GLORIFIED RICE
I am 55 and it seems like ahundred years ago that my whole family was at my grandmother's house for a week in summer. My cousin was in high school home economics and this was a recipe she made. I loved it although I have almost completely changed the fruits in it. It has become a holiday tradition.

Steps:
- 1. Drain pineapple and fruit salad, reserving syrup in saucepan, combine uncooked rice, 1 cup reserved mixed fruit syrup and 1/2 teaspoon salt. Stir to moisten rice. Bring to a boil; cover; simmer 5 minutes.
- 2. Remove from heat and let stand 5 minutes. Cool completely.
- 3. Add pineapple and fruit, cool.
- 4. Stir in marshmallows and sliced banana that has sprinkled with lemon juice. Beat the cream till stiff peaks form. Fold in cream and cherries. Chill.
- 5. Notes: I had never seen a pomegranate until I was 35 years old. I have since found the very best way in the world to clean a pomegranate I think. Get a big deep bowl and put in the sink and fill with cold water and let the water stay on at a slow run. As you break apart the fruit the heavy juice laden seeds drop to the bottom, the juice from the seeds you burst floats away as does the much lighter empty seed and fruit pith.

RACHEL'S FRUITY RICE SALAD
Tasty fruity savoury rice salad. Ideal accompaniment for barbecued, grilled or baked meats & fish. My mum used to make this salad back home in Cape Town, South Africa when we had our braais (bbqs) & it was my favourite salad, crunchy & fruity but definitely savoury. yummy mummy!

Steps:
- PREPARATION.
- Bring adequate (two cups?) amount of salted water to rolling boil, add rice, turmeric & raisins.
- Stir so that turmeric mixes into rice and can be absorbed, bring rice back to boil, then turn right down to simmer covered for rest of cooking time (10 - 12 minutes?).
- Once rice is cooked, rinse/drain; set aside to cool.
- Finely chop both green pepper & white onion.
- Chunky chop (not fine) half of the peaches from the can.
- Add pepper, onion, peaches, cayenne pepper/peri peri, chutney, mayonnaise, salt & pepper to rice turning ingredients into rice gently so as not to mash rice.
- Garnish with parsley.
- VARIATIONS.
- •Try adding 1/4 cup brown rice which would need cooking separately as it takes longer to cook. just stir into plain rice before adding other ingredients.
- •Using a tablespoon of either lemon or lime juice gives this dish a nice twist, or even try using lemon or lime rind for an extra zing.

- Boil rice in 4 cups of water for 45 minutes.
- Let rice stand for 40 more minutes, then drain and cool.
- Add fruit together and sprinkle with orange jello and mix.
- Fold in Cool Whip and mix well.
- Sprinkle top with coconut.
- Refrigerate.
- NOTE: If you prepare this a day ahead of time, do not add the Cool Whip or coconut until the next day. Before you add the whipped topping, drain off excess fluid that has accumulated overnight.

My husband's adviser fixed this salad as a side dish one evening when we went to her house for dinner. After I took the first bite, I asked her if she would give me a copy of the recipe. I feel that the salad is best eaten fresh.

- Half fill a large saucepan with water and bring to a boil.
- Rinse rice in a sieve until water runs clear, then add rice and turmeric to the pan and boil, uncovered for 10-12 minutes, until rice is tender.
- Drain in strainer and place in a bowl.
- Meanwhile, heat the oil in a saucepan, add onion and garlic and cook gently for 5 minutes.
- Turn up the heat, add the almonds and pine nuts and cook for 5 minutes longer, stirring often, until onion and nuts are golden brown.
- Add the onion mixture to the rice, along with 1 tablespoon of lemon juice (which will immediately turn the rice bright primrose yellow), the apricots, coriander, salt, and pepper.
- Taste and add more lemon juice if necessary. Serve.
