1/2 cup brown sugar
1 egg
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1/8 teaspoon ground cloves
1 medium orange rind (grated rind from one orange)
1/4 cup orange juice
1 cup semi-sweet chocolate chips

Steps:

  • Cream margarine and brown sugar; beat in egg; add orange rind and orange juice.
  • Combine flour, baking soda, and cloves; blend thoroughly into creamed mixture.
  • Add chocolate chips; mix well.
  • Drop from teaspoon onto cookie sheets.
  • Bake at 375°F for 10-12 minutes.

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 cup butter
1 ½ cups sifted confectioners' sugar
1 teaspoon orange extract
1 tablespoon grated orange zest
1 beaten egg
½ cup confectioners' sugar, for dusting

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper, and set aside.
  • Mix the flour, baking soda, and cream of tartar in a bowl. In another bowl, beat the butter and 1 1/2 cups confectioners' sugar together with an electric mixer until light and fluffy. Mix in orange extract, grated orange zest, and egg. Stir in the flour mixture, and blend well.
  • Drop teaspoon-sized portions of dough about 2 inches apart onto the parchment lined baking sheets. The cookies will spread out to about 1 1/2 inches when baked.
  • Bake in the preheated oven for 10 to 14 minutes, until the cookies are light brown. Remove from the oven, and sift remaining confectioners' sugar onto the hot cookies. Allow to cool, and store in an airtight container.

1/2 cup butter, softened
1 teaspoon orange extract

1 egg
5 drops yellow food color
2 drops red food color
1 1/2 cups white vanilla baking chips

Steps:

  • Heat oven to 350°F. In a small bowl, whisk egg, food coloring, vanilla and orange extract. In large bowl, mix butter and sugar cookie mix until well blended. Then, mix in egg and food coloring mixture. Once soft dough has formed, stir in baking chips.
  • On ungreased cookie sheets, drop dough with 1 1/2 tablespoon-size cookie scoop or by rounded tablespoonfuls about 2 inches apart.
  • Bake 9 to 10 minutes or just until dough is set (do not overbake). Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely.

1/4 teaspoon salt
10 drops yellow plus 2 drops red food coloring
Additional confectioners' sugar
FILLING:
1/2 cup butter, softened
4 ounces cream cheese, softened
1/4 teaspoon vanilla extract
2 cups confectioners' sugar
1 tablespoon orange juice concentrate
1/8 teaspoon grated orange zest

Steps:

  • In a large bowl, cream butter and cream cheese until light and fluffy. Gradually beat in confectioners' sugar. Beat in the orange juice concentrate, zest and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in food coloring. 1 tablespoon minced fresh thyme
1 to 2 teaspoons grated lemon zest

1/4 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Cream butter, sugar, thyme and lemon zest until light and fluffy, 5-7 minutes. Beat in egg yolk. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Roughly shape dough into a 12-in. roll along the edge of a 12x12-in. sheet of waxed paper. Tightly roll waxed paper over dough, using paper to mold the dough into a smooth roll. Place the wrapped roll in an airtight container; refrigerate 1 hour or overnight., Preheat oven to 350°.
