FRIED GREEN NAPOLEONS WITH MANDARIN COLESLAW
Fried green tomatoes are stacked and smothered with pimiento cheese in this seriously comforting dish that doubles up on two of my favorite southern classics. The mandarin coleslaw makes it bright and fresh. -Amy Freeze, Avon Park, Florida

Steps:
- Combine first six ingredients. Add coleslaw mix and onion. Add mandarin oranges; stir carefully., In a shallow bowl, whisk egg and hot sauce. Place flour and bread crumbs in separate shallow bowls. Dip tomato slices in flour to coat both sides; shake off excess. Dip in egg mixture, then in bread crumbs, patting to help coating adhere., In an electric skillet or deep fryer, heat oil to 350°. Fry tomato slices, a few at a time, until browned, 1-2 minutes on each side. Drain on paper towels. Sprinkle with salt and pepper., To assemble napoleons, layer one tomato slice with 1 tablespoon pimiento cheese. Repeat layers. Top with 1 teaspoon pepper jelly. Repeat with remaining tomato slices. Serve over coleslaw.

WONTON NAPOLEONS
Steps:
- Pour enough oil into small saucepan to come 1/4 inch up sides of pan. Heat oil over medium-low heat. Using tongs and working with 1 wonton at a time, submerge wontons into hot oil, frying until golden brown, about 15 seconds for first side and 10 seconds for second side. Transfer fried wontons to paper towels to drain (wontons will continue to color slightly as they cool). Sprinkle fried wontons with cinnamon. Cool completely.
- To Assemble:
- Place 4 fried wontons on work surface. Spread 1 tablespoon of whipped topping over each. Arrange 1 sliced strawberry and 2 to 3 raspberries over whipped topping on each wonton. Spoon 1 tablespoon of whipped topping over berries on each wonton. Top with another fried wonton. Repeat layering 2 more times. Spoon dollops of remaining whipped topping atop each cake stack. Garnish napoleons with remaining strawberries and raspberries, and mint sprigs (optional). Serve immediately.
NEAPOLITAN NAPOLEONS

- Because the pastry cream needs to be removed from the saucepan immediately, prepare a medium sized bowl, a fine mesh strainer or a food mill, and a heat resistant rubber spatula near the stove.
- In a large bowl, whisk together the flour with 1 cup of the sugar as well as the eggs until incorporated. The mixture will be very thick.
- In a medium saucepan over medium heat, combine the milk, the remaining cup of sugar and the salt. With a pairing knife, scrape the inside of the vanilla bean and place contents into the saucepan. Cook the mixture, stirring occasionally to prevent scalding. Remove from heat when the milk just begins to simmer. While whisking constantly, slowly pour about half of the milk in a thin stream into the flour mixture. Once the 2 mixtures are combined, continue whisking the combined flour and milk and return the contents to the saucepan with the remaining milk. Place the saucepan on medium heat while whisking constantly. Cook the mixture until it thickens, approximately 2 minutes. Immediately remove the pan from the heat as soon as the first bubble breaks the surface of the pastry cream.
- Pour the hot pastry cream into the strainer or food mill over a medium sized bowl. With a spatula, push the cream through the strainer or food mill. To prevent a skin from forming, place plastic wrap directly on the surface of the cream and refrigerate for 3 to 4 hours, or overnight.
- Have packaged puff pastry unrolled on cutting board. Bake the puff pastry according to package directions. Spread layers of pastry cream between the baked puff pastry alternating optional flavors. Garnish with fruit or nuts and sprinkle with powdered sugar.

MANDARIN ORANGE NAPOLEONS
Chinese five-spice powder, sprinkled throughout the layers of phyllo dough, and an orange-cream cheese filling give this dessert a wonderful aroma.

- Put oven rack in middle position and preheat oven to 375°F.
- Whisk together five-spice powder and 2 tablespoons granulated sugar in a small bowl.
- Cover phyllo with overlapping sheets of plastic wrap and a dampened kitchen towel. Arrange 1 phyllo sheet on a large baking sheet, then brush with some butter and sprinkle with one third of spiced sugar. Make 2 more layers in same manner. Top with remaining phyllo sheet and brush with remaining butter. (For a corrugated look, invert a large rectangular cooling rack and place it on top of phyllo.)
- Bake until golden, 12 to 15 minutes. Carefully remove cooling rack (if using) and transfer phyllo (in 1 piece) with 2 metal spatulas to another rack to cool.
- While phyllo cools, blend together cream cheese, lemon juice, vanilla, 2 tablespoons reserved orange syrup (discard remainder), and remaining 2 tablespoons granulated sugar in a food processor until smooth. Transfer to a bowl and fold in oranges.
- Break phyllo with your hands or cut with a serrated knife into 12 pieces. Arrange 1 piece of phyllo on a plate and top with a dollop of orange cream. Repeat layering and top with another piece of phyllo. Make 3 more napoleons in same manner. Dust with confectioners sugar.
CRUNCHY FRIED NOODLE COLESLAW
Tastes delicious. Great for lunch and picnics. Serve with stir-fried beef or hot dogs.For an extra kick, add 1 tablespoon of Thai Sweet Chilli Sauce to the dressing.

- Combine radish in large bowl with capsicum, cabbage, onion, sprouts and noodles.
- Only add noodles just before serving.
