String Beans with Garlic image

1 1/2 pounds French string beans (haricots verts), both ends removed
Kosher salt
2 tablespoons unsalted butter
1 tablespoon good olive oil
2 to 3 garlic cloves, sliced
Freshly ground black pepper

Steps:

  • Blanch the string beans in a large pot of boiling salted water for just 1 1/2 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When they are cool, drain and set aside.
  • Heat the butter and olive oil in a very large saute pan over medium heat and cook the garlic for 1 to 2 minutes, tossing occasionally, until lightly browned. Add the string beans, sprinkle with salt and pepper, and toss together. Reheat the string beans and serve.

2 pounds green beans, trimmed
Kosher salt
2 tablespoons olive oil
Freshly ground black pepper
2 tablespoons reduced-sodium soy sauce
2 tablespoons sorghum syrup or 1 tablespoon honey
2 teaspoons benne seeds or sesame seeds
1/4 teaspoon ground cumin

Steps:

  • Preheat oven to 450°F. Cook beans in a large pot of boiling salted water until crisp-tender, about 2 minutes. Drain, transfer to a bowl of ice water, and let cool. Drain and pat dry.
  • Toss beans and oil on a rimmed baking sheet; season with salt and pepper. Roast, tossing occasionally, until tender and lightly charred in spots, 10-15 minutes.
  • Meanwhile, whisk soy sauce, sorghum, benne seeds, and cumin in a large bowl; season with salt and pepper. Add warm beans and toss to coat.
  • DO AHEAD: Dressing can be made 5 days ahead. Cover and chill.

2 cups fresh or frozen cut green beans (1-1/2-inch pieces)
1 cup water
1/2 cup chopped onion
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1 bay leaf
1/4 teaspoon dill seed
1/4 teaspoon garlic powder
1/8 to 1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a skillet, cook bacon until crisp. Remove bacon; crumble and set aside. Drain, reserving 1 tablespoon drippings. Add beans, water, onion and seasonings to drippings; bring to a boil. Cook, uncovered, until beans are tender, 15-20 minutes. Discard bay leaf. Stir in bacon.

1 pound fresh green beans, trimmed and snapped
garlic salt to taste
garlic powder to taste
ground black pepper to taste
dried minced onion
1 (16 ounce) jar marinated cocktail onions, with liquid

Steps:

  • Heat oil in a wok over high heat. Reduce heat to medium, and place beans in the wok. Cover, and cook 10 minutes, stirring occasionally. Season with garlic salt, garlic powder, pepper, and minced onion. When beans are almost tender, mix in cocktail onions with liquid. Continue cooking 5 minutes, until heated through.

2 quarts lightly salted water
4 tablespoons sesame (benne) seeds
1/2 stick (2 ounces) unsalted butter

Steps:

  • Trim the green beans and rinse them thoroughly. Bring the water to a boil, dump the beans in all at once and boil briskly, uncovered, for about five to seven minutes or until the beans are tender, but not limp and soggy. Turn the beans out all at once into a colander and run cold water over them briefly to stop the cooking process and retain their green color.
  • Place the sesame seeds in a large skillet over medium heat and cook, stirring constantly, until they are toasted to a rich brown color. Watch carefully, as the tiny seeds will easily burn. When they are the right color, remove pan from heat and immediately swirl in the butter. Add the green beans and turn quickly to mix thoroughly. Return to the heat briefly to warm the beans, then turn out on a heated platter and serve immediately.

Salt and freshly ground black pepper
1 clove garlic, grated (on a rasp)
1 1/2 pounds fresh string beans, sliced into thirds
1 cup chicken stock
Lemon wedge, for spritzing

Steps:

  • In a saute pan with straight sides or a medium pot, add the olive oil and raise the heat to medium-high. Add the onions and season with a pinch of salt and grind or 2 of pepper. Cook the onions, stirring and moving around, until tender and translucent, about 4 minutes. Add the garlic and lower the heat. Continue cooking until fragrant and tender, about 2 minutes. Add the string beans and season with salt and pepper. Stir to coat, and then add the chicken stock. Raise the heat to a simmer and cover. Cook until the green beans are very tender, about 25 minutes. Spritz with lemon just before serving.

  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Add prosciutto and saute until crispy, about 2 minutes. Remove to a paper towel. Steam beans over in 1/4 inch water until tender, 3-4 minutes. Drain beans.
  • Swirl some olive oil in same skillet and add the peppers. Return beans to pan and toss with salt and red pepper flakes. Transfer beans to skillet and top with the crispy prosciutto.
