5 pounds chicken breast pieces
1 white onion chopped
1 tbsp garlic powder
4 boiled eggs (chopped)
1/2 cup sweet pickle relish
1 tbsp Dijon mustard
1 teaspoon paprika
1/2 tbsp red chili flakes
2-3 celery ribs
1/2 cup mayonnaise
Salt and ground black pepper to taste

Steps:

  • To begin with, season your chicken first so that it can be cooked. Season it with salt pepper and garlic powder.
  • Preheat a skillet on the stovetop at low flame. Roast your chicken breast in a pan for 8-10 minutes. Confirm that the chicken is cooked at high heat.
  • Then, move this chicken to the preheated oven at 350 degrees. Bake it for 15 minutes. Now your chicken is all soft and juicy that is full of taste.
  • Slice the chicken into smaller bite-sized cubes or you can also shred it. For shredding, you can use a food processor or can simply shred it by hand.
  • Chop the celery and onion finely. Do it instead of waiting when the chicken is cooking in the oven. Also, boil and chop the eggs at the same period.
  • Now take a large bowl and mix the sliced cooked chicken with onion and celery. Add in mayonnaise and mix well. Moreover, add paprika, mustard, salt, black pepper, chili flakes, and sweet pickle relish.
  • Mix well and in the end, add the chopped boiled eggs to this salad. The addition of eggs is optional as some people do not like adding them to their dishes.
  • Add more mayo if you like a more creamy salad.
  • Serve! after chilling in the refrigerator.

1 cup onion, finely chopped
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
1 1/4 cups mayonnaise

Steps:

  • *In a food processor fitted with a metal blade, add celery and pulse until it turns into a minced consistency. Remove from food processor and place in a large mixing bowl.
  • Add 2 cups of chicken to food processor and pulse until desired consistency is reached; transfer to the mixing bowl with the celery and pulse the remaining chicken in the food processor.
  • Add onion, salt, pepper, and 1 cup mayonnaise to the celery and chicken; stir until blended. Add more mayonnaise if necessary.
  • Serve on whole grain bread or on top of Triscuits for a healthy snack or light lunch.
  • *If you like bigger chunks of celery, you can skip the first step and place chopped celery right into the mixing bowl.
