CANDIED PECANS
I pack these easy candied pecans in jars tied with pretty ribbon for family and friends. My granddaughter gave some to a doctor at the hospital where she works, and he said they were too good to be true! -Opal Turner, Hughes Springs, Texas

Steps:
- Place pecans in a shallow baking pan in a 250° oven for 10 minutes or until warmed. Grease a 15x10x1-in. baking pan with 1 tablespoon butter; set aside. , Grease the sides of a large heavy saucepan with remaining butter; add sugar, water, salt and cinnamon. Bring to a boil, stirring constantly to dissolve sugar. Cover; cook 2 minutes to dissolve any sugar crystals that may form on the sides of pan., Cook, without stirring, until a candy thermometer reads 236° (soft-ball stage). Remove from the heat; add vanilla. Stir in warm pecans until evenly coated. , Spread onto prepared baking pan. Bake at 250° for 30 minutes, stirring every 10 minutes. Spread on a waxed paper-lined baking sheet to cool.

- In a bowl, beat the egg white until foamy. Mix in cinnamon, sugar, salt, and water. Mix well. Stir in pecan halves, stirring until well coated. Spread on baking sheet.
- Bake in preheated oven for 1 hour, stirring every 15 minutes.

My ex-mother-in-law lives in the South and has lots of pecan trees. She sends me bags of shelled pecans every year for Christmas. I found out how they make the roasted pecans at the fair. Even though they use big roasters, these turn out just as great.

- Preheat oven to 225 degrees F (105 degrees C). Lightly grease a rimmed baking pan.
- Combine the egg white and water in a mixing bowl; beat until fluffy. Fold in the pecans to coat evenly. Combine the sugar, salt, and ground cinnamon in a shaker or cup with a lid. Dust the pecans evenly with the sugar mixture. Spread the nuts over the prepared pan.
- Bake in preheated oven until toasted and fragrant, stirring every 15 minutes, about 1 hour. Cool on pan, and store in an airtight container.

- Line 15x10-inch pan with sides with waxed paper. In heavy 3-quart saucepan, stir together granulated sugar, brown sugar, butter, milk and corn syrup. Heat to boiling over medium heat, stirring constantly. Boil 7 to 8 minutes, stirring constantly, to 234°F on candy thermometer or until small amount of mixture dropped into a cup of very cold water forms a ball that flattens when removed from water.
- Remove from heat; vigorously stir in pecans. Spoon mixture into pan, spreading in even layer. Let stand 20 minutes or until firm. Break into pieces. Store in airtight container at room temperature up to 1 week.

Steps:
- Heat oven to 300 degrees.
- Liberally spray a baking sheet with cooking spray, such as Pam.
- Beat egg white and water until foamy, not stiff.
- Stir in pecans to coat.
- Mix salt, sugar and cinnamon together and add to coated pecans.
- Toss pecans until thoroughly coated.
- Place coated pecans on cookie sheet.
- Bake 30-35 minutes, TURNING EVERY 5-6 MINUTES (this is VERY important to the success of the recipe) Remove from oven and stir again before cooling.
ROASTED PECANS

- Melt unsalted butter, 1 teaspoon salt, and 1/2 teaspoon cayenne. Pour this mixture over 2 cups pecans, tossing to coat them. Bake the nuts on a cookie sheet at 350 degrees for 10 minutes or until nuts are beginning to brown. Remove immediately to drain on paper towels.

- Beat butter at medium speed until creay,gradually add sugars,mixing well.
- Add egg and vanilla,beat well.
- Combine flour,soda and salt,gradually add to creamed mixture,mixing after each addition.

FROSTED PECANS
A friend gave me this recipe after I went crazy over them. I make them every Thanksgiving and Christmas. Everyone just loves them Last year my 13 year old grandson requested the recipe so that he could make them himself. (They look real nice sprinkled over a cookie platter.)

Steps:
- Beat egg white slightly. Add water and beat until frothy, but not thick. Add pecans and sir so they are all well coated.
- Mix remaining ingredients and add to nuts. Toss well to coat.
- Pour mixture onto a greased cookie sheet and bake in 250 oven for one hour. Stir occasionally while baking.
- Bet you can't eat just one!!
