Number Of Ingredients 10

¾ cup butter
¾ cup packed dark brown sugar
¾ cup unsweetened pineapple juice
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup white sugar
3 eggs
½ teaspoon vanilla extract
1 fresh pineapple - peeled, cored and cut into rings

  • Melt the butter. Brush a little bit of the butter on the inside of a 9-inch cake pan.

  • Separate the eggs. Beat the whites until stiff but not dry.
  • Beat two of the egg yolks until lemony yellow. Stir in the remaining 1/2 cup pineapple juice, vanilla, and remaining melted butter. Add this mixture to the flour mixture. Gently fold in the egg whites. Pour batter over the top of the brown sugar and pineapple rings.
  • Bake in the preheated oven until cake springs back when lightly touched with a finger, about 30 minutes. Let cake cool in pan for 10 minutes then cover pan tightly with a serving dish and invert so that the pineapple side is up.

CARAMELIZED PINEAPPLE UPSIDE-DOWN CAKE

Caramelized Pineapple Upside-Down Cake image

Provided by Amanda Freitag

Categories     dessert

Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 12

3/4 cup brown sugar
2 1/2 sticks unsalted butter, softened
One 20-ounce can pineapple rings in juice, drained, 1/4 cup juice reserved
2 cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon salt
2 cups granulated sugar
5 large eggs
2 teaspoons vanilla extract
1 cup sour cream
1 1/2 tablespoons granulated sugar
1/2 vanilla bean, seeds scraped

Steps:

  • For the cake: Preheat the oven to 350 degrees F.
  • Put the brown sugar, 1/2 stick of the butter and the 1/4 cup pineapple juice in a small saucepan over medium heat. Cook until the sugar dissolves and begins to caramelize, about 10 minutes. Pour into a 9-by-13-inch baking dish and top with the pineapple rings. Set aside.
  • Whisk together the flour, ginger and salt in a medium bowl.
  • In a stand mixer with the paddle attachment, beat together the remaining 2 sticks butter and the granulated sugar until light and fluffy, about 4 minutes. Beat in the eggs, one at a time, scraping down the bowl as needed. Beat in vanilla until well incorporated.
  • With the mixer on low speed, slowly add in the dry ingredients, beating just until incorporated--be careful not to over-mix. Spread the batter over the pineapple rings in the baking dish.
  • Bake until a toothpick inserted into the center of the cake comes out clean, about 30 minutes. Cool for 15 minutes.
  • Meanwhile, make the topping: Stir together the sour cream, sugar and vanilla seeds in a small bowl.
  • To serve, invert the cake over a platter and cut into portions. Serve with a dollop of the sour cream topping.

Yield 8-10 servings

Number Of Ingredients 11

1 2/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 fresh pineapple, halved lengthwise, cored, and peeled
1 1/2 sticks (3/4 cup) unsalted butter, softened
1/2 cup packed light brown sugar
2/3 cup granulated sugar
1 teaspoon pure vanilla extract
2 large eggs
2/3 cup well-shaken buttermilk

  • Sift together flour, baking powder and soda, and salt into a bowl. Cut pineapple crosswise into 1/4-inch-thick wedges.

PINEAPPLE UPSIDE-DOWN CAKE

Pineapple Upside-Down Cake image

In this country, ingestion of the pineapple upside-down cake has often been used as proof of citizenship - unless you had some as a child, you simply weren't an American. I've had plenty of bad ones -- usually because the dough is too heavy or dry, and sometimes the overly shrill sweetness makes you want to quit living, at least for the length of time you are eating it. But properly prepared, this guilty pleasure is most welcomely retro, and in the recipe here, the cake, while not exactly dietetic, is not life-threatening either.

