Try Alton Brown's take on the Southern classic ambrosia, a holiday fruit salad with clementines, pineapples, maraschino cherries and even marshmallows.

- Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.
AMBROSIA
This is a classic Southern dessert in which layers of oranges, bananas and coconut are drizzled with honey, lemon juice and Cointreau. The perfect sweet to serve in the dreary midwinter months when your palate is craving something bright and juicy, but the berries haven't arrived yet.

- In a glass serving bowl, form a single layer of orange slices and top with a few slices of banana. Sprinkle a thin layer of coconut over the top. Repeat layering until all of these ingredients are finished, reserving a tablespoon of the coconut. Stir together the juices and honey, if using, and pour over the fruit. Follow with the Cointreau, if desired, and a final sprinkling of coconut. Serve immediately or cover and refrigerate for several hours.

Steps:
- In a small bowl, combine the creme fraiche, orange and lemon juices, sugar and mint.
- Peel and slice the bananas, put in a large bowl, along with the cantaloupe, pineapple, strawberries and grapes. Add the crème fraiche mixture and toss gently to coat the fruit with the dressing.
- Put the salad into a serving dish or bowl and garnish with the kiwi slices.

- I've also served this salad with a scoop of frozen yogurt instead of mixing in crème fraiche.

- Cut watermelon into basket (see box below). Remove fruit from both sections of the top. Remove fruit from basket with a melon baller. Set aside 3 cups of melon balls (save remaining melon for another use)., In a large bowl, combine the pineapple, fruit cocktail, oranges, cherries, marshmallows and reserved watermelon balls. Add soda; gently toss to coat. Cover and refrigerate for 2 hours or until chilled. Just before serving, stir in coconut. Spoon into watermelon basket.

CRAIG CLAIBORNE'S AMBROSIA
This mixture of oranges, bananas, grated coconut and sugar is a dessert that is considered by many to be as Southern as magnolias and mint juleps. Craig Claiborne brought this recipe to The Times in 1987 after spending Thanksgiving at the Elgin mansion house, a Greek Revival-style home, in Natchez, Miss., built between 1840 and 1855, and owned by Dr. William Calhoun and his wife, Ruth Ellen. - Peel the oranges, cutting away all the white pith. Using a sharp stainless steel knife, carefully cut the juicy flesh from the membranes that surround it. Discard the membranes and any seeds. There should be about 5 cups of flesh.
- Put one-fourth of the orange sections in a crystal bowl and add half a cup of the coconut and half a cup of banana slices. Sprinkle with one-fourth of the sugar. Continue making layers until all the ingredients are used. Sprinkle with enough orange juice to moisten well. Chill and serve.
