1 lb shelled black eyed peas, or 3/4 lbs dried, soaked
water to cover peas by 1 inch, more as needed
3 chicken bouillon cubes
1 Tbsp bacon grease
1 large onion, diced
1 Tbsp garlic, minced
1/2 medium red bell pepper, diced
2 tsp dried chives
1 Tbsp dried parsley
1 tsp celery powder (optional)
1/2 c cut green beans (fresh or frozen)
1/2 - 1 c cured ham chunks or pickled meat, 1" cubes
2 Tbsp butter or margarine

Steps:

  • 1. In a large saucepan bring water, bouillon cubes, bacon grease, peas, onions, bell peppers, garlic, seasonings and ham to a boil. Save butter or margarine until the end.
  • 2. Reduce heat and cover. Simmer on medium low heat until peas are tender and liquid starts to thicken. Taste for seasonings and add salt if needed.
  • 3. Just before serving, add butter or margarine and stir well. Enjoy!

Mom's Black-Eyed Peas image

This is a family variation of a Lebanese green bean and meat stew. I grew up eating this every New Year's, and it is the only way my family will eat their peas! I try to include 1 bag of frozen field peas with snaps in my recipe.

1 cup butter
2 onions, sliced into thin slivers
3 pounds cubed beef stew meat
salt and pepper to taste
2 cloves garlic, sliced, or to taste
3 (16 ounce) packages frozen black-eyed peas

Steps:

  • Melt the butter in a large saucepan over medium-low heat; cook and stir the onions in the melted butter until translucent, about 5 minutes. Stir in the beef and season with salt and pepper. Cook, stirring occasionally, until the meat is tender and the juices have cooked away, about 30 minutes.
  • Stir in the garlic and peas; pour in enough water to cover. Bring the mixture to a boil, cover, and simmer over low heat until the peas change color and are tender and hot, and almost all of the liquid has been absorbed, about 1 hour.

Simple, warm, soulfull, soothing, flavorful, and absolutely delicious field peas. I didn't know they could be this good. Add homemade cornbread, and if you're southern, some good ole pan fried sourkraut and weiners, maybe some canned pickled green tomatoes, some sliced onions and you have an easy delicious meal and a happy smiling family.

Number Of Ingredients 9

2 lbs frozen field peas, with green bean snaps
2 chicken bouillon cubes
1 slice bacon
1 tablespoon bacon bits
1 tablespoon vegetable oil
1/2 small onion, chopped
1 1/2 tablespoons garlic, minced
1 pinch sugar
salt and pepper

Steps:

  • Bring about 6 cups water with boullion cubes to a boil. Add peas. In another pan, lightly saute onion and garlic in oil. Add to peas. Add bacon, bacon bits, sugar, salt and pepper. Adjust water so that peas are entirely covered and at a level about 1-1/2 inches above peas. Bring to boil, cover, and reduce heat and strong simmer about 45-60 minutes. Keep watch that peas are kind of soupy because you don't want them dry (Add water if necessary). The broth makes them wonderful!
  • Enjoy!

1/4 cup chopped onion
1 TB extra virgin olive oil
3-4 slices hickory smoked bacon, cut into small pieces
2-3 cups chicken broth
1 bouillon cube (optional but adds more richness)
salt & pepper to taste

Steps:

  • Set Instant Pot on saute.
  • Heat EVOO in the pot along with bacon pieces.
  • When bacon begins to brown, add the onion.
  • Cook until onion begins to caramelize.
  • Add chicken broth and bouillon cube).
  • Fill water to make liquid just above peas.
  • Pressure cook on high for 30 minutes.
  • When pressure cooking stops, allow slow release.
  • Leave peas in IP until time to serve.

  • Add the ham hock, the peas, water, kosher salt, and pepper. Add more water, if necessary, to cover the peas by at least an inch and turn the heat up until the liquid comes to a boil.
  • Reduce the heat to low and let the mixture simmer uncovered for about 20 minutes. At about 15 minutes, taste a few to check for seasoning and to see if they are done.
  • If not, continue cooking for a few more minutes. The fresher the peas are, and the smaller they are, the less time they will need to cook.