Categories     cakes, dessert

Time 1h20m

Yield 8 servings

Number Of Ingredients 18

4 tablespoons butter
3/4 cup light brown sugar
3 tablespoons light rum
1 pineapple, peeled, cored, sliced into rings; four rings cut in semicircles
3 cups fresh blackberries or fresh or frozen cranberries
12 to 16 pecan halves
12 to 16 pitted cherries
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3 tablespoons cornmeal
1/2 teaspoon salt
8 tablespoons unsalted butter
1 cup granulated sugar, plus 2 tablespoons for the egg whites
4 large eggs, separated
1 1/2 teaspoons vanilla extract
2/3 cup sour cream or Coco López or whole milk
1 teaspoon chopped rosemary (optional)
1 cup chopped pecans (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Melt 4 tablespoons butter in a 10-inch cast iron skillet; stir in brown sugar.
  • Stir in rum; let mixture bubble.
  • Arrange fruit in mixture and intersperse pecans. Pineapples may overlap; place semicircles along sides of skillet; place cherries in middle of ring. Berries should be evenly distributed - their mirror image will be what the top of the cake looks like.
  • For the batter, mix flour, baking powder, cornmeal and salt in a bowl.
  • Cream butter at slow speed in an electric mixer and gradually add 1 cup of sugar. Beat until fluffy.
  • Add egg yolks and vanilla.
  • Add half the dry mixture, beating, then half the liquid (sour cream, Coco Lòpez or milk). When incorporated, add the remaining dry ingredients and then the remaining liquid. Add rosemary and pecan pieces (both optional).
  • In another bowl, beat egg whites until soft peaks form, then add 2 tablespoons sugar and beat until stiff peaks form.
  • Fold half of the whites into mixture, then fold in the rest. Spread the batter evenly over the fruit.
  • Bake 45 to 50 minutes, until a knife inserted - into the dough only - comes out clean.
  • Let the cake sit for a minute, then run a knife around the edge and invert a serving dish on top. Turn the skillet and serving dish over, gently rap the bottom of the skillet. Serve.

PINEAPPLE UPSIDE-DOWN CAKE FROM SCRATCH

Pineapple Upside-Down Cake from Scratch image

This is an old-fashioned upside-down cake recipe from my German grandmother from scratch. She used this same cake batter for many different fruits as an alternative to pineapple. She often used fresh Italian prunes or pitted fresh cherries. My grandparents owned a bakery and this cake was very popular in the 1950s and 1960s. Serve warm or at room temperature with whipped cream.

Categories     Desserts     Fruit Dessert Recipes     Pineapple Dessert Recipes

Time 1h10m

Yield 10

Number Of Ingredients 14

½ cup brown sugar
¼ cup unsalted butter, melted
3 (1/2 inch thick) slices fresh pineapple, quartered
12 frozen cranberries
⅔ cup white sugar
½ cup unsalted butter, softened
2 large eggs
1 ½ teaspoons baking powder
1 teaspoon vanilla extract
½ teaspoon almond extract
½ teaspoon ground cinnamon
¼ teaspoon salt
1 ½ cups unbleached all-purpose flour
¾ cup milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch diameter, 2 1/2-inch tall round cake pan.
  • Stir brown sugar and melted butter together in a bowl. Spread evenly over the bottom of the prepared cake pan. Place pieces of pineapple on top of brown sugar mixture and around the outer edge of the pan, all facing the same way. Place 2 pieces in the center. Place a cranberry between each pineapple piece.
  • Beat white sugar and softened butter together using an electric mixer in a bowl until light and fluffy. Add eggs, one at a time, beating well and scraping the sides of the bowl after each addition. Pour in baking powder, vanilla extract, almond extract, cinnamon, and salt. Mix well.
  • Add 1/2 cup flour and 1/4 cup milk to batter at a time, mixing well after each batch until thoroughly blended.
  • Pour batter over pineapple slices, making sure batter gets between them. Spread and smooth batter using an offset spatula.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes.
  • Remove cake from the oven and let cool on a wire rack for 15 to 20 minutes. Run a knife around the edges of the cake to loosen. Place a plate over the cake pan and quickly invert, waiting a few seconds for it to fall if it doesn't immediately separate from the pan.

FRESH PINEAPPLE UPSIDE-DOWN CAKE

Fresh Pineapple Upside-Down Cake image

Provided by Food Network

Categories     dessert

Time 1h30m

Number Of Ingredients 13

1/2 cup blanched whole almonds
4 tablespoons unsalted butter, melted, plus 9 tablespoons unsalted butter, softened
1/2 cup packed brown sugar
2 tablespoons light corn syrup
1/2 pineapple, peeled, cored, cut in half lengthwise and cut crosswise into 1/2-inch slices
1 1/2 cups pastry flour
3/4 cup granulated sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
3 large egg yolks
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees. Spread the almonds on a baking sheet and toast, shaking the pan occasionally, until lightly golden, 15 to 20 minutes. Set aside to cool. Turn the oven temperature down to 325 degrees. Stir together the melted butter, brown sugar and corn syrup and evenly coat the bottom and sides of a 10-inch glass pie plate with the mixture. When the almonds are cool, arrange around the bottom rim of the pie plate, with a few in the center, gently pressing them into the brown mixture. Arrange pineapple on top.
  • In a mixing bowl, combine the pastry flour, granulated sugar, baking powder, baking soda and salt and thoroughly mix. In another bowl, whisk together the softened butter, sour cream, egg yolks and vanilla. Add to the dry ingredients and mix with an electric mixer at medium speed about 1 1/2 minutes, scraping down the sides of the bowl occasionally, until thick and smooth. Using a spatula, spread the batter evenly over the fruit, building up the outside edges so the cake will be level when baked.
  • Bake 40 to 50 minutes, until golden brown and a tester inserted in the center comes clean. Transfer to a rack to cool 3 to 5 minutes (no longer) and then invert onto a serving plate, repositioning the fruit as necessary.

