FRUIT PIZZA

- Preheat the oven to 390°F/200°C degrees.
- In a bowl, using a hand mixer cream together the sugar and the butter until it's well combined and creamy (about 1 minute). Mix in the egg and the vanilla extract.
- Add the flour along with the baking powder and salt, and beat with the mixer on slow speed until just combined.
- Line a 12-inch pizza pan with parchment paper, grease your hands with cooking spray then spread the dough in the pan in an even layer. You will have to use your hands to press down the dough.
- Bake in the oven for 13-15 minutes. The cookie base does not have to brown, it might look undercooked but that's totally fine as baking it for longer will dry it out. Remove from the oven, and cool completely on a cooling rack.
- To make the cream cheese frosting, whip the cream cheese with the powdered sugar and vanilla extract. Add the powdered sugar in batches to avoid getting a sugar storm.
- Once the cookie base has cooled completely, using a spatula spread the cream cheese frosting over the cookie dough base, and then decorate with fresh fruit creating a pattern. Drizzle/brush the fruit with honey if desired.

- For the cookies, preheat oven to 375 degrees. In a small bowl, combine flour, baking soda and baking powder.
- In a large bowl, cream butter and sugar until light and fluffy (about 2 minutes). Beat in egg and vanilla. Gradually add the dry ingredients and mix until thoroughly combined.
- Roll rounded walnut sized amounts of dough into balls and place on cookie sheet.
- Bake 8 to 10 minutes or until edges are set and lightly golden. Let stand on cookie sheet 2 minutes before moving to wire racks to cool completely.
- To prepare the frosting, mix the cream cheese and butter together in a medium bowl until smooth and creamy. (I warmed mine a bit to make it smoother.) Add vanilla.
- Gradually add the confectioner's sugar until frosting reaches desired consistency. Store in refrigerator until ready to use.

This will prevent browning. Add slices to pizza in a design of your choice. One idea is to start in the middle fanning apple slices out into a circle from the center, with red apple skins all facing the direction. Fan the green apple slices out for the next layer, again with the skins all facing the same direction. Drizzle caramel topping over apples.

- Make the frosting by beating all the frosting ingredients in a mixer. Add more powdered sugar until you get the desired consistency. It should be thick enough to spread over the cookie.
- Once the cookie is completely cooled slather it with the cream cheese frosting. I used about 2/3 of the frosting. Refrigerate the rest.
