comes out clean.

1 1/2 cups flour ((plain / all purpose))
1 tbsp baking powder
1/2 cup white sugar

1 cup canned creamed corn
1/2 cup / 125g melted butter (, unsalted)
2 eggs (, lightly whisked)
3/4 cups milk
1 - 2 tbsp butter (, melted (for greasing & brushing))

Steps:

  • Place a 26cm/10" castiron skillet in the oven and preheat to 220C / 425F while making the batter.
  • Place the Dry Ingredients in a bowl and mix.
  • Place Wet ingredients in a separate bowl and mix until combined.
  • Pour Wet into the Dry ingredients, mix until combined.
  • Take the skillet out of the oven. Add the 1 tbsp of butter and swirl it around to coat the base and halfway up the sides (or use a brush to do this)

  • Preheat the oven to 200C | 400F and position a rack in the middle. Lightly grease a 9-inch cast iron skillet or 9-inch square baking dish with butter and place skillet/dish into the oven to heat up. (Alternatively for cast iron skillets: heat 1/2 cup of unmelted butter in your cast iron over stove top on medium heat until melted, turn heat off then allow the butter to cool slightly before adding to the batter.)

1 cup all-purpose flour (sifted)
1 cup yellow cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 cup half-and-half
2 eggs (beaten)
1/4 cup butter (or shortening, melted), plus extra for greasing the dish
1/2 cup sugar (optional if you prefer unsweetened cornbread)
1 cup sweet corn (fresh, thawed, or canned; drained well)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Thoroughly grease a 9 x 9-inch baking dish.
  • Sift together the flour, cornmeal, baking powder, and salt.
  • Combine the half-and-half, eggs, butter (or shortening), and sugar (if using).
  • Add half-and-half mixture to the flour mixture and combine just until the flour is moistened, no more than 10 to 15 seconds. Then fold in the corn, but don't overmix the batter or your cornbread will be too tough.
  • Pour the batter into your prepared baking dish and bake the cornbread immediately.
  • Bake 25 to 30 minutes or until a toothpick inserted into the center of the cornbread comes out clean and the edge of the cornbread starts to separate from the baking dish. Cut into slices or squares. Serve and enjoy.