PINEAPPLE UPSIDE-DOWN CAKE

Pineapple Upside-Down Cake image

Martha's version of a classic pineapple upside-down cake uses dried tart cherries for maraschinos, and features a layer of thinly sliced fresh pineapple. Serve the cake in generous slices, with a dollop of rum-spiked whipped cream.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Yield Makes one 10 1/2-inch cake

Number Of Ingredients 13

1/2 cup dried tart cherries
1 pineapple, (about 3 1/2 pounds), outer skin removed and uncored
1 cup cake flour
1 1/2 teaspoons baking powder
1 1/4 cups granulated sugar
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
1/2 cup packed dark-brown sugar
1 vanilla bean, split lengthwise, seeds scraped
2 large eggs
6 tablespoons whole milk
1/2 teaspoon pure almond extract
1 cup heavy cream, well-chilled
2 tablespoons dark rum

Steps:

  • Heat oven to 350 degrees. Line a baking sheet with parchment. Place cherries in a small heat-proof bowl. Bring 1 cup water to a boil in a small saucepan. Pour over dried cherries, and soak for 10 minutes. Drain well, and coarsely chop. Using a wide Japanese mandoline, slice whole pineapple as thinly as possible. Set aside. Sift together flour and baking powder. Set aside.
  • Heat 1/2 cup of granulated sugar in a 10 1/2-inch cast-iron skillet. Cook until deep amber, about 5 minutes. Remove the pan from the heat. Add 4 tablespoons (1/2 stick) butter, stirring vigorously with a wooden spoon. Spread caramel evenly to coat the bottom of the skillet, and sprinkle with dark-brown sugar.
  • Center one piece of pineapple in the skillet. Place pineapple slices in a tightly overlapping circle. Make a second ring, completely covering the bottom and continuing at least halfway up the sides. Place one remaining slice in the center of the skillet on top of the circles. (Be certain that there are no gaps as the bottom will be the top upon inversion).
  • In a heavy-duty mixer fitted with the paddle attachment, cream remaining butter, remaining 3/4 cup of granulated sugar, and vanilla-bean scrapings. Add eggs one at a time, mixing well after each addition. Pour in milk and almond extract. Slowly add sifted flour, scraping sides as needed. Using a rubber spatula, fold in chopped cherries. Pour batter into pineapple-lined skillet. Spread batter evenly with an offset spatula.
  • Place skillet on a prepared baking sheet, and transfer baking sheet to oven. Bake until golden brown and cake tester comes out clean, about 45 minutes.
  • Meanwhile, pour cream into the bowl of a heavy-duty mixer. Add rum. Whip on high speed until stiff peaks form, 45 to 60 seconds. Remove cake from oven, and pour excess liquid from skillet into a measuring cup. Carefully invert onto large cake plate, and pour reserved liquid over cake. Serve with rum-spiked whipped cream.

  • Using a sharp knife, peel the pineapple and remove the eyes. Halve the pineapple lengthwise and cut out the center core. Cut each half crosswise into five 2/3-inch-thick semicircles. Cut one of the semicircles into 3 pieces.
  • Preheat the oven to 375°. In a small bowl, stir together the flour and baking powder. In a medium bowl, beat 1 stick of the butter until pale and creamy. Gradually beat the granulated sugar into the butter until the mixture is fluffy. Beat in the eggs one at a time, beating well after each addition. Stir in the flour mixture in 3 batches just until smooth. Stir in the Cognac and set aside.
  • Melt the remaining 3 tablespoons butter in a 9-inch cast-iron skillet; if the handle isn't ovenproof, wrap it in foil. Stir in the brown sugar and cook over moderate heat until melted and bubbling, about 3 minutes. Remove the pan from the heat. Arrange the 9 pineapple semicircles in a tight concentric ring in the skillet and fit the 3 small pieces in the center. Cook over moderately high heat for 10 minutes. Turn the pineapple slices and lower the heat so that the mixture simmer vigorously. Cook until the fruit is tender when pierced, about 10 minutes longer. Insert a cherry in the hollow of each semicircle.
  • Remove the skillet from the heat and spread the cake batter evenly over the hot pineapple; it may not completely cover the fruit, but it will spread as it cooks. Bake in the middle of the oven for about 20 minutes, or until the cake springs back when pressed. Let it cool for 10 minutes, then invert the cake onto a large platter. Serve the cake warm with vanilla ice cream.
