FRISEE SALAD WITH EGG AND BACON



Frisee Salad with Egg and Bacon image

4 pieces thick-cut bacon, diced
2 tablespoons minced shallots
Extra-virgin olive oil, as needed
1/4 cup red wine vinegar, plus more for poaching eggs, optional
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 eggs
8 cups frisee lettuce
2 tablespoons minced fresh chives

Steps:

  • In a medium skillet over medium heat, saute the bacon until crisp. Use a slotted spoon to transfer the bacon to a paper towel-lined plate. Turn the heat off and whisk the shallots into the bacon grease. There should be about 1/4 cup of bacon grease; if it's shy of that amount, add some extra-virgin olive oil.
  • In a small bowl, whisk the vinegar and Dijon until emulsified. Add in the bacon grease mixture and whisk. Whisk in the salt and pepper.
  • To poach the eggs: Fill a nonstick skillet with about 2 inches of water and bring it to the barest simmer over medium heat; add a little vinegar if using. Crack the eggs, slipping them gently into the water one at a time, and cook until the whites are set but the yolks are still runny, 3 to 4 minutes. Using a slotted spoon, gently scoop the eggs from the water and blot dry with a paper towel.
  • In a large salad bowl, toss the frisee with the dressing and bacon. Divide the lettuce among 4 serving bowls and top each with an egg and a sprinkle of chives.

4 ounces thick-cut bacon, cut into 1/2-inch pieces
1 small shallot, halved and thinly sliced
2 tablespoons red wine vinegar
4 ounces frisee, roughly torn
Kosher salt, to taste
Freshly ground black pepper
12 small very ripe purple figs, stemmed and halved

Steps:

  • Put the bacon in a medium skillet. Turn the heat to medium and cook, stirring occasionally, until the bacon renders its fat and is crisp but not dry, about 12 minutes. Using a slotted spoon, transfer the bacon to a mixing bowl. Reserve 2 tablespoons of the bacon drippings; discard the rest.
  • Add the shallot to the hot skillet and cook, stirring, until softened, another 3 minutes. Turn the heat to low and add the vinegar, stirring to scrape up any browned bits from the bottom of the pan. Stir into the bacon.
  • Add the frisee to the bacon mixture and toss to coat with the bacon drippings. Taste, season with salt, if necessary, add a very generous amount of black pepper and toss again. Now add the figs and toss. Transfer to a large platter and serve immediately.

Frisee-Lardon Salad image

Buying slab bacon rather than sliced allows you to cut it into the perfect size and shape.

Yield 4 Servings

Number Of Ingredients 10

1 tablespoon distilled white vinegar
4 large eggs
2 tablespoons olive oil
4 ounces slab bacon, cut into 1x1/4" pieces
1 medium shallot, finely chopped
Kosher salt, freshly ground pepper
1/2 cup red wine vinegar
2 large heads of frisée, torn into bite-size pieces
Fleur de sel
2 tablespoons 1 1/2" pieces fresh chives

Steps:

  • Pour water into a large saucepan to a depth of 2" and bring to a boil. Reduce heat so water is at a gentle simmer and add white vinegar (it helps the egg whites stay compact). Crack an egg into a small bowl, then gently slide it into the water. Repeat with remaining eggs, waiting until the whites are starting to set before adding the next one (about 30 seconds apart). Cook eggs until whites are just set but yolks are still runny, about 3 minutes. Using a slotted spoon, transfer eggs to paper towels as they finish cooking.
  • Heat oil in a large skillet over medium. Add bacon and cook, stirring occasionally, until most of the fat has rendered and bacon is starting to brown, 5-8 minutes. Add shallot, season with kosher salt and pepper, and cook, stirring occasionally, until shallot is translucent and softened but hasn't taken on any color, about 5 minutes. Add red wine vinegar. Bring to a boil and cook until reduced by threequarters, 5-8 minutes. Taste bacon vinaigrette and adjust seasoning with kosher salt and pepper if needed.
  • Place frisée in a large bowl and drizzle warm bacon vinaigrette over top. Gently toss until frisée is evenly dressed and slightly wilted and season with fleur de sel and pepper.
  • Divide frisée salad among plates and carefully set an egg atop each. Season eggs with fleur de sel and pepper and scatter chives around.
  • Eggs can be poached 4 hours ahead. Place in a bowl of ice water; cover and chill. Reheat in barely simmering water 1 minute before serving.

