AIR FRYER CHICKEN WINGS

- Coat the basket of a 3 quart or larger air fryer with nonstick spray.
- Trim off the wing tips (you should be able to feel the joint soft spot). It should separate fairly easily, but if not, put the blade in place, then carefully but firmly hit the top of your knife to apply extra pressure. Discard. Next, split the drumette side of each wing from the flat side at the joint: slice down through the skin feeling for the "soft spot" and wiggle your knife as needed.
- Pat the wings very dry. Sprinkle all over with salt.
- Place the wings in the air fryer in a single layer, making sure they do not touch (if needed, stand up the drumettes along the side). Set the air fryer to 360 degrees F. Cook the wings for 12 minutes, then remove the basket and with tongs, flip the wings over. Return to the air fryer at 360 degrees for 12 additional minutes.
- Slide out the basket, flip the wings once more, then return them to the air fryer. Increase the air fryer temperature to 390 degrees F. Cook the wings for 6 minutes, flipping once more halfway through. The skin should look nice and crisp (if your wings are on the larger side, they may need a few more minutes).
- While the wings finish up, melt the butter in a large microwave safe bowl in the microwave or a saucepan on the stove. Stir in the hot sauce, garlic, and vinegar until smooth.
- Transfer the wings to the bowl with the hot sauce mixture. Toss to throughly coat the wings. Transfer the wings to a serving plate. Sprinkle with chives as desired. Enjoy warm with blue cheese sauce and celery.

- In a small bowl mix together the almond flour, tapioca flour, chili powder, paprika, cayenne, and salt and pepper. In another small bowl, add the whisked eggs. Set up an assembly line with cubed chicken, eggs, and flour mixture.
- Bread the chicken by dipping it in the egg mixture, making sure it is fully coated. Roll in the flour mixture, fully coating and shaking off any excess. Place on a plate and repeat with remaining chicken.
- Place chicken in your air fryer basket, evenly spreading out and leaving room in between pieces so the air can easily flow through. If using, spray chicken with a light coating of avocado oil. Close drawer, set air fryer on manual at 375°F for 15 minutes, pausing halfway through to stir them up, making sure they are still evenly spread out after stirring. Depending on the size of your air fryer, you will probably have to cook the chicken in two batches to make sure they are not overcrowded.
- When the chicken is almost done, make the buffalo sauce. Add hot sauce, ghee, lemon juice, garlic powder, paprika, cayenne, and salt to a small saucepan over medium-low heat. Cook until warmed through and combined, about 3 minutes.
- Once chicken is done, add to a large bowl and pour buffalo sauce over chicken. Carefully mix to coat the chicken. Make sure to mix carefully as you don't want the breading to come off. Serve with ranch or blue cheese, carrots, celery, and more hot sauce!

- Preheat air fryer to 380 degrees F for 5 minutes.
- Add raw chicken wings to air fryer basket (tight in a single layer but not stacked on top of each other), close and cook at 380 degrees F for 25 minutes, shaking once at half time mark. If necessary, cook in batches.
