FRIED RED SNAPPER BITES

Fried Red Snapper Bites image

Even though I call this fried snapper bites, it can be done with any firm. white fish. You do want the chunks you fry to be at least the width of a finger, and even twice that, so use that as a guideline. I like the New Orleans remoulade with this, but you can use any sauce you like.

Provided by Hank Shaw

Categories     Appetizer

Time 35m

Number Of Ingredients 21

1/2 cup Dijon or Creole mustard
1/3 cup mayonnaise
3 tablespoons chopped parsley
3 tablespoons minced shallot
3 tablespoons minced celery
1/4 cup minced dill pickles
1 tablespoon minced garlic
1 tablespoon prepared horseradish
1 tablespoon cider vinegar
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon Creole or Cajun seasoning
1 teaspoon Worcestershire sauce
2 pounds skinless snapper fillets
Salt
2 eggs, lightly beaten
1/4 cup yellow mustard (Dijon is fine)
1 tablespoon Creole or Cajun seasoning
3 tablespoons heavy cream or half and half
1 sleeve Saltines crackers
Peanut oil for frying

Steps:

  • Mix all the ingredients for the remoulade together and set aside. The remoulade can be made up to a week in advance, and making it the night before lets the flavors mellow.
  • Cut the fish into chunks of about two bites each. Salt lightly. Mix together in a bowl the eggs, mustard, Creole seasoning and heavy cream.
  • Pour enough peanut oil hot into a frying pan to come about a half-inch up the sides. Heat this to about 350F.
  • While the oil is heating, dunk as many snapper bites in the egg wash as will fit. When the oil is hot, dredge the fish in the mashed Saltines. You can do this in a bowl or in a plastic bag. Really press in the Saltines, and it's OK to have a few bits that aren't pulverized.
  • Fry the fish until golden brown on both sides, about 3 minutes per side. Drain on paper towels and serve with the remoulade, and some lemon wedges if you have them.

Time 35m

Yield 3 to 4 servings

Number Of Ingredients 16

1 1/4 cups mayonnaise
2 tablespoons freshly squeezed lime juice (from 1 medium lime)
8 cilantro sprigs, stems trimmed
2 medium garlic cloves
1 teaspoon dry mustard powder
1/2 teaspoon cayenne pepper
1/2 teaspoon kosher salt
4 cups vegetable oil
2 large sweet potatoes (about 2 pounds)
2 teaspoons white wine vinegar
1 pound sole or haddock fillets
1/2 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
1 cup chilled club soda

Steps:

  • For the mayonnaise: In a blender, combine all ingredients and process until smooth. Taste and adjust seasoning as needed. Store covered in the refrigerator until ready to use.
  • For the fries: Heat oven to 200 degrees F. In a large cast iron skillet, pan, or Dutch oven, heat vegetable oil over medium-high heat to 350 degrees F.

  • When oil is heated, drain fries and thoroughly pat dry with paper towels. Add 1/3 of fries to oil and cook until browned and cooked through, about 4 to 5 minutes. Remove fries to paper towels with a slotted spoon and season immediately with kosher salt. Return oil to 350 degrees F and repeat with remaining fries. Hold in oven until fish is ready.
  • For the fish: Skim oil to clean then return to stove over medium-high and bring to 350 degrees F. Pat fish dry with paper towels then cut into 1/2-inch strips; set aside. In a large bowl whisk together flour, salt, cayenne, and pepper well combined. Add club soda and whisk briefly until a batter is formed (there may be a few lumps left. Place all fish in batter and mix to coat thoroughly. Remove 8 pieces of fish from batter, shake off excess batter, and fry, stirring occasionally, until golden and fish is just cooked through, about 2 to 3 minutes. Return oil to 350 degrees F and repeat with remaining fish. Serve immediately with fries and mayonnaise.

SUPER CRISPY FRIED FISH FINGERS WITH EASY HOMEMADE TARTAR SAUCE

Super Crispy Fried Fish Fingers with Easy Homemade Tartar Sauce image

Provided by By Grace Parisi

Time 30m

Yield 2

Number Of Ingredients 16

½ cup mayonnaise
2 tablespoons sweet pickle relish or chopped sweet gherkins
1 tablespoon chopped dill
2 teaspoons lemon juice
1 teaspoon finely chopped shallot
¼ teaspoon finely grated lemon zest
Salt and freshly ground pepper to taste
2 portions white fish, such as lingcod, halibut, cod, or rockfish, cut crosswise into 1 ½-inch wide strips
Salt and freshly ground pepper to taste
1 cup all-purpose flour
¼ cup cornstarch
2 tablespoons Old Bay Seasoning
1 teaspoon baking powder
7 ½ ounces (about 1 cup) seltzer or club soda
Neutral oil for frying
Lemon wedges for serving

Steps:

  • Make the tartar sauce: In a small bowl, combine the mayonnaise, pickle relish, dill, lemon juice, shallot, and lemon zest and season with salt and pepper to taste. Make the fish: Fill a medium skillet with 1 to 2 inches of oil and heat to 375°F. Line a platter or baking sheet with paper towels and top with a wire rack. While the oil heats, pat the fish dry and season with salt and pepper. In a medium bowl combine flour, cornstarch, Old Bay, and baking powder and season with a generous pinch of salt and pepper. Transfer ¼ cup of the dry mixture to a sealable plastic bag. Add the fish to the bag and toss to coat. Add ¾ cup of the seltzer to the remaining dry ingredients in the bowl and whisk until smooth. It should be the consistency of thin pancake batter. Add more seltzer if necessary. Add the fish to the batter, tapping off excess flour first, and turn to coat. One piece at a time, add the fish to the oil, allowing excess batter to drip off before adding to the pan. Cook, turning once, until golden and crisp, 6 to 7 minutes. Drain on prepared rack and sprinkle with salt. Serve right away with lemon wedges and tartar sauce.

  • Heat oil in a large skillet. When deciding what oil to use, the most important factor is the smoke point of the oil. The smoke point is the temperature the oil stops simmering and begins to smoke. You want to use an oil that has a high smoke point to prevent burning. Neutral oils, such as canola and vegetable oil, are perfect for this dish because you don’t want the oil to impact the flavor of the dish. I used canola oil which has a smoke point of 400°F (200°C).
  • Next it’s time to set up your dredging station. In a wide deep container (Tupperware works perfectly if you don’t have enough mixing bowls) mix together homemade blackened seasoning and flour. Set aside. In a separate container, add breadcrumbs. Set aside. In a separate container, beat eggs. Set aside. This is your dredging station.
  • Rinse fish filets and pat dry with paper towel. It is important the fish is dry before frying. This will help prevent the fish from getting tough and mushy during the cooking process.
  • Season fish with salt and pepper to taste. Coat filets lightly in flour, then completely cover in egg and panko. Add fish to hot oil and fry until golden brown and crispy. About 5 minutes per side. When done, transfer to a paper towel lined plate.