4 slices thick-cut bacon, cut into 1-inch pieces
3 tablespoons olive oil
2 tablespoons sherry-wine vinegar
1 tablespoon freshly squeezed lemon juice
1 teaspoon sugar
1 large or 2 small heads frisee, washed and dried, trimmed and torn into bite-sized pieces (about 6 cups)
1 cup fresh flat-leaf parsley leaves, washed and dried
2 ribs celery, thinly sliced on the diagonal
Coarse salt and freshly ground pepper

Steps:

  • Cook bacon in a large skillet over medium heat until crisp and fat has rendered. Transfer bacon to a paper-towel-lined plate and set aside. Remove and discard all but 1 tablespoon of bacon fat from the skillet. Reduce heat to low; add olive oil, vinegar, lemon juice and sugar. Cook, stirring, until sugar has dissolved and dressing is well combined.
  • Combine frisee, parsley, and celery in a large bowl; season with salt and pepper. Toss salad with dressing and reserved bacon; serve immediately.

1 tablespoon dark brown sugar
Coarse salt and black pepper
1 teaspoon grainy Dijon mustard
2 1/4 teaspoons red wine vinegar

2 bunches frisee, torn into bite-size pieces (8 ounces each)

Steps:

  • Preheat oven to 425 degrees. Line a rimmed baking sheet with foil and place an ovenproof wire rack on top. Place 4 slices thick-cut bacon on rack, sprinkle with brown sugar, and season with ground pepper. Bake until bacon is crisp and glaze is bubbling, 10 to 15 minutes. Drain bacon on paper towels, then roughly chop.
  • In a large bowl, whisk together vinegar, extra-virgin olive oil, and grainy Dijon mustard; season with coarse salt and pepper. Add bacon and 2 bunches (8 ounces total) frisee, torn into bite-size pieces. Toss well to coat.

1/2 cup raisins
1/2 pound sliced bacon
2 garlic cloves, peeled and minced
2 tablespoons Dijon mustard
2 tablespoons white-wine vinegar
Kosher salt and freshly ground black pepper to taste
1 roasted broiler-size chicken (see recipe)
2 teaspoons vegetable oil
2 large heads frisee lettuce (about 1 pound), cored and trimmed

Steps:

  • Preheat the oven to 350 degrees. Place the raisins in a small bowl and cover with 1 cup boiling water. Set aside to soak for 20 minutes. Drain the raisins and transfer them to a large bowl.
  • Spread the bacon on baking sheets and bake until crisp, about 20 minutes. Drain the bacon on paper towels and pour 1/4cup of the bacon fat into a small bowl; discard the remaining fat. Add the garlic to the hot fat and whisk in the mustard and vinegar. Season with salt and pepper.
  • Remove the skin from the chicken and discard. Tear the meat into small pieces and add it to the large bowl with the raisins.
  • In a large saute pan over high heat, heat 1 teaspoon of the oil. Add 1 head of the frisee and cook, tossing, until wilted, about 30 seconds. Season with salt and pepper and add to the chicken and raisins. Repeat with the remaining teaspoon of oil and head of frisee. Add the vinaigrette and toss well. Crumble the bacon into the salad and season with salt and pepper. Serve with crusty bread and cheese.

1 cup fresh Italian parsley leaves
3 tablespoons Sherry wine vinegar
12 ounces thick slices applewood-smoked bacon, cut into 1/2-inch pieces
1/4 cup sliced shallots

Steps:

  • Preheat oven to 400°F. Toss potatoes with 2 tablespoons olive oil, thyme, and 1 teaspoon salt in medium bowl. Arrange potatoes in roasting pan; cover pan with foil. Roast until tender when pierced with fork, about 40 minutes. Cool 10 minutes. Cut potatoes in half lengthwise.
  • Meanwhile, toss frisée, dandelion leaves, and parsley in large bowl. Whisk vinegar and remaining 2 tablespoons olive oil in small bowl to blend.
  • Sauté bacon in heavy large skillet over medium-high heat until golden brown, about 5 minutes. Reduce heat to medium; add shallots and potatoes to skillet and sauté 2 minutes. Add vinegar mixture and swirl pan until heated through. Season to taste with salt and pepper. Pour bacon mixture over greens; toss to coat and serve.

  • Use a heavy bottom pan (preferably cast iron) and heat over medium-high heat. Add the bacon pieces so the wide side is flat against the bottom. When the fat starts to render, lower the heat to medium-low. Continue to cook for about 20 minutes, then use tongs to flip the bacon pieces over and cook for another 15 to 20 minutes. If you have thinner bacon, the cooking time should be reduced.
  • Place a small pot of water over medium-high heat. This will be for the poached eggs. Add in the vinegar and let it warm while you are making all the other items.
